GRANDMA MCANDREWS' IRISH SODA BREAD
This is not the dark bread you see in every restaurant in Dublin or Galway these days but I promise, it's authentic Irish Soda Bread, exactly how my late Irish grandma made it. Serve warm or cold with butter. This freezes great. I've made several loaves before St. Patrick's Day, or family parties. I freeze them, take them out the morning they're needed and warm up in a hot oven for 5 -7 minutes before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet, or line with parchment paper.
- In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt. In another bowl, whisk together eggs, buttermilk, and corn oil. Make a well in the center of the flour mixture, and pour in the buttermilk mixture. Add the raisins, and stir a few times, just until the ingredients come together into a soft dough. Turn the dough out onto a floured surface, and with floured hands shape dough into a ball. Place the dough on the prepared baking sheet, and cut a large cross in the top with a sharp knife.
- Place the bread on a middle rack of the preheated oven, and bake until golden brown, 30 to 40 minutes.

IRISH SODA BREAD

Steps:
- Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
- Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
- Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

- Preheat oven to 350°. In a large bowl, whisk flour, sugar, baking powder and salt. In a small bowl, whisk egg, milk and butter. Stir into dry ingredients just until moistened. - Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
- With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
- Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
- Cool on a baking rack. Serve warm or at room temperature.

GRAM'S IRISH STEW
This is a stick-to-the-ribs stew I learned as a child from my Gram's. If you like a thicker stew, you can use more cornstarch.

- Heat the oil in a skillet over medium-high heat. Add the beef to the oil and season with the sage; cook the beef until browned on all sides; drain.
- Place beef, potatoes, carrots, mushrooms, onion, celery seed, Worcestershire sauce, pepper, and beef bouillon in a slow cooker; season with salt. Pour enough water over the mixture to cover. Set slow cooker to HIGH and cover. Cook for 4 to 5 hours, stirring occasionally.
- Whisk together the cornstarch and warm water in a small bowl until smooth; stir through the stew. Allow the stew to cook until thickened, 15 to 20 minutes.

Steps:
- Preheat oven 350°.
- Grease 8-inch round (or regular loaf pan).
- Place raisins in microwave safe bowl. Cover with water; micro on high 1 minute. Cover bowl with plate allowing raisins to plump.
- Cool, drain and dust with 1 tablespoon flour.
- Cream shortening and sugar.
- Add egg mixing well.
- Stir flour, baking powder and salt together.
- Add to creamed mixture along with raisins, caraway seeds and milk.
- Mix together briefly till moistened.
- Pour batter into pan.
- Bake at 350° for 45-55 minutes till bread tests done with toothpick.
- Cool 10 minutes remove to wire rack and cool completely.
