COGNAC-ICE-CREAM SANDWICHES

Steps:

• Make the graham crackers: sift together the flours, salt and cinnamon. Set aside. In a mixer fitted with a paddle attachment, cream the butter and sugar. Add the honey and mix until blended. Add the dry ingredients in two batches, mixing until combined before adding the second batch. Mold the dough into 2 balls, wrap in plastic, flatten and chill for at least an hour.
• Preheat oven to 350 degrees. Roll out half the dough on a piece of parchment paper to a large square, 1/8-inch thick. Cut the sheet of dough into 3- by 3-inch squares, leaving them as is on the parchment; trim any excess dough from the edges. Transfer this sheet of dough to a baking sheet, using the parchment paper to lift it. Repeat with the remaining dough. Chill for 30 minutes. Bake until golden, 14 to 16 minutes. Let cool, then break into precut squares.
• Make the ice cream: in a heavy-bottomed saucepan over medium heat, heat the milk, cream and sugar until the sugar dissolves. Do not boil. Gently whisk the yolks in a bowl. Temper them by pouring 1/2 cup of the hot liquid into them, then whisk this into the hot liquid in the pan. Over medium heat, cook the custard, stirring continuously in a figure-eight pattern until it coats the back of a spoon. Strain into a heatproof bowl. Stir in the alcohol, then chill in the refrigerator. Churn in an ice-cream maker until thick. Freeze until firm.
• Assemble the sandwiches: scoop the ice cream onto a graham cracker, top with another graham cracker, press gently and serve.

GRAHAM CRACKER CHOCOLATE DIPPED ICE CREAM SANDWICHES

Steps:

• 1. Line an 8 x 8 inch baking dish with parchment paper making sure the edges come up on two sides.
• 2. Spread the softened ice cream evenly in the lined pan and place in the freezer overnight.
• 3. Break the graham crackers in half so that you have 18 squares.
• 4. Using the edges of the parchment paper, lift the ice cream on to a cutting board.
• 5. Slice the ice cream into 9 equal squares and sandwich between two graham cracker squares. If desired, spread melted chocolate on all the graham cracker squares and press the chocolate side onto the ice cream.
• 6. Place the ice cream sandwiches back in the freezer for at least 10 minutes before serving.

Steps:

• Break chocolate graham crackers into squares. Spread a thick layer of whipped topping on half of the squares and place another square on top to make a sandwich. Gently wrap in plastic wrap and freeze for 1 hour or until set.

MEXICAN CHOCOLATE ICE CREAM SANDWICH

Steps:

• Soften ice cream while you chop hazelnuts; place large scoop of ice cream on top of graham cracker & cover w/another to form a sandwich. Roll the edges in the chopped hazelnuts so that they stick to the ice cream.
• Serve immediately or wrap tightly in plastic wrap & freeze until ready to serve.

Steps:

• Combine milk, banana, ice cubes, and sugar in a blender; blend until smooth. Pour into a freezer-safe container.

• Prepare, bake and cool Brownie for Ice Cream Sandwiches according to recipe directions. Cut brownie in half widthwise. , Spread ice cream over one brownie half. Spread marshmallow creme over remaining brownie; place over ice cream, marshmallow side down. Cover and freeze for 2 hours or until firm. , Cut into bars, squares or desired shapes. Dip sides of ice cream sandwiches in graham cracker crumbs. Wrap in plastic. Freeze until serving.
