4 tablespoons peanut butter
4 tablespoons honey
2 cups granola
2 ½ cups greek yogurt, 4 single-serving cups for different flavors
strawberry, for garnish
blueberry, for garnish
dark chocolate, chunks, for garnish

Steps:

  • Heat peanut butter and honey in microwave for approximately 30 seconds, or until melted.
  • In a medium sized bowl, pour melted peanut butter and honey over granola and stir to combine.
  • Spoon granola mix evenly into 12 lined muffin cups, pressing firmly into the bottom.
  • Top each cup with about 1.5 ounces (45g or ⅓ of a single-serving container) of yogurt.
  • Top each cup with strawberries, blueberries and dark chocolate chunks.
  • Cover tightly with foil and freeze for at least 2 hours.
  • Keep frozen and allow to thaw for a few minutes before eating. Wrap individually in foil for an easy on-the-go snack.

1 ½ cups rolled oats
¼ cup honey
1 teaspoon vanilla
1 teaspoon cinnamon
salt, to taste
greek yogurt
strawberry, sliced

kiwi
banana, sliced
dark chocolate chip

Steps:

  • Mash banana in a large bowl and then add in the oats, honey, vanilla, cinnamon, and a pinch of salt.
  • Fill a greased muffin tin with the granola mixture and use a spoon to form the crust.
  • Let chill for 1 hour.
  • Preheat oven to 350˚F (180˚C) and bake for 30 minutes. Let cool.
  • Add in Greek yogurt to each cup and fill with toppings.

These cute, portable granola cups filled with yogurt and fruit make a tasty breakfast or snack!

2 cups old-fashioned oats
½ cup wheat germ
¼ cup sliced almonds
¼ cup dried cranberries
2 tablespoons light butter
¼ cup honey
¼ cup molasses
2 tablespoons brown sugar
1 teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups fat free vanilla yogurt (I used Dannon light & fit)
assorted berries for topping

Steps:

  • In a large bowl combine the oats, wheat germ, almonds and cranberries and stir until thoroughly mixed and set aside.
  • In a small skillet, combine the butter, honey, molasses, brown sugar, cinnamon, ginger, cloves and salt and bring over medium heat. Stir and heat until ingredients are combined. Remove from heat and add vanilla. Stir to combine.
  • Pour the molasses mixture into the bowl with the oats and stir until the oats are completely coated. Place the bowl in the refrigerator and chill for 30 minutes.
  • Preheat the oven to 325. Lightly mist 12 cups in a muffin tin with cooking spray. Divide the granola mixture evenly among the muffin cups. Using your fingers, press the granola down into each cup and up the sides to from a cup. The mixture will be sticky so every few cups I rinsed my fingers in cold water to keep them from getting too sticky.
  • Bake the granola cups for 15-17 minutes. Remove from oven and allow the granola to cool completely before removing the cups from the muffin tin. The cups will firm while cooling. Once they are cooled, spoon in the filling of your choice. I filled mine with 3 tablespoons of fat free vanilla yogurt each and then topped them with berries.

1 1/2 cups old-fashioned rolled oats
1/2 cup pecans, coarsely chopped
1/2 cup hulled raw sunflower seeds
2 tablespoons honey
1 tablespoon extra-virgin olive oil
4 tablespoons maple syrup
Kosher salt
2 cups Greek yogurt
4 cups blueberries
12 to 18 sprigs fresh mint

Steps:

  • Preheat the oven to 350 degrees F. Spray the wells of a 12-cup shallow muffin tin with nonstick spray; set aside.
  • In a large bowl, stir the oats, pecans, sunflower seeds, honey, olive oil, 2 tablespoons of the maple syrup and a pinch of salt until completely combined. Press 2 heaping tablespoons in each well of the prepared muffin tin, pressing to go up the sides (if you have additional granola, use an additional muffin tin). Bake until golden and crisp, 15 to 18 minutes. Let cool completely, then remove the granola cups from the muffin tin.
  • In a medium bowl, whisk to combine the yogurt and remaining 2 tablespoons maple syrup. Fill each granola cup with about 2 tablespoons yogurt and top with the blueberries and a sprig of mint to serve.

  • Spray 6 muffin cups with cooking spray.
  • Whisk banana, honey, and almond extract together in a bowl until smooth. Whisk oats, cinnamon, and salt together in another bowl. Stir oat mixture into banana mixture until evenly mixed. Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Line 2 rimmed baking sheets with parchment paper.
