Delicious, filling, and easy-to-make banana bread that's suitable for grain-free/gluten-free, dairy-free, and Paleo diets.

4 ripe bananas
2 Tbsp maple syrup
1/2 cup melted coconut oil
1 tsp vanilla extract
1 tsp ground cinnamon
4 eggs
1/2 cup almond flour
1/2 cup coconut flour
1 tsp aluminum-free baking powder*
1/2 tsp baking soda
1/2 tsp unrefined sea salt
Optional: chocolate chips and/or chopped nuts

Steps:

  • Preheat oven to 350 degrees F. Line a 9x5" bread pan with parchment paper.
  • In a mixing bowl, combine bananas, maple syrup, melted coconut oil, vanilla, and ground cinnamon, mixing until bananas are fairly smooth and ingredients are thoroughly combined.
  • Mix in eggs until combined.
  • Add almond flour, coconut flour, baking powder, baking soda, and salt to banana mixture. Mix until all ingredients are incorporated, scraping the sides of the bowl as needed.
  • Add in chocolate chips, chopped nuts, or other additions, if desired.
  • Transfer banana bread mixture to the parchment-lined pan (dough will be fairly thick) and bake in preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool and enjoy!

Super moist, gooey, decadent-tasting, yet deceptively healthy, this grain-free banana bread gets a baklava vibe from toasted walnuts, cinnamon, and dates.

½ cup + 2 tablespoons (65 g) walnuts ((divided use))
3 tablespoons (35 g) melted coconut oil, plus a little for the pan ((or ghee for non-vegan))
½ cup (130 g) room temperature cashew butter ((or other nut butter - try tahini for nut-free))
3 tablespoons (55 g) maple syrup
1 tablespoon (8 g) coconut sugar (or another tablespoon of maple syrup)
½ cup (135 g) mashed very ripe banana (from 1 very large or 2 smaller bananas)
3 tablespoons (40 g) plant milk
¾ teaspoon GF vanilla extract
¼ cup + 2 tablespoons Bob's Red Mill cassava flour (50 g) ((or try sweet rice or AP flour for non-paleo))
¼ cup + 2 tablespoons (40 g) Bob's Red Mill blanched almond flour ((or natural almond flour or hazelnut flour))
¼ cup (30 g) tapioca flour ((or try arrowroot flour))
¾ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon fine sea salt
½ cup pitted chopped dates
cinnamon sugar for the top (1 teaspoon maple or coconut sugar + 1/8 teaspoon cinnamon)

Steps:

  • Position a rack in the center of the oven and preheat to 350ºF. Lightly rub an 8x4 or 9x5-inch loaf pan with coconut oil and line with a sling of parchment paper.
  • Spread the walnuts on a small baking sheet and toast until golden and fragrant, 5-10 minutes. Let cool, then chop coarsely.
  • In a large bowl, whisk together the nut butter, maple syrup, coconut sugar, coconut oil or ghee, plant milk, and vanilla until smooth. Whisk in the banana.
  • Sift in the cassava flour, almond flour, tapioca flour, baking powder, baking soda, and salt, adding back anything left in the strainer (the almond flour is fairly coarse so just do your best here!) Stir the batter until smooth and well-combined.
  • Stir in 1/2 cup of the walnuts and all of the dates.
  • Scrape the batter into the prepared pan. Sprinkle with the remaining walnuts and the cinnamon sugar.
  • Bake until a tester inserted near the center comes out with moist crumbs, 40-50 minutes, rotating the loaf halfway through for even baking. Let cool to warm or room temperature, remove from the pan, and peel away the parchment.
  • Slice and top with plant butter, flaky salt, and honey if you like (honey will make this not technically vegan). Devour with a cold glass of plant milk or a warm cup of tea or coffee.

1/2 cup chopped Brazil nuts or pecans
1 Tbsp of ground flaxseed
1 tsp baking soda
1 tsp cinnamon
1/4 ground nutmeg
1/8 tsp Himalayan salt
1/2 cup coconut oil, softened or melted
2 large ripe bananas, mashed
1/2 cup honey or maple syrup
2 eggs or chia egg for a vegan version (1 Tbsp ground chia + 3 Tbsp water)
2 tsp vanilla extract
Optional: 1/4 cup dark chocolate chips

Steps:

  • Preheat the oven at 350°F and line a loaf pan with parchment paper. In a large bowl, mix the almond flour, nuts, flax, baking soda, cinnamon, nutmeg and salt.
  • Add the oil, bananas, honey or maple syrup, eggs, and vanilla. Stir until everything is well-mixed and incorporated. Add the chocolate chips, if using.
  • Transfer the mixture into the loaf pan and bake for 40 minutes or until golden brown. A toothpick inserted should come out clean.

3/4 cup blanched almond flour
1/4 cup coconut flour
2 Tbsp. arrowroot flour (or cassava flour. (Omit for GAPS/SCD.))
2 Tbsp. virgin coconut oil (melted)
3 pasture-raised eggs (room temperature)
2 bananas (very ripe, about 1 cup of mashed banana)
1/4 cup maple syrup
1/2 cup allergen-free chocolate chips (or chopped pecans or walnuts (optional))

Steps:

  • Preheat oven to 350° F/175° C.
  • Using a whisk or fork, mix all the dry ingredients together.
  • In a separate bowl, mix all the wet ingredients together, and then mix them into the dry ingredients. If needed, you can use a stick blender or mixer to ensure the batter is well blended.
  • Oil or butter the baking pan. Add the batter to a baking dish.
  • Bake for 35-45 minutes, or until well browned and a knife inserted in the middle of the bread comes out clean.

Steps:

4 very ripe medium bananas
1/2 cup granulated sugar
1/2 cup dark brown sugar
1/2 cup canola oil*
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon fine-grain sea salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease a standard-size loaf pan (mine is 4.5" x 8.5"). Set aside.
  • To a large mixing bowl, add the bananas. Using a potato masher, smash until as smooth as possible. Stir in the sugar and canola oil. Add the eggs and whisk together until smooth. Whisk in the vanilla.
  • Set a fine-mesh sieve over the bowl. Add the flour, baking soda, cinnamon, and salt to the sieve. Sift over the wet ingredients. Using a spatula, fold the dry ingredients into the wet, just until combined.
  • Pour into the prepared loaf pan.
  • Bake until middle is set and a toothpick inserted into the middle comes out clean, 45 - 55 minutes (if you're using a larger pan than my 4.5" x 8.5" pan, start checking at around the 45 minute mark. For the smaller pan, it'll take a bit more time to cook in the middle - closer to 55 minutes).
  • Remove from oven and let the loaf cool in the pan for about 10 minutes. Use a butter knife to loosen the sides of the loaf then gently invert the pan to remove the loaf. Let cool on a wire rack.
  • Wrap in plastic wrap to store. Bonus: The plastic wrap also makes it nice and moist. Yum!
