PEPPER JACK AND HORSERADISH DOUBLE BAKED POTATOES "BIG DUNKEE"

Pepper Jack and Horseradish Double Baked Potatoes

Provided by Guy Fieri

Categories     appetizer

Time 2h55m

Yield 8 servings

Number Of Ingredients 12

8 extra-large russet potatoes
4 tablespoons kosher salt, plus more for seasoning
1/2 pound applewood smoked bacon
1 cup chopped yellow onion
4 teaspoons diced jalapeno
4 tablespoons diced garlic
8 tablespoons butter
4 teaspoons cracked black pepper
4 tablespoons prepared horseradish
8 tablespoons sour cream
8 ounces pepper jack cheese, shredded
1 avocado, pitted, flesh diced

Steps:

  • Preheat oven to 350 degrees F. Scrub potatoes well to remove all dirt. Pierce with a fork, rub with kosher salt and bake on a sheet pan for 1 hour.
  • Meanwhile, in medium skillet over medium heat cook bacon until crisp, remove, drain on paper towels and chop. Remove all but 2 tablespoons bacon grease from the pan and heat over medium-high heat. Add onions and saute for 2 minutes. Stir in the jalapenos and saute for 2 minutes more. Add the garlic and lightly saute for 1 more minute. Set aside to cool to room temperature.
  • Remove potatoes from oven and let cool to a workable temperature. Slice potatoes in half, lengthwise and remove the flesh of the potato with a spoon to a bowl. Mix in butter, add pepper and salt to taste. Reserve 8 of the skin halves, discard the other 8.
  • Gently fold in the onion, jalapeno and garlic mixture into the potato. Combine the horseradish, sour cream, half the pepper jack cheese and the bacon; add to the potato mixture. Gently fold in the avocado.
  • Stuff the potatoes with mixture, top with the remaining cheese and place back in the oven on a baking sheet for 20 minutes at 350 degrees F.

SMASHED TRI-COLOR POTATOES

Smashed Tri-Color Potatoes image

Provided by Guy Fieri

Categories     side-dish

Time 1h25m

Yield 4 to 5 servings

Number Of Ingredients 11

3 pounds tri-color creamer potatoes
4 cloves garlic, peeled and smashed
2 bay leaves
Kosher salt and freshly ground black pepper
1/2 cup olive oil, plus more for drizzling
1/4 cup (4 tablespoons) unsalted butter
1 cup grated Parmigiano Reggiano
Sour cream, for garnish
Chopped fresh dill, for garnish
Chopped fresh chives, for garnish
Zest of 1 lemon, for garnish

Steps:

  • Combine the potatoes, garlic and bay leaves in a large pot and cover with cold water by about an inch. Add some salt, then cover with a lid and bring to a boil. Lower the heat and simmer the potatoes until a fork can easily pierce the skin, 15 to 20 minutes.
  • Preheat the oven to 375 degrees F. Drain the potatoes and return them to the pot with the garlic (be sure to discard the bay leaves). Add the oil and butter and sprinkle with salt and pepper. Using a potato masher, smash the potatoes into a chunky mixture.
  • Spread the potato mixture in an even layer in a large casserole or gratin dish. Season the potatoes again with salt and pepper, drizzle with additional oil and sprinkle the Parmesan over the top. Bake the potatoes until a crispy, golden crust forms on top, 35 to 45 minutes. Dot sour cream across the top and garnish with dill, chives and lemon zest while hot.

3 lbs red potatoes
1 lb thick slab bacon, diced
1 cup red onion, diced
1 tablespoon garlic, minced
1/4 lb butter, at room temperature
1/4 lb cheddar cheese, finely shredded
1 green onion, chopped
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
salt and pepper
3/4 cup sour cream

  • While the potatoes are cooking: in a medium saute pan on medium heat, cook bacon until crispy; remove and drain on a paper towel. Add red onion to bacon grease; cook until caramelized. Just before onions are done, add garlic and cook until lightly brown.
  • In a bowl, place butter, ½ the cheese, ½ the bacon bits, ½ the green onions, the cooked red onions and garlic, cayenne, paprika, salt, pepper, and sour cream; mix together thoroughly. Strain potatoes and add to bowl; let stand for a few minutes or until cheese starts to melt. Fold ingredients together, trying not to break up the potatoes excessively.
