I have experimented for a long time perfecting this recipe. I finally have the secret! I am requested to bring this to every pot luck, family dinner, etc. You won't be disappointed!

1 head lettuce, washed & drained well
1 (8 ounce) container grape tomatoes
1 (12 ounce) bag Doritos (I prefer Pepper Jack or Extra Nacho)
2 cups grated sharp cheddar cheese
1 (8 ounce) bottle fat-free Catalina dressing (regular makes it way too greasy!!)
1/2 lb ground beef
taco seasoning

Steps:

  • Brown ground beef and drain. Add taco seasoning - follow package directions. Alow to cool slightly or put in refrigerator if you don't want to use the salad right away.
  • TEAR lettuce into bite size pieces, but into bowl. Cut tomatoes in half, and spread out on top of lettuce. Put cheese on top of tomatoes. Cover and chill until ready to serve. Just before serving, add Doritos, meat (if refrigerated, use microwave to take chill off of meat), and salad dressing. Toss well!
  • Don't skimp on the cheese or doritos, the more the better! I use the whole bag of Dorito's. Not snack size, or Extra large, just the regular size bag -- .

2 tablespoons nonfat yogurt (optional) or 2 tablespoons nonfat sour cream (optional)
1 (15 ounce) can kidney beans, drained and rinsed (you can also use black or any other type of beans)
1/2-1 avocado, diced
2 cups cherry tomatoes, halved
1/2 cup cilantro, coarsely chopped
5 ounces romaine lettuce or 5 ounces butter lettuce
2 carrots, sliced
baked corn tortilla chips
very lean ground turkey, cooked with taco seasoning
basil
green onions or chives, chopped
toasted pepitas
black olives
low-fat cheese, shredded
jalapeno, seeded and minced

Steps:

  • Mix dressing ingredients.
  • Put all desired salad ingredients in a large glass bowl. Toss with dressing (you may not need all of it) and top with baked chips. Serve additional chips on the side.

1 (16 ounce) can chili beans
1 (16 ounce) bottle French dressing
1 head iceberg lettuce
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 cup chopped tomatoes
4 tablespoons sour cream
½ cup prepared salsa

Steps:

  • In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.
  • Crush the bag of chips, open the bag, and toss the broken chips into a large bowl with the lettuce, cheese and tomatoes. When the meat mixture is done, combine it with the lettuce, tomatoes, chips and mix well. Then, add salsa and sour cream.

3/4 cup water
1 medium head iceberg lettuce, torn (about 8 cups)

  • In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water; bring to a boil. I got this recipe from a friend more than 20 years ago and it remains a family favorite espcially on hot summer days. I cook the beef early in the morning. Sometimes even chop all of the ingredients then, too, so all I have to do is throw everything together when it is time for dinner. Teenagers especially love this. That is a bonus! Have yet to find anyone who doesn't love this super easy salad for dinner.

1 lb ground beef
1 (1 1/4 ounce) envelope taco seasoning (I use Taco Seasoning Mix)
1 head iceberg lettuce, chopped
2 -3 roma tomatoes, diced
6 green onions, chopped (I like more)
1 (15 ounce) can red kidney beans or 1 (15 ounce) can black beans, drained
1 (15 ounce) can large black olives, sliced
1 cup cheddar cheese, shredded
1 (16 ounce) bottle Catalina dressing (I use Kraft)
1 (14 1/2 ounce) bag plain Doritos, crumbled into big chunks

Steps:

  • Brown ground beef, drain grease, adding taco seasoning and following directions on package. Chill.
  • When ground beef is cold, place in a large bowl and add all remaining ingredients.
  • Mix well and serve.

1 red onion, sliced
1 lime, juiced
1 tbsp sunflower oil
400g lean beef mince
½ pack taco or fajita seasoning
1 tbsp tomato purée
400g can black beans, drained but not rinsed
200g tortilla chips
1 small iceberg lettuce, shredded
2 avocados, peeled and sliced
2 tomatoes, chopped into chunks
100g feta, crumbled
small bunch of coriander, chopped or leaves picked
½ lime, juiced
5 tbsp soured cream
chilli sauce (optional), plus extra to serve

Steps:

  • Mix the red onion with half the lime juice and a pinch of salt in a small bowl, then set aside.
  • Heat the oil in a frying pan over a medium-low heat, and crumble in the mince. Cook for 15-20 mins - the mince will release some liquid, but once this has bubbled away, it will sizzle in its own fat. At this point, stir or toss with a wooden spoon so the mince browns and caramelises all over. If the pan becomes too dry, add a drizzle more oil. When the mince is well toasted, sprinkle over the taco seasoning and cook for 2 mins, then stir through the tomato purée and pour over the rest of the lime juice and let it sizzle for another minute. Stir through the black beans and turn up the heat to medium, continuing to cook until everything is hot. Taste for seasoning, then set aside.
  • To make the dressing, mix the lime juice with the soured cream and chilli sauce, if using, season, then set aside.
  • Scatter a handful of tortilla chips into a bowl, then add a layer of lettuce, then the mince and black beans. Top with the avocado slices, chopped tomato, pickled red onions, along with any juices, and the feta. Drizzle with the dressing, then finally scatter over the coriander. Tuck more tortilla chips around the sides of the bowl, then serve.
