Grandmama's Bon Bons With Coconut image

Featuring chocolate, pecans, and coconut, these homemade bon bons are an irresistible bite-sized treat or gift to make for family and friends these holidays.

2 pounds confectioner's sugar
1+2/3 cup sweetened flaked coconut
2 cups chopped pecans
1 can sweetened condensed milk (14 ounces)
1/2 cup margarine or butter (melted)
1 package chocolate almond bark (for coating)

Steps:

  • In a large bowl, mix all ingredients except the almond bark together, either with your hands or an electric mixer.
  • Form bon bon dough into balls either with hands (for smaller ones) or cookie dough scoop (for great big gobby ones). Place on a cookie sheet and cover. Refrigerate for at least an hour.
  • Melt chocolate bark by heating in the microwave at 45-second intervals, stirring after each, until smooth and creamy. Dip bon bons into chocolate and place on wax paper to harden.
  • Store in refrigerator until ready to eat or gift.

2/3 cup confectioners' sugar
1/2 cup sweetened condensed milk
1/4 cup finely chopped almonds, toasted
2 tablespoons butter, softened
1/2 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening
Colored jimmies or coarse sugar, optional

Steps:

  • In a small bowl, combine the coconut, confectioners' sugar, milk, almonds, butter and vanilla. Cover and refrigerate for at least 2 hours. , Roll into 1-in. balls; place on waxed paper-lined pans. Refrigerate for at least 1 hour. , In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to waxed paper-lined pans. Sprinkle with jimmies or coarse sugar if desired. Refrigerate until firm.

Steps:

  • In a medium bowl, mix together butter, confectioners' sugar, and sweetened condensed milk. Mix in the coconut. Roll dough into 1 inch balls, and refrigerate until set, about 1 hour.
  • Melt chocolate and shortening over a double boiler, stirring occasionally until smooth. Remove from heat when melted, and stir to make sure the shortening is fully incorporated. Use toothpicks to hold the balls while dipping in the chocolate. Set on wax paper to dry.

I used to ask my grandma to make these for me for Christmas every year! Then my son asked me for them every year...Now as an adult, out his own, he makes it himself! :) Don't let the one ingredient fool you...it does call for mashed potatoes...adds moisture, you can't actually taste the potatoes when all is said and done.

3/4 c mashed potatoes
4 c coconut, flaked
4 c powdered sugar
12 oz semi sweet chocolate chips
1/2 cake *parafin wax, optional

Steps:

  • 1. Mix together potatoes, sugar and coconut. Place in refrigerator for 1/2 an hour. Shape into 1" balls, place on waxed paper lined cookie sheets. Freeze for 1/2 an hour. Melt chocolate with wax in double boiler. If you opt not to use the wax, I would add 2 Tablespoons of veg oil to the chocolate for smoother melting and dipping. Dip balls and place back on waxed paper. Allow to dry/harden...and Enjoy! Store in cool place, they freeze really well. *parafin wax - you can use this if you want, it provides a nicer, more glossy texture on the bonbon...don't melt so easily in your fingers...but you really don't need it.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

1/2 cup butter
1 (14 ounce) can sweetened condensed milk
7 cups powdered sugar
2 cups walnuts
1 (14 ounce) package flaked coconut
1 (12 ounce) package milk chocolate chips
1/2 cup paraffin wax

Steps:

  • Place butter and milk in a sauce pan on low until it melts and mix well together. Add in the powdered sugar, walnuts and coconut. Roll into teaspoon or tablespoon sized balls and cool for at least an hour.
  • Meanwhile, melt the chocolate chips and parafin wax in a double broiler. Then, use a two pronged dipping fork and dip the cooled coconut balls in the melted milk chocolate mixture. Place finished bon bons on waxed paper and cool in the fridge.

This frozen bonbon offers an exciting contrast between crisp dark chocolate and the icy coconut sorbet.

12 Nabisco Famous Chocolate Wafers
1/4 cup shredded unsweetened coconut
2 pints coconut sorbet
12 whole almonds
26 ounces semisweet or bittersweet chocolate, chopped
1 tablespoon vegetable shortening

Steps:

  • Set a wire rack over a baking pan. Arrange the wafers, top sides down, on rack, spaced evenly apart. Place 2 teaspoons shredded coconut in the center of each wafer. Using a 2-inch ice-cream scoop, scoop a ball of coconut sorbet onto each wafer. Place an almond on top of each scoop of sorbet. Transfer pan to freezer for 20 minutes.
  • In a double boiler, or a heat-proof bowl set over a pan of barely simmering water. Melt chocolate and shortening, stirring occasionally. Remove bowl from heat. Let cool slightly.
  • Remove baking pan from freezer. Generously ladle melted chocolate over the bonbons, covering entirely. Return the baking pan to the freezer for 30 minutes more or overnight. Serve.

4 cups vanilla candy melts or coating wafers (24 oz)
2 tablespoons shortening
1 bag (7 oz) flaked coconut (about 2 2/3 cups)

Steps:

  • Line cookie sheet with waxed paper. On cutting board, chop cheesecake. Place cheesecake pieces in large bowl; mix with spatula until crust and filling are well blended. With small cookie scoop, shape cheesecake into 1-inch balls; place on cookie sheet. Freeze until firm; keep frozen.
  • In medium microwavable bowl, microwave candy melts and shortening uncovered on Medium (50%) 2 minutes, then in 15-second increments, until melted; stir until smooth. In small bowl, place coconut.
  • Remove cheesecake balls from freezer a few at a time. Dip each cheesecake ball into melted candy to cover; tap off excess. Immediately roll cheesecake ball in coconut, pressing gently. Return to cookie sheet. Let stand until set. Store in refrigerator.
