Categories     Dessert

Time 1h

Number Of Ingredients 16

2 1/2 cups coarsely crushed vanilla wafers
1/4 cup sugar
1/2 cup butter (melted)
1/2 cup plus 2 tablespoons sugar
1/4 cup cornstarch
1/8 teaspoon salt
5 large egg yolks (lightly beaten)
1 1/2 cups whole milk
1 cups heavy cream
2 teaspoons vanilla
2 tablespoons unsalted butter
1 teaspoon (or more to taste) brandy
2 bananas (firm, but ripe)
2 cups heavy cream
3 tablespoons powdered sugar
1/2 teaspoon vanilla

Steps:

  • Preheat oven 350 degrees.
  • In a medium mixing bowl, combine the vanilla wafer crumbs and sugar. Add the butter and mix well. Press firmly onto the bottom and up the sides of a 9 inch pie plate. Bake 10 to 12 minutes or until golden brown. Remove from oven, and cool completely before adding filling (about 1 hour).
  • In a medium, heavy-bottomed saucepan, combine sugar, cornstarch, and salt. Whisk in egg yolks, Gradually add milk and cream. Cook over medium heat, bringing to a gentle boil, whisking constantly until mixture thickens 8-10 minutes. Continue to gently simmer for 1 minute, lowering heat as necessary, and stirring constantly. Remove from heat. Whisk in vanilla, butter, and brandy.
  • Pour filling into a bowl. Place plastic wrap directly on the surface of the filling to prevent a skin from forming. Cool for about 30 minutes or until filling is warm, but no longer hot.
  • Pour half of the warm filling into the cooled crust. Peel and slice the bananas into 1/2 inch slices and layer on top of the filling. Pour the remainder of the filling over sliced bananas. Place a clean sheet of plastic wrap directly on the top surface of the filling. Refrigerate pie until completely chilled, at least 3 hours.
  • Whip the heavy cream in a chilled bowl until soft peaks form. Add powdered sugar and vanilla; continue to whip until peaks are just stiff. Spread whipped cream over topping and shape decoratively into a mound. Refrigerate until ready to serve.

GRANDMA'S BANANA CREAM PIE

Grandma's Banana Cream Pie image

My grandmother was a wonderful cook, made great pies, and this was my favorite. She always used a homemade pie crust and served it with a dollop of Cool Whip or whipped cream on top. She didn't give me any idea how many bananas to use...so I guessed. She would also use the same custard, making a half batch, for the filling in cream puffs.

ELLIE'S FAVORITE BANANA CREAM PIE

Categories     dessert

Time 3h55m

Yield 8 servings

Number Of Ingredients 12

Nonstick cooking spray
14 graham cracker squares (7 full sheets)
2 tablespoons butter, softened
1 1/2 teaspoons unflavored gelatin
3 tablespoons boiling water
1/3 cup plus 1/2 teaspoon sugar
3 tablespoons all-purpose flour
1 1/2 cups 1 percent low-fat milk
2 egg yolks
1 teaspoon vanilla extract
2 cups sliced banana (3 medium bananas)
1/4 cup whipping cream

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch pie plate with cooking spray.
  • In a food processor, process graham crackers until finely ground. Add butter and 1 tablespoon of water, and process until the crumb clumps together. Press crumb mixture into bottom of pie plate and about 1/2-inch up the sides. Bake in the oven for 10 minutes, then let cool.
  • In the meantime, make the filling. Put the gelatin in a small bowl; add 3 tablespoons of boiling water and stir until gelatin is dissolved.
  • In a medium saucepan, whisk together 1/3 cup of sugar and the flour. Add the milk and cook over medium heat, whisking constantly, until the flour and sugar dissolve and the mixture comes to a gentle boil. In a medium bowl, lightly beat the egg yolks. Ladle about 1/2 cup of the warm milk mixture into the eggs yolks to bring the temperature of the egg yolks up gradually while whisking. Add the tempered eggs to the hot milk mixture in the saucepan and continue to cook over medium heat, stirring constantly, until the mixture returns to a gentle boil and has thickened, about 5 minutes. Stir in the vanilla extract and gelatin. Set aside to cool slightly.
  • Arrange the sliced bananas on the graham cracker crust and pour the pudding on top. Place in the refrigerator until the pudding has set, about 3 hours.
  • Whip the cream with an electric beater. When it is about halfway done, add 1/2 teaspoon of sugar, then continue whipping until fully whipped. Put the whipped cream in a plastic bag, concentrating it in 1 corner of the bag. Snip that corner off the bag and squeeze the whipped cream out of the bag in a decorative pattern around the pie.

Marie Callender's Copycat BANANA CREAM PIE Recipe - (4/5) image

Provided by carvalhohm

Number Of Ingredients 17

Pie:
1 (9 inch) pie crust, baked and cooled
2 sliced bananas
1/4 cup soft beaten cream cheese
2/3 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
1 1/2 cup whole milk
1 1/2 cup evaporated milk
4 beaten egg yolks
2 tablespoons butter, softened
1/8 cup sliced almonds
1 tablespoon vanilla extract
Fresh Whipped Cream Topping:
3/4 cup chilled whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract

Steps:

  • Mix in a 2 quart sauce pan the sugar, cornstarch, salt, evaporated milk and whole milk. Cook over medium heat stirring constantly until mixture thickens and boils for 1 minute. Remove from heat. Slowly pour half of the hot mixture in to eggs and stir until that mixture is completely incorporated. Then pour the egg mixture in to the pot with the other half of pudding and continue to cook on medium heat until it reaches boiling stage again. Add cream cheese and mix thoroughly (use a hand mixer). It will dissolve the cream cheese better and make the pudding lighter and creamier. Remove from heat and add vanilla and butter, keep using the hand mixer until all is blended. Let pudding stand for 15 minutes but while still warm pour half of pudding in pie shell and layer with bananas then pour remainder of pudding on top. When pie is completely cooled top with fresh whipped cream and garnish with sliced almonds. For Whipped Topping: Pour cream into a well-chilled glass or metal bowl and beat until soft peaks form gradually add powder sugar until all has been blended and then add vanilla slowly until it has also been blended . Mixture should have stiff peaks. The whipped cream may be put into a pastry bag and used for that added effect.
