WINNING CREAM OF CAULIFLOWER SOUP
Meet the Cook: Generally, my husband isn't a soup fan - but his spoon's poised and ready for this version. I adapted this rich and creamy concoction from a recipe I tasted at a local restaurant...and it's since become a popular item on my "menu". -Carol Reaves, San Antonio, Texas

Steps:
- In a soup kettle or Dutch oven, saute the onions, carrots, celery and garlic in 1/4 cup butter until tender. Add cauliflower, broth, parsley, salt and pepper, basil and tarragon. Cover and simmer until the vegetables are tender, 30 minutes. , Meanwhile, in a saucepan, melt the remaining butter. Stir in flour until smooth. Gradually stir in the milk and whipping cream. Bring to a boil; cook and stir until thickened, 2 minutes. Add to cauliflower mixture. Cook until thickened, stirring frequently, 10 minutes. Remove from the heat; stir in sour cream. Garnish with tarragon if desired.

CREAM OF CAULIFLOWER SOUP II
I make lots of cream soups and this is a good 'basic' recipe. I originally made this in 1990 and always make some modifications - we like lots of garlic as reflected in this recipe!! I also add or substitute other vegetables, i.e., broccoli and spinach. I also use potatoes for thickening rather than cream to keep the fat down.

Steps:
- In a large pot over medium heat, melt butter. Stir in onion and garlic and cook until onion is translucent, about 5 minutes. Stir in potatoes and carrots and cook 5 minutes more. Pour in chicken broth and bring to a boil. Stir in cauliflower, cover, reduce heat and simmer until vegetables are tender, 10 to 20 minutes. Remove from heat.
- Puree in batches in a blender or food processor, or in the pot using an immersion blender. Return to low heat and stir in milk, salt, pepper, nutmeg and sherry. Heat through. Serve garnished with parsley.

SIMPLE CAULIFLOWER SOUP
A nice and simple healthy soup. First the cauliflower is sauteed in butter with potatoes and onions, and then simmered in vegetable stock.

- Melt the butter in a large pot over medium heat. Saute the onion in the butter for 5 minutes. Stir in the cauliflower and potato and saute for 5 more minutes.
- Pour in the stock, bring to a boil, reduce heat to low and simmer for 20 minutes, or until all vegetables are tender. Add the milk, stirring well to blend. Season with salt and pepper to taste.

GRANDMA NICKIE'S DEEP FRIED CAULIFLOWER
My Grandma Nickie used to make this 'treat' and we could never get enough. After many attempts, I've managed to copy her. Both my boys asked me to teach them to make it.

Steps:
- Heat frying oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Toss cauliflower florets with salt in a bowl. Stir egg and vegetable oil together in a bowl; whisk flour and milk into egg mixture until batter is smooth. Working in batches, drop several pieces of cauliflower into batter and stir to coat.
- Working in batches, fry battered cauliflower pieces in preheated oil until they rise to the top of the oil and float, 2 to 4 minutes. Carefully turn pieces over and continue frying until golden brown, about 2 minutes more.

GRANDMA'S CAULIFLOWER
This is a dish that sounds odd but has long been one of my faveorites. The grandma in question is my great grandmother who apparently came up with the recipe (and published in just about every church cookbook I have found) but my memories are of my nana making it for me every time I was at her place for an evening meal. I have tried this with low fat mayo and with splenda and it works just fine for me that way but I am going to give the original recipe.

Steps:
- Cut up cauliflower and cook until it is tender but still has a bite. Then drain very well and set aside.
- Fry bacon until crisp but not burnt, crumble and put into heated pan.
- Add sugar and mayonnaise and stir until the mixture turns smooth and nearly translucent.
- Add cauliflower to pan and gently mix until cauliflower is coated in mixture.
- Serve hot.

I have fond memories of eating Grandma's soup when I was a child. Now I give my wife a break in the kitchen by making this soup every once in a while. It tastes just like home!

- Place ham hocks, water and bouillon in a Dutch oven or soup kettle; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. Remove hocks; allow to cool. , Add potatoes, carrots, onions, cabbage and turnip to broth; cover and simmer for 1 hour or until vegetables are tender. Using a potato masher, coarsely mash vegetables. , Remove meat from bones; cut into bite-size pieces and add to soup. Stir in salt and pepper; heat through.

I first had this dish -- from ''French Provincial Cooking,'' by Elizabeth David -- at a dinner party that Jasper Conran gave years ago. I have been making this favorite of Madame Recamier and Franois Rene de Chateaubriand ever since.

Steps:
- Separate the cauliflower head into florets and steam until soft, about 15 minutes. Purée in a food processor.
- Heat chicken broth until boiling. Add cauliflower purée, bring to a boil, reduce heat and simmer for 15 minutes.
- Remove from the heat, stir in the milk and taste. If it is too salty, add a little more milk. Add the butter, and stir until it melts. Whisk egg yolks and 1/2 cup water in a bowl until blended. Pour through a sieve into the soup. Whisk soup until blended.
- Return soup to the stove and whisk over medium-low heat until it thickens into a cream. Taste and add salt if necessary.

- Heat the olive oil in a large dutch oven over medium heat. Cook the onion, celery, and carrot for 4-6 minutes, until the onion is translucent. While the savory vegetables are cooking, separate the cauliflower into florets, and chop the softer part of the stem.
- Add the garlic to the pot and stir. Cook for one minute more. After a minute or so, add the cauliflower and stir and cook for another minute.
- Add the tomatoes, broth, bay leaves, salt, pepper, and Parmesan rind. Bring to a boil, stir once, reduce heat to a simmer, cover and cook for 15 minutes. You should have enough broth to cover the cauliflower. If you don't add more.
- After 15 minutes, check that the vegetables are done. Add the pasta and cook for what the package says to cook the pasta for. Don't let it simmer away, it will get mushy.
