MOIST CHOCOLATE MUFFINS



Moist Chocolate Muffins image

These moist chocolate muffins are incredibly easy to make and come together in less than 30 minutes! The muffins turn out decadent, moist, and fluffy with nice domed tops.

Number Of Ingredients 10

1 1/2 cups (180 gr) all-purpose flour
1/2 cup (50 gr) cocoa powder (dutch processed preferred but natural cocoa powder can be used)
2/3 cup (130 gr) granulated sugar
1 TBSP (14 gr) baking powder
1/4 tsp salt
1 large egg, room temperature
1 cup (235 ml) whole milk
1 tsp vanilla extract
1/2 cup (120 ml) vegetable oil or canola oil
1 cup (170 gr) chocolate chips + more for topping if desired

Steps:

  • Prep: Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
  • Mix the Wet Ingredients: In a separate bowl, whisk together the egg, milk, vanilla, and oil until well combined.
  • Combine Wet & Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. This process will go quickly, and should only take about 10 stirs to complete. Fold in the chocolate chips at this point. Do not over-mix your batter or your muffins will be dense and dry.
  • Divide the batter between the muffin cups filling them almost all the way up. Top with more chocolate chips if desired.
  • Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.

1/4 cup margarine
1 cup brown sugar
1 egg
1/4 cup cocoa
3/4 cup boiling water
1 cup flour
2 teaspoons baking powder
salt (just a dash)
1 tablespoon melted margarine
3/4 cup icing sugar
1 tablespoon milk (careful w/milk)
1 tablespoon cocoa

Steps:

  • Mix together margarine and flour until crumbly.
  • Add rest of ingredients and stir together well.
  • Grease muffin tins and lightly dust them with flour.
  • Spoon batter into tins about half full.
  • Bake@ 350° (175°C) for 20-25 minutes.
  • Check if ready by pushing finger down on muffin and if it rises back up it is ready.
  • Frost with chocolate icing.

125g plain flour
25g cocoa powder
1 tsp baking powder
1 large egg
60g caster sugar
2 tbsp vegetable oil
100ml whole milk
50g chocolate chips (optional)
100g icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.
  • Spoon the mixture evenly into the cake cases and bake for 20-25 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool.
  • Meanwhile, gradually mix ½-1 tbsp water into the icing sugar until you have a loose consistency that's not too runny. Drizzle the icing over the muffins once cool.

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup ground flaxseed
3/4 cup sugar
2-3/4 teaspoons baking powder
2 teaspoons ground cinnamon
3/4 teaspoon salt
1/4 teaspoon baking soda
4 large egg whites, room temperature
1 large egg, room temperature
1/2 cup unsweetened applesauce
1/3 cup orange juice
1/4 cup canola oil
2 teaspoons vanilla extract
2 cups grated carrots
1/2 cup chopped pecans
1/2 cup sweetened shredded coconut
1/2 cup raisins
1 medium tart apple, peeled and shredded

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla. Stir into dry ingredients just until moistened. Okay - well they might not be good for you but they are Better For You Chocolate Muffins than a standard muffin. These use applesauce in place of oil, fat-free milk and egg substitute. I love the addition of the sliced almonds as called for in the original recipe but I've also used a white chocolate chip & peanut butter chips in it's place for a fun twist to the muffin. Original recipe was found in a Simple & Delicious flyer submitted by C. Gaus.

1/2 cup sugar (may use a substitute if you need to watch sugar intake too)
1/3 cup baking cocoa
1 teaspoon baking powder

1 cup unsweetened applesauce
1/2 cup nonfat milk
1/2 cup egg substitute
1 teaspoon vanilla (using almond extract is a nice twist too)
1/4 cup sliced almonds (you may use a chopped almond too)

Steps:

  • In a bowl, combine the flour, sugar, cocoa, baking powder and baking soda.
  • In another bowl, whisk the applesauce, milk, egg substitute and vanilla until smooth.
  • Stir wet ingredients into the dry ingredients just until moistened (do not over stir or your muffins will turn out too dense).
  • Coat 12 muffins cups with non-stick spray or use a paper liner. Fill cups three-fourths full with batter.
  • Sprinkle with the almonds (or you can use a white chocolate chip, peanut butter chip, chopped peppermints).
  • Bake at 375*F for 20-25 minutes or until muffins test done with a pick.
  • Cool for 15 minutes before removing muffins from the baking cups and allowing to cool completely on a wire rack.

  • In a medium bowl, briskly whisk together the eggs, yogurt, honey, milk, oil, and vanilla. Make a well in the center of the dry ingredients and add the wet ingredients. Gently stir by hand, just until the dry ingredients disappear.
  • With a muffin scoop or similar, fill the muffin cups 2/3 of the way to the top with batter. If desired, sprinkle on some extra chocolate chips.
