FRIED SCALLOPS WITH BIBB AND FENNEL SALAD

Fried Scallops with Bibb and Fennel Salad image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons vegetable oil, plus more for frying
1 small bulb fennel, thinly sliced, plus fronds for topping
1 1/4 pounds medium sea scallops, "foot" muscle removed
3/4 cup buttermilk
Kosher salt and freshly ground pepper
1/2 cup fresh parsley
1 tablespoon white balsamic vinegar
1/3 cup coarse cornmeal
1/3 cup self-rising flour
1 head Bibb lettuce
2 radishes, thinly sliced
1/4 cup chopped chives

Steps:

  • Heat 2 inches vegetable oil (about 3 1/2 cups) in a 10-inch cast-iron skillet until a deep-fry thermometer registers 375 degrees F. Soak the sliced fennel in a bowl of ice water; set aside.
  • Toss the scallops with 1/2 cup buttermilk and a pinch of salt and pepper in a bowl; set aside. Make the dressing: Puree the remaining 1/4 cup buttermilk and 2 tablespoons vegetable oil with the parsley, vinegar, 1/2 teaspoon salt and a few grinds of pepper in a blender until smooth; set aside. Mix the cornmeal, flour and 1/2 teaspoon salt in a shallow baking dish.
  • Drain the scallops from the buttermilk, dredge in the cornmeal mixture to coat and transfer to a plate. Fry the scallops in two batches until golden brown, 3 to 4 minutes. Remove with a slotted spoon and transfer to a rack set on a baking sheet; season with salt. Return the oil to 375 degrees F between batches.
  • Drain the fennel and pat dry with paper towels. Combine the fennel, lettuce, radishes and chives in a large bowl. Add the dressing and toss; season with salt and pepper. Divide the salad among bowls and top with the scallops and fennel fronds.

CARAMELIZED SCALLOPS RECIPE - (4/5)

Caramelized Scallops Recipe - (4/5) image

Provided by LKovac

Number Of Ingredients 10

12 large sea scallops
Pinch of kosher salt
Freshly ground black pepper
4 tablespoons clarified butter
1/2 cup white sugar, spread on a flat plate
1/2 cup dry white wine
Juice of one lemon, freshly squeezed
1 tbsp. finely chopped flat parsley
8 chives
1 tbsp. lemon zest

Steps:

  • Rinse and dry the scallops well. Season both sides of the scallops with salt and pepper. Heat a skillet on medium-high for 2 minutes. Add the clarified butter and swirl to coat the pan. When the butter begins to foam, prepare the scallops quickly. Working efficiently, coat one side of each scallop in sugar, grasping the sides and using a gentle twisting motion to help the sugar adhere. Place the scallops sugar side down in the skillet and sauté for 2½ minutes. If the sugar starts to brown too quickly, reduce the heat. Flip the scallops over and cook for 1 minute more. Add the white wine and lemon juice to the pan and reduce by half, about 1½ minutes. Transfer the scallops to a platter or serving dishes. Pour the pan juices over the top and garnish with chopped parsley, chives and lemon zest. Serve immediately.

FRIED SCALLOPS

Fried Scallops image

Use large sea scallops, which are often labeled "u/10" or "u/12," which stands for under 10 or 12 to a pound. And try to get dry scallops as opposed to wet ones, which have been treated with chemicals to extend their shelf life and add moisture. Dry scallops exude much less liquid when cooked and have better texture and flavor. These untreated scallops often tend to be less bright white, but your fishmonger should be able to tell you for sure what you're buying.

Categories     easy, quick, main course

Time 30m

Yield About 12 servings

Number Of Ingredients 5

1 cup white flour
1 cup fine corn meal
1 teaspoon baking powder
4 pounds scallops, under 10 to 12 to a pound, preferably dry
1 to 1 1/4 cups vegetable oil of your choice (you may not need it all)

Steps:

  • Combine flour, corn flour and baking powder in a medium-size aluminum baking pan and shake around to mix well.
  • Dry scallops with paper towels, then dip both sides in flour mixture and shake off any excess.
  • Put a 20-inch iron skillet over a propane gas burner and turn burner to high. Add enough oil to come to a depth of just over 1/4 inch. Heat until oil is hot but not smoking; you can test it by dropping a small piece of scallop into the oil; it should bubble furiously.
  • When oil is hot, add scallops in batches small enough so they're not crowded, and cook just until golden, about 2 to 3 minutes per side. Drain on paper towels and eat right away.

PAN-FRIED SCALLOPS ON CARAMELIZED FENNEL

Pan-Fried Scallops on Caramelized Fennel image

Yield serves 4

Number Of Ingredients 18

2 pounds fennel bulbs (about 2 medium)
1 garlic clove, finely chopped
2 shallots, finely chopped
2 dried bay leaves
Zest of 1 orange
1/2 teaspoon ground cardamom
8 tablespoons olive oil
1 tablespoon coarse salt
Pinch of freshly ground white pepper
2 teaspoons light-brown sugar
1 14 1/2-ounce can low-sodium chicken broth, or homemade
1 sprig thyme
3/4 cup water
8 large scallops (about 14 ounces), muscles removed
1/3 cup fresh flat-leaf parsley, packed
2 tablespoons fresh lemon juice
2 tablespoons toasted pine nuts, for garnish
Shaved truffle, for garnish (optional)

Steps:

  • Preheat the oven to 325°F. Trim the feathery tops from the fennel bulbs, and discard. Trim the stem pieces and outer leaves from the bulbs; clean, and reserve 2 cups (about 8 ounces) of these trimmings for the puree. Slice each bulb through the root into 4 1/2-inch-thick strips.
  • In a small roasting pan, combine the garlic, 1 shallot, 1 bay leaf, orange zest, 1/4 teaspoon cardamom, 3 tablespoons olive oil, 1/2 teaspoon salt, white pepper, 1 teaspoon brown sugar, and the chicken broth. Add the fennel slices, and gently toss to coat with the mixture. Cover the roasting pan with foil, and cook in the oven until the fennel is tender and most of the liquid has evaporated, about 45 minutes. Remove the fennel from the pan, and transfer to a plate to cool.
  • Coarsely chop the fennel trimmings. In a medium saucepan, heat 1 tablespoon olive oil over medium-high heat. Add the trimmings, the remaining shallot, 1/4 teaspoon cardamom, bay leaf, and thyme. Cook, stirring occasionally, until the trimmings soften, about 4 minutes.
  • Add the water, 1/2 teaspoon salt, and 1/2 teaspoon brown sugar; bring to a boil. Reduce heat; cover the pan, and simmer until the trimmings are soft when pierced with a fork, about 20 minutes. Remove the bay leaf and thyme; transfer the mixture to the bowl of a food processor. Puree, adding 2 tablespoons oil through the feed tube with the motor running. Set aside.
  • In a large nonstick skillet over medium-high heat, sauté the reserved fennel slices until golden brown, 2 to 3 minutes on each side. Remove from the pan, and set aside. In the same pan, heat the remaining 2 tablespoons olive oil. Add the scallops, and sprinkle with 1 teaspoon salt; sauté until brown on the first side, about 4 minutes. Turn, sprinkle with the remaining teaspoon salt, and add the parsley. Sauté until the other side is brown, about 2 minutes. Remove from heat; add the lemon juice to the pan. Toss the scallops and parsley in the pan juices.
  • To serve, place 2 1/4-cup dollops of fennel puree on each plate; top each dollop with a fennel slice and a scallop. Garnish with wilted parsley leaves, toasted pine nuts, and shaved truffle, if desired.

PAN-FRIED FENNEL

Pan-Fried Fennel image

This is an easy way to prepare fennel bulbs. Fennel tastes great pan-fried and you don't need a lot of seasoning as fennel has so much flavor on its own, which just intensifies while sauteeing.

PAN-SEARED SCALLOPS WITH FENNEL PUREE

Pan-Seared Scallops with Fennel Puree image

Categories     Side     Steam     Scallop

Yield Serves 12 as an hors d¿oeuvre

Number Of Ingredients 4

6 large sea scallops
Coarse salt
Sunflower or other neutral-tasting oil
3/4 cup Fennel Puree (page 310), fennel fronds reserved for garnish

Steps:

  • Sear scallops If necessary, remove the small, tough muscle (called the adductor) found on the side of the scallops (often the fishmonger will have removed it), then slice each scallop in half horizontally so that you have twelve pieces. Heat a large skillet over high heat. Season scallops on both sides with salt. When pan is hot, add enough oil to coat bottom of pan (about 1 tablespoon), and swirl to coat evenly. Working in batches to avoid crowding pan, add scallops and quickly jerk the pan to keep them from sticking. Sear until lightly golden, about 45 seconds; with an offset spatula, turn over and cook until opaque throughout, about 30 seconds more (be careful not to turn too soon or the scallops may tear). Transfer to a plate lined with paper towels and cover to keep warm (if necessary). Repeat with more oil and remaining scallops.
  • Serve Heat fennel puree in a small saucepan over medium heat until warm. Spoon 1 tablespoon puree onto each of 12 small plates and top with a scallop slice. Garnish with fennel fronds, and serve.

BAY SCALLOPS WITH FENNEL, ENDIVE AND ROSEMARY-ORANGE CARAMEL GLAZE

Bay Scallops With Fennel, Endive And Rosemary-Orange Caramel Glaze image

Provided by Dorie Greenspan

Categories     dinner, project, main course

Time 20m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons sugar
1 sprig rosemary, broken in half
2 tablespoons sherry vinegar
1/2 cup freshly squeezed blood orange juice (or 1/2 cup orange juice plus 1 tablespoon lemon juice)
Salt and freshly ground white pepper
1 pound bay scallops
2 tablespoons all-purpose flour
1 tablespoon extra virgin olive oil
1 1/2 tablespoons unsalted butter
1 bulb fennel, trimmed, cored and thinly sliced
1 endive, trimmed, cored and cut crosswise into 1/2-inch rounds

Steps:

  • Melt sugar in medium sauté pan over high heat. When sugar colors around edges, add a piece of rosemary, and stir until sugar is light golden-brown.
  • Stand back, and stir in vinegar; caramel will spatter. When vinegar evaporates, stir in juice and simmer. Reduce by half; sauce should lightly coat a spoon. Season with salt and pepper, and set aside.
  • Toss scallops with salt, pepper and flour. Heat olive oil in a large nonstick sauté pan over high heat until pan starts to smoke. Shake off excess flour from scallops, and put them in pan with remaining rosemary. Brown 1 minute, turn scallops over, add 1/2 tablespoon butter, and brown 1 to 2 minutes more; transfer to a warm plate.
  • Return pan to medium heat, and add remaining butter along with fennel and endive. Season with salt and pepper, cover, and cook, stirring and scraping bottom of pan until vegetables soften, about 3 to 4 minutes. Return scallops to pan, and add glaze. Stir everything together for just a minute, taste for salt and pepper, and discard rosemary. Divide among four warm shallow soup plates; serve immediately.
