CLASSIC BRAN MUFFINS
A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

GRANDMOTHER'S MUFFINS
Every Sunday morning, our family would go to my grandmother's house for her homemade muffins. I finally got the basic recipe and through years of experimenting I finally came up with the right portions to make them taste like hers. Please try and enjoy.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups. Stir the flour, baking powder, and salt together in a bowl; set aside.
- Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add 1 egg and allow it to blend into the butter mixture; beat the vanilla and milk into the mixture with the second egg. Mix the flour mixture into the wet ingredients until just incorporated. Divide the dough into the prepared muffin cups.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 30 minutes.

GRANDMA'S BRAN MUFFINS
Again from my moms kitchen originaly. This makes a roasting pan full of mix, which then can be stored in fridge for up to 6 weeks weeks, and used as needed. I used to make this often when the kids were little, a warm tasty breakfast treat.

- Mix all the dry ingredients in a large pan (roasting).
- Blend sugar and wet ingredients in a large bowl.
- Mix liquid into dry and blend together well.
- Baking.
- Fill muffin cups 3/4 full.
- Bake 350 till done Stores in fridge x 6 weeks.

GRANDMA'S REFRIGERATOR BRAN MUFFINS
These are the moistest muffin I have ever had my grandma made them my whole life, they are nutritious and Delicious, Made with bran and bran flakes the buttermilk gives them the extra moistness, The mixture is made ahead and keeps for 2 weeks in the fridge excellent for Lunches or just to enjoy!

- Soak Bran in boiling water set aside.
- Mix all remaining ingredients in a large mixing bowl than add Bran mixture to it mix till all incorporated .
- mixture must sit 24 hours in fridge before baking muffins this allows it to caramelize, this is an excellent make ahead recipe.
- Bake at 350 till toothpick comes out clean.
- let cool on rack and enjoy.
- This mixture keeps in your fridge for up to 2 weeks and is excellent make your muffins as you need them and enjoy these nice moist fresh muffins.

EASY BRAN MUFFINS
Peggy Reed of Vergennes, Vermont says her granddaughter Kelsey has always loved cooking. At age 4, Kelsey entered Bran Muffins in a baking contest. "The recipe Kelsey used is great for kids. The ingredients are measured in whole amounts," Peggy explains. "It makes a lot of batter, but it can be stored in the refrigerator so the muffins can be made in batches." By the way, Peggy also entered muffins in the contest, competing against Kelsey. Kelsey won the blue ribbon and Grandma came in second place!

GRANDMA'S RAISIN-BRAN MUFFINS

Steps:
- 1. Place the cereal and milk in a large bowl, and stir to combine. Set aside for about 5 minutes to soften. 2. Place the flour, baking powder, and salt in a medium-sized bowl, and stir to combine. Set aside. 3.When the bran is soft and has absorbed most of the milk, add the molasses, olive oil, eggs, and fruit purée. Stir until thoroughly combined. 4. Add about half of the flour mixture to the bran mixture, and stir with a large spoon to combine lightly. 5. Sprinkle the raisins on top of the batter. Sprinkle the rest of the flour mixture over the raisins, and stir just until combined. Do not overmix. 6. Grease 12 muffin cups or line with paper cups. Divide the batter equally among the 12 cups and bake in a preheated 400°F oven for 15 to 18 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool to room temperature before serving.

- Preheat oven to 400 degrees F. Line a 12 cup muffin tin with only 10 liners and spray the inside of them with nonstick cooking spray -- DO NOT SKIP THIS.
- In a large bowl mix together brown sugar, molasses, applesauce, eggs, almond milk, apple cider vinegar until well combined, smooth and creamy.
- In a separate large bowl mix together dry ingredients: wheat bran, whole wheat pastry flour, baking powder, baking soda, salt and cinnamon. Add dry ingredients to the wet ingredients and mix with a spatula until just combined. Stir in melted and cooled coconut oil, mixing again until just combined.
- Divide batter evenly into 10 muffin liners and bake for 15-20 minutes or until toothpick comes out clean or with just a few crumbs attached. Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm with a little butter on top.
