OLD FASHIONED BAKED BEANS
Deliciously thick, sweet, smoky and savory, these from-scratch Old Fashioned Baked Beans are sure to be a hit at your next BBQ, picnic, potluck or family dinner!

Steps:
- Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
- In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
- Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
- SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

GRANDMA ESTHER'S BAKED BEANS
These Baked Beans are without a doubt the most flavorful beans I have ever tasted. This recipe came from my wife's grandmother. Be patient with cooking these beans. Do not stop cooking until they turn very dark. When the cooking process is complete, the onions and bacon will have completely dissolved into the sauce.

- Preparation:.
- Cover the beans with cold water and let soak overnight.
- Drain and cover the beans with fresh water.Boil the beans for one hour or until the jackets burst.Drain and reserve the liquid for basting during bake cycle.
- Cook the bacon until crispy but not burnt. Crumble the cooked bacon to make bacon bits. Dice the onions and sauté in the butter until clear.
- Add the cooked bacon bits to sautéed onions, and then mix everything together in a large bowl. Place mixed ingredients in a clay pot cooker (any covered OVEN SAFE pot will work)and cover. Bake at 350° until beans are cooked. Some basting with the reserved liquid may be required during bake cycle.
- Note: YOU CAN OMIT THE BACON IF YOU LIKE; THE FLAVOR IS STILL GREAT.... ALSO YOU CAN TRIPLE THE RECIPE IF YOU USE TWO POUNDS OF BEANS.... ANY BAKEWARE WILL WORK AS LONG AS YOU COOK THE INGREDIENTS LONG ENOUGH.... WHEN FINISHED THEY SHOULD BE VERY DARK IN COLOR AND NOT RUNNY WITH LIQUID. I HAVE COOKED THE LARGE BATCH OVERNIGHT @ 250° STIRING EVERY TWO HOURS OR SO...THIS IS MY PREFERED METHOD.

GRANDMA'S BEANS
Steps:
- Rough chop the garlic, carrot, serrano and onion into small pieces. Heat the oil in a medium pot over medium-high heat. Add the chopped vegetables and 1 teaspoon cumin to the pot and cook until the onion starts to brown.
- Strain the beans and add them to the pot. Pour in enough water to just cover the beans. Cover and bring them to a boil. Stir, then cover again and lower to a simmer. Simmer the beans until they start to burst, around 1 hour.
- Uncover the pot and add the orange, squeezing the juice into the pot and then dropping the halves in. Stir in the remaining teaspoon cumin and the salt. Continue to simmer to allow the beans to thicken, about 45 minutes more. Add more cumin and salt to taste.
- Serve as a side dish, over rice, or on their own on a taco.
GRANDMA'S BAKED BEANS
My mother has made these beans for years. This recipe pairs nicely with my macaroni salad recipe!

Steps:
- 1. Soak beans overnight. In the morning boil over a low heat for 30 minutes. Adding water to cover if necessary.
- 2. Take 1/2 cup of the bean liquid and dissolve the dry mustard, white sugar and brown sugar. Add to the beans.
- 3. Add the following to the beans. Molasses, salt and ketsup.
- 4. In a dutch oven place the onion and most of the pork cubes in the bottom. Pour in the bean mixture.
- 5. place the remaining pork cubes on top.
- 6. Bake at 325 degrees for 4 hours and 30 minutes.

- In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.
