THANKSGIVING LEFTOVER EGG ROLLS
Tired of the same old turkey sandwich? Try these unique and fun egg rolls to use up the abundance of leftover turkey and fixings.

Steps:
- Combine turkey, mashed potatoes, green bean casserole, salt, and pepper in a bowl. Stir until evenly combined.
- Place an egg roll wrapper on a clean surface with one corner facing you, so it looks like a diamond. Place 3 tablespoons of filling onto the wrapper. Fold up bottom half of the wrapper and tightly fold in sides. Gently roll and seal with a couple of drops of water. Repeat with remaining wrappers and filling.
- Place gravy in a small saucepan and stir in cranberry sauce. Heat on low until ready to use.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Place 4 egg rolls in the hot oil and cook until golden brown, about 4 minutes. Remove egg rolls using tongs and place on a paper towel-lined plate. Repeat with remaining egg rolls. Serve gravy on the side for dipping.

GRANDMA'S ROSEMARY DINNER ROLLS

- In a small bowl, dissolve yeast in warm water. Place the flour, sugar, 2 teaspoons rosemary and salt in a food processor; pulse until blended. Add the warm milk, egg and yeast mixture; cover and pulse 10 times or until almost blended. , While processing, gradually add oil just until dough pulls away from sides and begins to form a ball. Process 2 minutes longer to knead dough (dough will be very soft)., Transfer dough to a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface; divide and shape into 12 balls. Roll each into a 15-in. rope. Starting at 1 end, loosely wrap dough around itself to form a coil. Tuck end under; pinch to seal., Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes., For egg wash, in a small bowl, whisk egg yolk and milk; brush over rolls. Sprinkle with remaining rosemary. Bake at 350° until golden brown, 18-22 minutes. Remove from pans to wire racks; serve warm.

LEFTOVER THANKSGIVING DINNER "CINNAMON" ROLLS
Running out of ideas of what to do with all those Thanksgiving leftovers? Turn them into savory "cinnamon" rolls. It's basically a portable Thanksgiving sandwich but with a fun twist!

- In a small bowl, combine the warm milk, yeast and about a teaspoon of the sugar. Set aside in a warm spot and let sit until foamy and frothy, about 10 minutes.
- In the bowl of a stand mixer, fitted with the dough hook, combine the flour, milk mixture, sugar, salt, eggs and butter and mix on medium until it comes together. Knead on high for about 8 to 10 minutes, until smooth and somewhat soft. Transfer the bowl to a well-oiled bowl and cover with plastic wrap and a damp kitchen towel. Let rest in a warm spot until doubled in size, about 1 1/2 hours.
- Punch dough down and then transfer the dough to a lightly floured work surface. Roll out into a large rectangle about 1/4-inch thick. Spread the dough with the mustard and cranberry sauce. Then sprinkle with mashed potatoes, stuffing, green beans, and turkey. Don't worry about covering the dough evenly with each ingredient. Just sprinkle them on in an even layer. Roll into a tight long, lengthwise, trim the ends, and then cut into 12 even pieces. Place on a well-greased 9 by 13-inch baking pan. Cover loosely with plastic wrap and a damp kitchen towel. Allow to rest in a warm spot until doubled in size, about 1 hour.
- Preheat oven to 375 degrees F.
- Bake the rolls until puffed and golden brown, about 30 to 35 minutes. Remove from oven and let cool slightly. Top with warmed gravy and sprinkle with chives. Serve immediately or let cool completely and then store in the fridge for up to 3 days.
