These tasty oatmeal spice cookies were a real Crew-pleaser! They're the best of both worlds. It combines a molasses cookie and an oatmeal cookie. Both are old-fashioned favorites and when combined make one yummy cookie. Each cookie is lightly crunchy on the outside, soft and chewy inside with just the right amount of spices. Sweet and slightly tangy, the icing is perfect on top.

COOKIES
1 cup(s) butter, softened
1 cup(s) sugar
1/2 cup(s) brown sugar
1/2 cup(s) sorghum or molasses
2 - eggs
1 1/2 cup(s) all-purpose flour
1 teaspoon(s) salt
1 teaspoon(s) soda
2 teaspoon(s) cinnamon
1 teaspoon(s) ginger
1 cup(s) raisins
3 cup(s) quick oats
ICING
1 cup(s) confectioners' sugar, sifted
2 tablespoon(s) lemon juice
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 375°F. Prepare cookie sheets with baking parchment or a silicone liner.
  • Cream butter and sugars until light and fluffy. Beat in sorghum or molasses and the eggs until well blended.
  • Stir together the flour, salt, soda, and spices.
  • Add the dry ingredients to the creamed mixture. Mix until well mixed.
  • Add raisins.
  • Fold in the oats and stir well.
  • Drop by tablespoons onto prepared cookie sheets. Bake for about 12 minutes, until lightly browned. Allow to set about 3 minutes on sheets, then remove to wire rack for cooling.
  • When cool, you can ice with royal icing. Combine icing ingredients and stir until smooth. Add a little bit more lemon juice if too thick, or more powdered sugar if too thin.
  • Drizzle from the end of a teaspoon over cookies. Or, place a teaspoon of icing in a dollop on each cookie and spread with the back of the spoon. Allow to harden before storing.
  • I also discovered some leftover packaged cookie icing in my pantry and decided to ice some of the cookies with this. You can make swirls or stripes.

1 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
2 sticks unsalted butter, at room temperature
1 cup packed light brown sugar
¼ cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
2 ¾ cups old-fashioned rolled oats
1 cup raisins
½ cup chopped toasted pecans
2 cups powdered sugar
2 tablespoons unsalted butter, at room temperature
1 tablespoon apple juice, or more to taste

Steps:

  • Position racks in the top and bottom thirds of the oven, and preheat to 350 degrees F (175 degrees C). Line 2 cookie sheets with silicone liners (such as Silpat®).
  • Whisk flour, baking soda, cinnamon, and salt together in a medium bowl.
  • Combine butter, brown sugar, and white sugar in a large bowl. Beat with an electric mixer on medium-high speed, stopping occasionally to scrape down the sides of the bowl, until creamy, about 2 minutes. Add eggs and vanilla and beat until blended, about 1 minutes, scraping the sides as needed. Add dry ingredients and mix on low speed just until blended. Mix in oats, raisins, and pecans on low speed just to blend.
  • With a 2-inch cookie scoop, scoop dough onto the prepared cookie sheets, spacing about 2 inches apart.
  • Bake in the preheated oven, rotating sheets halfway through, until cookies are light golden brown, 10 to 12 minutes. Transfer to a wire rack to cool completely, about 30 minutes.
  • While the cookies are cooking, whisk powdered sugar, butter, and 1 tablespoon apple juice together in a bowl until smooth. Add more juice if needed for a good drizzling consistency.
  • Drizzle icing over cooled cookies. Let icing set before serving, about 30 minutes.

2 cups brown sugar

2 teaspoons vanilla extract

6 cups rolled oats
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, cinnamon, allspice and cloves; stir into the sugar mixture until well blended. Mix in the rolled oats alternately with the milk. Finally, stir in the raisins. Drop by heaping spoonfuls 3 inches apart onto the prepared cookie sheets.
  • Bake in the preheated oven for 10 to 11 minutes, or until edges are golden and tops are dry. Cool on cookie sheets for 1 minute before removing to cool on wire racks.

4 large eggs, room temperature

1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

This is my grandma's oatmeal cookie recipe. Once she got a deep freeze there was always a coffee tin full of them in the freezer. Every afternoon around 3:00 or 4:00 my grandpa would come in from the fields and she'd pull a couple of them out to put on a plate for them to enjoy with their afternoon coffee. I've now passed this recipe on to my daughter who was named after her too. A definite heirloom recipe. These are a crunch cookie so full of nuts and coconut that they are like eating a bowl of granola or oatmeal in a cookie.

1 cup Crisco shortening
2 large eggs
1/2 teaspoon lemon extract

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.
