ROYAL ICING



Royal Icing image

Royal icing is very versatile. It is pure white and dries very hard, so it is perfect for making flowers and bows and delicate piped work. It can be kept in an airtight container at room temperature for 2 weeks. You should stir the icing to restore its original consistency after storage, but do not rebeat. Royal icing does not work well in high humidity.

5 tablespoons meringue powder (found in cake decorating stores)
1/2 cup minus 2 tablespoons water
2 egg whites*, at room temperature
1/2 teaspoon cream of tartar
2 teaspoons water
1 pound confectioners' sugar

Steps:

  • Place all of the ingredients in the bowl of an electric mixer and beat slowly until they are all blended. Then beat at medium speed until the icing forms stiff peaks, about 5 minutes. Add more sugar if the icing is not stiff enough, or a few drops of water if it is too stiff. Use immediately or cover the bowl with a damp cloth to prevent drying when not in use. Allow at least 24 hours for royal icing decorations to dry, at room temperature.

BASIC ROYAL ICING

One 2-pound bag powdered sugar
5 tablespoons meringue powder
2 teaspoons clear vanilla extract
3/4 cup room temperature water

Steps:

  • Add the powdered sugar and meringue powder to a mixer bowl and mix for 30 seconds using the paddle attachment. (It's not necessary to sift the sugar beforehand.)
  • Add the vanilla to the water. With the mixer on its lowest setting, slowly add the water/vanilla mixture to the dry ingredients. As the water is added, the icing will become thick and lumpy. Continue adding the remaining water until the mixture reaches a honey-like consistency. At this point, turn the mixer to medium speed for 1 minute. After the first minute, turn the mixer to high speed and mix an additional 2 minutes. Use a spray bottle to get extra powdered sugar off the edges of the mixing bowl. Immediately remove the icing and place in an airtight container.

1 tsp liquid glucose
1 tsp lemon juice

Steps:

  • Whisk the egg whites until lightly whipped. Add the icing sugar a few tbsps at a time, whisking continuously until all incorporated. Add the glucose and lemon juice.
  • Continue whisking until the icing is thick enough to hold stiff peaks when you lift the beaters and is smooth and shiny.
  • Use a palette knife to spread the icing over the top and sides of your marzipaned cake. For a snowy effect, make little dips and peaks with a teaspoon. Leave to firm up somewhere cool and dry (not the fridge) for 24 hrs before cutting the cake.

4 large egg whites
500 g icing sugar
1 teaspoon glycerin

Steps:

  • Stir the sugar into 3 of the egg whites until you get it falls heavily of the back of a spoon (slopp! is the noise it makes *LOL*).
  • Take a whisk and whisk energetically for about 10 minutes or until you get stiff peaks in the icing.
  • Add the glycerin (if this is for my Christmas cake separate half the mix in a tight lidded jar and store in the fridge).
  • Add the other egg white and beat again.
  • Ice your cake and leave for 24 hours.
  • Further instructions for my Christmas cake.
  • Ok.
  • Use the mix you have to ice the cake make it as flat as possible and then draw a ruler across the top lightly to get it flat (ish).
  • Do the same with the sides.
  • Let the icing set for 24 hours.
  • After 24 hours take out the other half of the icing from the fridge and spread it thickly around the cake; leaving a 8 cm circle in the middle without icing.
  • Let this set for a couple of hours and then place a ribbon round the edge, put some edible red berries in the circle and some edible leaf (mint, rosemary, sage, anything).

  • In a stand mixer beat egg whites until frothy and incorporate sugar until smooth. Then mix in the rest of the ingredients. When you've reached the consistency you like, add either food coloring or cocoa, little-by-little until the color you desire is achieved. I made this batch twice and added the dark cocoa only to one and pink food coloring to the other.
  • Advice and pointers:.
  • Because you're using raw egg whites and salmonella is a risk, always use fresh eggs from a reliable source and don't allow unused frosting to sit out for more than an hour or so. Any unused frosting can be covered with a damp towel to prevent drying and retain freshness, and then placed in the refrigerator. Keep in mind the longer you work with a single batch the darker the color will become, so when initially mixing, keep that in mind.

3 -4 egg whites (or equivalent powdered egg white)
2 lbs powdered sugar
8 tablespoons water
1/4 teaspoon almond flavoring
1/2 teaspoon vanilla
1/2 teaspoon butter flavoring

Steps:

  • Beat first three ingredients, then thin with a little water, if needed.
  • Add almond, vanilla, and butter flavoring.
  • Depending on how many colors you want, divide it between several bowls.
  • To decorate on top of original layer of icing, thicken with powdered sugar until desired thickness.
  • Decorating works best when used in the decorating bags with tips.
  • Also, before spreading thin icing over cookies, try putting an outline of thick icing from a small decorating tip around the edge of the cookie.
  • This way, the thin icing will not drip over the edge.

Once all of the sugar has been incorporated, increase the speed to medium-high and continue to beat until a frosting-like consistency is achieved, about 4 minutes. If you’d like a thinner frosting, beat in a little water (or rum).
  • To color the icing, divide the icing between small bowls. Add gel-based food coloring to each portion of icing and stir well to combine. Start with only a drop or two of each color, adding more as desired.
  • Use immediately or store in an airtight container overnight. If you have stored the icing, it may separate overnight; whisk it smooth before using.
