GNOCCHI WITH GARLIC SCAPES AND WALNUTS

Fresh garlic scapes taste delicious and you don't need a lot of other ingredients. Combined with gnocchi, walnuts, and Parmesan cheese they make a great quick mid week meal.

¾ cup walnuts
1 pound potato gnocchi
4 garlic scapes, chopped
5 tablespoons unsalted butter
salt and fresh coarsely ground black pepper to taste
1 ¼ cups grated Parmesan cheese

Steps:

  • Roast walnuts in a pan over medium heat until nuts start to turn golden brown and become fragrant. Allow to cool and roughly chop.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain well. Put in prepared baking dish in one layer. Sprinkle walnuts over gnocchi.
  • Trim garlic scapes if needed by cutting off ends and tips. If you have very fresh and young stalks you can use the entire stalk. Finely chop.
  • Melt butter in a pan over medium heat. Add garlic scapes and saute for 1 minute. Don't brown butter. Season with salt and pepper and layer over gnocchi. Sprinkle evenly with Parmesan cheese.
  • Bake in the preheated oven until heated through, about 10 to 15 minutes.

2 tablespoon olive oil
4 cloves garlic, minced
6-8 units sage leaves
1 1/2 lbs. (600 g) skillet gnocchi
1/2 cup chicken broth
1/2 cup whipping cream
3 tablespoons shredded Parmesan cheese
salt, to taste
3 dashes cayenne pepper
1 tablespoon shaved Parmesan cheese, optional

Steps:

  • Add the olive oil into a skillet on high heat. Add the minced garlic and sage, saute for 10 seconds. Add the gnocchi into the skillet, spread evenly and stir gently.
  • Add the chicken broth, whipping cream, Parmesan cheese, salt and cayenne pepper. Cook, stirring frequently but gently, about 3-4 minutes, or until the gnocchi is cooked through and become soft and tender on the inside.
  • Top the gnocchi with shaved Parmesan cheese, serve immediately.

  • Add the gnocchi to the boiling water and simmer, they are done when they float to the top, about 3 or 4 minutes. When gnocchi are almost done, add the heavy cream to the sauce and cook over medium heat until just slightly reduced and incorporated. Remove gnocchi with a large scoop strainer and put into pan, or drain in a colander and then add to the sauce in the pan. Toss gently to coat the gnocchi. Add walnuts, reserving some to sprinkle on top, and finely grated Parmesan and toss well until it melts. Transfer to a serving dish and top with reserved walnuts and crisped pancetta, and a little freshly cracked pepper. Serve immediately.
