HUNGARIAN GOULASH I
A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

Steps:
- Heat oil in a large pot or Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.
- In a medium bowl, combine paprika, 2 teaspoons salt and pepper. Coat beef cubes in spice mixture, and cook in onion pot until brown on all sides. Return the onions to the pot, and pour in tomato paste, water, garlic and the remaining 1 teaspoon salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

HUNGARIAN GOULASH

- Place the onions, carrots and green peppers in a 5-qt. slow cooker. Sprinkle meat with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a large skillet, brown meat in oil in batches. Transfer to slow cooker., Add broth to skillet, stirring to loosen browned bits from pan. Combine the flour, paprika, tomato paste, caraway seeds, garlic, sugar and remaining salt and pepper; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over meat. Cover and cook on low for 7-9 hours or until meat is tender., Cook noodles according to package directions. Stir sour cream into slow cooker. Drain noodles; serve with goulash.

OLD WORLD HUNGARIAN GOULASH
One of the best goulash recipes I've ever come up with. I think that the original recipie I started out with used 2 lbs. beef stew meat, cut into 1-inch pieces instead of ground beef

Steps:
- Heat butter in a large skillet over medium-high heat.
- Cook beef in butter, stirring occasionally, until lightly browned.
- Do not drain.
- Place beef and sliced onion in a slow cooker.
- Mix partially cooked elbo macarroni, beef broth, tomato paste, crushed tomatoes, garlic, Worcestershire sauce, paprika, season salt, liquid smoke, salt, and pepper; stir into beef mixture.
- Cover and cook on low heat 4-5 hours (I always use the longer cook time).
- Mix water and flour; gradually stir into beef mixture.
- Stir in green pepper.
- Cover and cook on high heat 30 minutes. Serve with a dolop of sourcream atop.

GRANDMA AGOCS' HUNGARIAN GOULASH
Steps:
- 1. In a heavy 5 or 6 Qt Dutch Oven, fry the bacon over medium heat. then remove and allow to cool and dry on some paper towels. 2. Brown the stew meat evenly in the bacon fat, seasoning with salt an dpepper as you go. Sprinkle the flour over the meat as it brows, too. 3. Add onions, garlic, red peppers, and caraway. Stir for about 3 or 4 minutes. 4. Add vinegar, crushed tomatoes, and broth. Lower heat to simmer and cook for about an hour. Stir occasionally. 5. Add the potatoes and simmer for an additional 30 minutes. 6. Crumple the bacon and add it to the mix. Simmer for an additional 15 minutes. 7. Season to taste with salt and pepper. 8. Stir in the sour cream. 9. Serve over noodles.
AURORA'S HUNGARIAN GOULASH
A Quick hearty meal that is ready in 20 min. Note: This is a "Hungarian Goulash" typical of recipes found in North American Cookbooks and Magazines from decades past. Not to be confused with authentic Hungarian Goulash.

- Saute onions and bell pepper in oil until tender.
- Add beef, garlic, and paprika.
- Cook until beef is browned.
- Add undrained tomatoes and sauce and add tomato paste to taste starting with half a can.

- Cook on medium-high heat 8-10 minutes.

Steps:
- Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
- Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.

- Cut the beef into small cubes. Determine the size of the cubes according to your taste, you can cut them coarser or finer. Chop the onion into small pieces.
- Heat lard or oil in a high saucepan. Fry the meat in portions in it over high heat. Take just enough meat to cover the bottom of the pot and sear it, stirring every now and then. Then take the browned portion of meat out of the pot and place it temporarily on a large plate. Fry all the beef in this way, a little at a time.
- Now add the onions to the pot and simmer on low heat until soft, stirring with a wooden spoon. Then add the tomato paste to the pot and let it sauté gently for a few minutes, stirring constantly. The roasted aromas that are released give the finished goulash its typical taste.
