GRAHAM CRACKERS
A sweet whole wheat cracker. These are very versatile. They can be eaten plain or used in recipes as whole crackers or just crumbs.

Steps:
- In a medium bowl, cream together the shortening and brown sugar. Stir in the vanilla. Combine the whole wheat flour, all purpose flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the milk. Cover and chill dough until firm.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into rectangles. Place 1/2 inch apart onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until crisp. Edges will be golden brown. Remove from baking sheet to cool on wire racks.

GRAHAM ROLLS
In the course of catching up with a friend I hadn't seen for well over 10 years, she requested this recipe that she had remembered me making. That's a true testament to the appeal of these rolls. Graham crackers are an unusual ingredient that add terrific taste and texture.

- In a large bowl, combine the shortening, sugar and salt. Stir in boiling water. Cool to 110°-115°. Dissolve yeast in warm water. Add yeast mixture, egg, 1 cup cracker crumbs and whole wheat flour to shortening mixture; mix well. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 48 pieces. Shape each into a ball. Dip into melted butter, then roll in remaining cracker crumbs. Place in greased muffin cups. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 18-20 minutes or until golden brown. Remove from pans to wire racks to cool.

GRAHAM CRACKER ROLL
This is an old favorite from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time.

Steps:
- Roll crackers to fine crumbs; reserve 1/2 cup and mix remaining crumbs with marshmallows, nuts and dates.
- Add cream slowly until mixture is moist enough to hold together.
- Shape into a roll about 2 1/2 inches in diameter; roll in reserved crumbs.
- Wrap tightly in waxed paper and refrigerate at least 12 hours before serving.
- Cut into 1/2" slices and serve with whipped cream.
MOM'S GRAHAM CRACKER DATE NUT ROLL
This recipe dates back many years. My mom and aunt made this and possibly someone is searching for it to bring back fond childhood memories.

Steps:
- Combine ½ of the crumbs with dates, marshmallows, nuts, whipped cream and vanilla.
- Place mixture on a large piece of wax paper.
- Shape into a roll about 3" in diameter.
- Coat with remaining graham cracker crumbs.
- Firmly wrap up roll.
- Chill 12 hours or longer.
- Serve in ¾-inch slices topped with whipped cream.

- Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . Press mixture into an 8 or 9 inch pie plate.
- Bake at 375 degrees F (190 degrees C) for 7 minutes. Cool. If recipe calls for unbaked pie shell, just chill for about 1 hour.

GRAHAM CRACKER DOUGH
Steps:
- Put the all-purpose flour, wheat flour, wheat germ, salt, baking soda, and cinnamon in a mixing bowl and gently whisk until all the ingredients are incorporated and there are no visible lumps.
- Beat the butter in the bowl of a standing mixer fitted with a paddle attachment at high speed until it is light and fluffy, about 3 minutes.
- Add the brown sugar, crumbling it with your hands as you add it to remove any lumps, and mix on medium-high speed until smooth, about 1 minute. Add the honey and mix until combined. Scrape down the sides and bottom of the bowl using a rubber spatula halfway through mixing to ensure that the ingredients are combined.
- Add approximately half the flour mixture and mix on low speed just until the flour is incorporated, about 30 seconds. Repeat with the remaining flour. Scrape down the sides and bottom of the bowl to ensure the flour is fully incorporated.
- Empty the dough onto a lightly floured surface and gently push it together. Form it into a flat disk 1 to 2 inches thick. Wrap the dough in plastic wrap and let it chill in the refrigerator for at least 30 minutes or up to 4 days.
- Once the dough has chilled, it can be rolled and used as directed (see Rolling Dough, page 10), or frozen in sheets (wrapped tightly with plastic wrap on a sheet pan or piece of cardboard) until needed or for up to 2 months.
- If baking immediately, preheat the oven to 350˚F. Line two sheet pans with parchment paper or spray lightly with nonstick cooking spray.
- Place the dough on a piece of parchment paper or on a lightly floured flat surface. Lightly flour the top of the disk and begin rolling the dough. Lift and rotate the dough between each roll to prevent it from sticking. Repeat the process until the dough is between 1/8 and 1/4 inch thick.
- Using a paring knife, cut the dough into 2-inch squares and place them about 1/2 inch apart on the prepared pans.
- To coat, combine the granulated sugar and cinnamon in a small bowl and toss lightly with a fork. Sprinkle the dough with the sugar mixture.
- Bake for 18 to 20 minutes, rotating the pans once halfway through, until the cookies are a dark golden brown color. Remove the cookies from the oven, let them cool slightly on the pans, then transfer them to a wire rack to cool to room temperature.
- Serve the cooled cookies immediately, or keep them in an airtight container at room temperature for up to 1 week.

- These graham crackers also taste great when coated in dark chocolate. Simply bake them without sugar and cinnamon on top, then follow the directions to dip the cookies from Chocolate Mint Cookies (page 63) or Dipping in Chocolate (page 17).
