This luscious dessert comes from Kavanaugh's Resort and Restaurant in Minnesota. The Chef says it's just like a candy bar on a plate, and you don't even have to unwrap it. It's very easy-why not treat yourself?Hope you enjoy.*Requires two hours of chilling time*

2 cups chocolate wafer crumbs (about 38 wafers)
1/3 cup butter, melted
30 vanilla caramels
1/2 cup caramel ice cream topping
1/4 cup whipping cream
2 cups chopped pecans
3/4 cup semisweet chocolate piece
1/4 cup whipping cream

Steps:

  • In a medium mixing bowl, stir together the chocolate wafer crumbs and melted butter.
  • Press onto the bottom of a nine inch springform pan.
  • Bake in a 350 degree oven for 10 minutes.
  • Cool slightly on a wire rack.
  • In a heavy medium saucepan, melt caramels in caramel ice cream topping over low heat,stirring often.
  • Stir in the first 1/4 cup whipping cream.
  • Remove from heat; stir in nuts.
  • Spread over crust.
  • Cool;cover and chill for one hour.
  • For the topping:.
  • In a heavy saucepan, melt chocolate.
  • Remove from heat;stir in remaining whipped cream.
  • Drizzle or spread over caramel pecan mixture.
  • Cover and chill for at least one hour.

Steps:

  • 1. In a medium mixing bowl, stir together chocolate wafer crumbs and melted butter. Press onto the bottom of a 9-inch springform pan. Bake at 350 for 10 minutes. Cool slightly on a wire rack.
  • 2. In a heavy medium size saucepan, melt caramels in caramel ice cream topping over low heat, stirring often. Stir in the first 1/4 cup whipping cream. Remove from heat; stir in nuts. Spread over crust. Cool; cover and chill for 1 hour.

1 (18.25 ounce) package German chocolate cake mix
1 cup butter, softened
1 egg
½ cup evaporated milk
1 pound individually wrapped caramels, unwrapped
1 cup confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine 1/2 cup of the butter with the cake mix and egg. Work the mixture with your hands until everything is well blended. The mixture will be crumbly. Press the mixture evenly into a 10 x15 inch jellyroll pan.
  • Bake for 10 minutes in the preheated oven. Remove and cool for 10 minutes.
  • In a saucepan , combine the remaining 1/2 cup of butter with the evaporated milk and caramels, over medium heat. Stir occasionally until smooth. Remove from heat and pour the mixture over the baked crust, turning the pan from side to side so that it is evenly coated.
  • Return to the oven, and bake for 15 to 20 minutes, until it is bubbly all over. Cool and drizzle with icing. Allow icing to set before cutting into squares.
  • To make the icing, stir together the confectioners' sugar with the water and vanilla until smooth. If the icing is too thick, add more water. If it is too thin, add more confectioners' sugar.

These are the greatest brownies ever. Once you taste them you will never go back. I've tweaked this recipe from Canadian Living's Best Muffins & More cookbook, and now it's at the point where my family and friends have declared me the Goddess of Brownies. One friend even told me these brownies were better than sex. Seriously, they're that good.

1 cup butter, cubed
4 ounces unsweetened chocolate, chopped
1 3/4 cups granulated sugar
4 eggs, beaten
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup whipped cream
1 cup packed brown sugar
1/2 cup butter
1 1/2 cups mini chocolate chips (optional)

Steps:

  • Preheat oven to 400F (200C).
  • Take two saucepans of roughly equal size. Fill the smaller one about halfway with water. Put the other one on top. Put them on a burner and turn it to just below boiling. You could also use a double boiler.
  • Melt butter and chocolate together in the saucepan, and remove saucepans from heat. Dump out the water from the bottom one and dry it out.
  • Stir the granulated sugar into the chocolate mixture until it's mixed nicely. Slowly add the eggs and the vanilla. Next, stir in the flour and salt.
  • Pour the mixture into a greased 9x13 inch cake pan and bake for 12 minutes. (The batter won't be cooked through).
  • Meanwhile, in the bottom saucepan, boil the cream, brown sugar, and butter for 3 minutes.
  • Drizzle the brownies with the sugar mixture. Do this slowly or it'll go through the surface of the brownie.
  • Bake the brownies for another 8-10 minutes. They should be golden, not browned.
  • Sprinkle the brownies with the mini chocolate chips (if using,) give them a moment to melt, and then swirl them with the knife.
  • Enjoy!

1/3 cup butter, melted
20 caramels
15 miniature Snickers candy bars
1/2 cup caramel ice cream topping
1/2 cup heavy whipping cream, divided
2 cups salted peanuts, chopped
3/4 cup semisweet chocolate chips
Additional chopped salted peanuts, optional

Steps:

  • In a small bowl, combine wafer crumbs and butter. Press onto the bottom of a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 8-10 minutes. Cool on a wire rack., In a heavy saucepan, combine the caramels, candy bars, caramel topping and 1/4 cup cream; cook and stir over low heat until smooth and blended. Remove from the heat; stir in peanuts. Spread over crust. Cover and refrigerate for 1 hour., In a microwave, melt chocolate chips and remaining cream; stir until smooth. Spread over caramel layer. If desired, sprinkle with additional peanuts. Cover and refrigerate for 1 hour or until serving.
