Ham Stock:
2-1/2 lbs smoked ham hocks
6 qt water
1 large onion, chopped
2 carrots, cut into 1/2" pieces
3 celery stalks, cut into 1/2" pieces
4 large garlic cloves, crushed
1 tsp salt
1 tsp ground black pepper
2 dried bay leaves
2 Tbsp dried parsley
1 tsp dried thyme
3 whole cloves
Noodles:
1-1/2 cups flour
2 large eggs
2 tsp salt
6 -8 tsp water
Flour, for rolling
Soup:
1 cup onion, chopped
1 cup celery, chopped
1 cup carrots, chopped
Salt, to taste
Ground black pepper, to taste
2 Tbsp dried parsley
8 oz cooked ham, cut into 1/4" cubes

Steps:

  • Ham Stock: Place the ham hocks and the water in a large stockpot and bring to a boil. Skim any foam that rises to the top of the water. Add all of the remaining ingredients to the pot. Reduce the heat to medium-low and simmer, until the ham hocks are tender, about 2 hours. While your ham stock is cooking, begin preparing the noodles (see directions below). Pour the ham stock through a fine-mesh colander into a large bowl. Reserve the hocks and discard the remaining cooked ingredients. Pour the stock back into the stockpot. Remove the skin from the ham hocks and discard. Next, pull the cooked meat from the bones and cut into 1/4" cubes and set aside. Noodles: Combine the four, egg, and salt in a medium-size bowl and mix well, with clean hands, until crumbly. Add the water by the teaspoon until you're able to mold the dough into a ball. (Add more flour if the dough becomes too wet.) Spread a generous amount of the flour on a flat surface and place the dough on top. Coat a rolling pin with more flour and roll out the dough, flipping it often to prevent sticking, until it's about 1/8" thick. Loosely fold the dough in half and use a knife to cut it into 1" strips. Carefully unfold the noodles and then cut the strips into 1" squares. Place the squares onto a large cutting board and let them dry, about 2 hours, or until brittle. To make the soup, bring the ham stock to a boil, and then reduce the heat to medium. Add the chopped onions, celery, carrots, dried parsley, reserved ham hock meat, and the pre-cooked ham cubes and cook for 15 minutes. Gently add in the noodles. Reduce the heat to medium-low and cook for about 20 minutes, or until the noodles are soft, but not mushy. Season the soup with salt and black pepper, to taste.

2 tablespoons extra-virgin olive oil
1 rib celery, sliced (about 1 cup)
1 medium carrot, sliced (about 3/4 cup)
1 clove garlic, smashed
1/4 medium onion, about 1/2 cup
1/4 teaspoon kosher salt
1/3 cup orzo or other small pasta or egg noodles or broken up spaghetti
4 cups low-sodium chicken broth (1-quart box, or 2 cans)
Small handful fresh parsley leaves, basil or dill, chopped (about 2 tablespoons)
1/2 lemon, juiced (about 1 tablespoon)
Freshly ground black pepper
Serving suggestion: Whole-wheat crackers and cheese sticks.

Steps:

  • Heat the olive oil in a medium saucepan over medium heat; add all the vegetables, garlic and onion. Season with the salt, and cook until tender, about 6 minutes. Add the pasta and cook until slightly toasted and golden, about 2 minutes. Add broth, and bring to a boil over high heat. Cook, covered, until pasta is just tender, about 8 minutes.
  • Stir in whatever herb suits you (or your young eater) and lemon juice. Season with pepper and additional salt, to taste. Fill thermos, pack in a lunch sack with crackers and cheese sticks and send off to school.

Steps:

  • Combine egg, salt, milk. Add flour. (For thicker noodles add baking powder to flour before mixing.) Separate into two balls.
  • Roll out dough, and let stand for 20 minutes.
  • Cut into strips and spread to dry--dust with a little flour. Let dry for approximately 2 hours.
  • Drop into hot soup--cook for about 10 minutes.

1 bunch broccoli, cut up
1/2 cup diced celery
1/2 cup diced carrot
1 quart water
2 -4 chicken bouillon cubes
3 tablespoons butter
1/2 cup chopped onion
1/4 cup cornstarch
1/4 cup flour
1 quart milk (2% or whole is best)
4 ounces shredded cheddar cheese

Steps:

  • Combine broccoli, celery, carrots, water, and chicken bouillon in a large soup pot. Boil 20-30 minutes.
  • While vegetables are cooking - In a saucepan, saute onion in butter until tender.
  • Add cornstarch and flour to butter mixture, stirring until browned.
  • Gradually add milk and cook, stirring constantly, until thick. Add shredded cheese and stir until melted.
  • Add the cheese sauce to the broccoli mixture and stir until well combined. Simmer until heated through.

500ml low salt vegetable stock (from a cube is fine)
small piece fresh root ginger , grated
1 garlic clove , grated
2 tsp soy sauce and 2 tsp sugar
85g leftover cooked chicken , shredded
handful mixed vegetables (try beansprouts, sweetcorn, sliced carrot and mangetout)
150g pack straight-to-wok noodles (or use 85g/3oz dried, cooked according to pack instructions)
2 spring onions , sliced, to serve
juice 1 lime

Steps:

  • Put stock, ginger, garlic, soy sauce and sugar in a saucepan, then heat. Simmer for 5 mins. Take off the heat, pour into a microwave-safe bowl, then cool. Throw in chicken and veg, cover, then chill for up to a day.
  • When ready to eat, remove from fridge, then add the cooked noodles. Microwave on High for 2 mins, stir, then cook for 1 min more or until piping hot. Divide between two bowls or mugs, sprinkle with spring onions and add the lime juice.
