This recipe is from my husbands grandmother. It's a family favorite. We don't know where she got it from. We were married 10 years before she gave me the recipe.

2 (29 ounce) cans cling peach halves
1/2 cup Kahlua
1/2 cup brown sugar, packed
1/4 cup tarragon white wine vinegar
1 teaspoon lemon zest (zest of 1 lemon)
1 teaspoon orange zest (zest of 1 orange)
2 cinnamon sticks

Steps:

  • Drain peaches, set aside.
  • Drain 1 1/2 cups of syrup from the peaches into a saucepan.
  • Add Kahlua, sugar, vinegar, peels and cinnamon. Bring to a boil. Reduce heat to medium and simmer 5 minutes.
  • Pour over drained peaches, cool and refrigerate.

Home Canned Spiced Peaches (My Grandma's Recipe) image

Spiced peaches are a wonderful alternative to regular canned peaches. The addition of whole spices creates a savory treat everybody will love all winter. Make some extra jars to give as gifts - everybody will love this unique Southern treat! (This recipe makes 7 quarts which is the perfect amount for one batch in a water bath canner.)

10 lbs peaches (about 15 large)
14 cinnamon sticks
3 1/2 teaspoons whole cloves
3 1/2 teaspoons whole allspice
12 cups granulated sugar (I suggest heavy syrup for this)
12 cups water

Steps:

  • Prepare your water bath canner and clean jars. Start the canner coming to a boil. If it is ready before the fruit you can turn it off. It will come back to a boil very quickly when you are ready.
  • Put spices into the jars. 1/2 teaspoon of whole allspice, 1/2 teaspoon of cloves, 2 whole cinnamon sticks per jar.
  • Prepare desired sugar syrup by heating water and sugar in a sauce pan until sugar is dissolved. Set it aside. (See notes at bottom of post for different types of syrups.)
  • Blanch peaches by dipping in boiling water for 30-60 seconds. Use a large slotted spoon and do 5 peaches at a time. Immediately remove peaches to a sink or bowl with ice water to stop the cooking.
  • Slice each peach in half along the natural line of the peach. The skin will slip off easily after it is cut. Remove skin, pit, and any little fragments of pit left in the peach.
  • Fill one jar at a time. Each peach half is supposed to be packed pit side down. As you fill a jar, cover the peaches with hot syrup leaving 1/2" head space.
  • Load 7 quarts into a boiling water bath canner. Make sure the jars are covered by at least 2" of water.
  • Bring the water back to a boil. Process for 30 minutes. If you live above 1,000 feet you need to add more time to adjust for altitude. At 1,001 - 3,000 feet add 5 minutes. At 3,001 - 6,000 feet add 10 minutes. At 6,001 - 8,000 feet add 15 minutes. At 8,001 - 10,000 feet add 20 minutes
  • Remove jars of peaches and place on a towel to cool. Allow them to come to room temperature. The lids will seal at this time. Any lids that do not seal need to be processed again or refrigerated and eaten within a week. Sealed jars can be labeled and stored on a shelf out of direct light for up to two years.

SPICED POACHED PEACHES

This fragrant fruit dessert is served with star anise yogurt.

6 ripe peaches
5 cups cold water
1 cinnamon stick
4 star anise, left whole, plus 2 teaspoons ground star anise
4 thin slices fresh ginger
8 ounces sugar
14 ounces Greek-style yogurt
Flaked toasted almonds (blanched and sliced), for garnish

Steps:

  • Score a cross shape in the bottom of each peach. Put the peaches into a large pot of boiling water, for 30 seconds, then transfer the peaches to a large bowl filled with cold water to refresh. Set aside for another 40 to 45 seconds, then drain the peaches, and peel using a sharp knife.
  • Put the measured cold water, cinnamon, whole star anise, ginger slices, and sugar into a large saucepan, stir well, and bring to a boil. Reduce the heat, and simmer the mixture, stirring occasionally, until the sugar has dissolved and the mixture resembles syrup.
  • Add the peaches to the syrup mixture, and cover them with a disk of greaseproof or parchment paper measuring the same diameter as the pan. Cover the pan with a lid, reduce the heat to a simmer, and simmer for 15 to 20 minutes, or until the peaches are cooked through (they will be soft when pricked with a knife.) Remove the peaches, and set aside on a warm plate. Continue to boil the syrup until its volume has reduced to about 1 cup. Set aside to cool.
  • Brush the peaches with a little of the syrup. Stir half of the remaining syrup and the ground star anise into the Greek-style yogurt until well combined, adding more syrup as necessary, to taste.
  • To serve, cut each of the spiced poached peaches in half and place 2 of the peach halves onto each of the serving plates. Spoon a portion of the star anise yogurt alongside each peach. Drizzle a little syrup over each peach. Sprinkle over the toasted almonds.

1 qt home canned peaches (or use 2 cans store bought)
1 1/3 c sugar
1 c apple cider vinegar
4 cinnamon sticks
2 tsp whole cloves

Steps:

  • 1. Drain peaches and save syrup, bring to boil. Add remaining ingredients, except peaches. Simmer 10 minutes or longer. Pour over peaches, cool and refrigerate. Serves 8-10. Remove cloves before serving but you can leave the cinnamon in for a nice look.

Ever found an empty pan of something in your fridge? I did! I found this recipe in a book. It was rather plain so I added my own tasteful touches and served it to my family. They loved every bite and it was gone in just a few hours. If fresh peaches are out of season then use the best frozen peaches you can but cut back on the sugar.

1/2 cup butter (not margarine)
1 cup all-purpose flour (or cake flour)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
2 teaspoons nutmeg
1 1/2 teaspoons cinnamon
1/2 teaspoon clove (or allspice)
1 cup milk
3 cups peaches, fresh, peeled and sliced about 1/4-inch thick (I used 4)
1/4 cup brown sugar
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 13 X 9 inch baking dish with non stick spray.
  • Put butter in pan and put in oven to melt.
  • Meanwhile, In a mixing bowl, blend dry ingredients EXCEPT BROWN SUGAR together.
  • Add milk and stir well.
  • Using oven mitts, remove the baking dish from the oven if butter is melted.
  • Pour batter into dish and even out.
  • Spoon peaches wiwth some juice (if any) evenly over the batter.
  • Bake at 350 for 30 minutes then check for doneness.
  • (Mine baked 40 minutes, sister's baked 30).
  • Cobbler is done when batter rises and browns on top and firm in center.
  • Sprinkle brown sugar over the top.
  • Cover with foil (or other top) immediately so that sugar can warm up and stick to the cobbler.

10 peaches
7 ½ cups white sugar
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground cloves
6 half pint canning jars with lids and rings

Steps:

  • Bring a large pot of water to a boil; add peaches. Cook until peach skin begins to split, 1 to 2 minutes. Drain and allow to cool slightly. Peel, pit, and quarter peaches and transfer to a large pot. Mash peaches with a potato masher and stir in sugar, cinnamon, and cloves.
  • Cook and stir on low heat until desired consistency, 1 to 1 1/2 hours.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack peach preserves into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and cool. Once cool, press the top of each lid, ensuring that the seal is tight (lid does not move up or down at all).
