GOAT CHEESE WRAPPED IN VINE LEAVES

Goat Cheese Wrapped in Vine Leaves image

Citrusy, perfectly salty grape vine leaves awaken the rich flavors of soft goat cheese in these dolmas-inspired wraps. Widely enjoyed throughout the Middle East, dolmas are made by stuffing leaves or vegetables with a variety of fillings that vary by region.

Categories     appetizer

Time 1h15m

Yield 6 servings

Number Of Ingredients 5

18 grape vine leaves, rinsed and dried*
1 log soft, young goat cheese, cut into 6 rounds **
3 roasted red peppers, recipe follows
1 tablespoon olive oil
3 large red peppers

Steps:

  • Preheat oven to 400 degrees F.
  • Overlap 3 grape leaves, vein side facing up, to form a solid circle (see Cook's Note*). Place the goat cheese round in the center of the circle. Use 2 roasted pepper strips to wrap around the cheese. Carefully wrap the leaves snugly around the cheese. Repeat with remaining leaves, cheese and pepper strips.
  • Over high heat, cook the leaf bundles in olive oil for 1 minute on 1 side in an oven-safe skillet. Turn the bundles and cook for 1 minute more. Place the pan in the oven for approximately 3 minutes.
  • To serve, place vine leaf bundle in the center of a large plate. Open up the leaves and drizzle with olive oil. Serve with crackers or bread.
  • Preheat oven to 350 degrees F.
  • Place the red peppers on a baking sheet. Roast in the oven on the top rack for 35 to 40 minutes, turning occasionally, or until the skin is blistered and charred. Immediately transfer the hot peppers to a small bowl and cover tightly with plastic wrap. When the peppers are cool enough to handle, peel off the skin and remove the stem and seeds. Cut into 1-inch wide strips.

GRAPE LEAVES STUFFED WITH GOAT CHEESE AND COUSCOUS

Grape Leaves Stuffed with Goat Cheese and Couscous image

Grape leaves in brine can be found in the international-foods section of many supermarkets.

Provided by Martha Stewart

Yield Makes about 30

Number Of Ingredients 9

1 9-ounce jar of grape leaves
1/3 cup dry couscous
1 teaspoon ground cumin
Salt and freshly ground pepper
1 small tomato, seeded and cut into small dice
2 tablespoons finely chopped parsley
1 tablespoon olive oil, plus more for sealing and grilling stuffed grape leaves
1 tablespoon fresh lemon juice
2 7-ounce logs goat cheese, cut into 1/4-inch disks

Steps:

  • Rinse and separate grape leaves. Place in a large roasting pan and cover with boiling water. Let sit until water has cooled somewhat. Rinse in cold water and drain. Pat each leaf dry, clip off stem, and layer between paper towels. Set aside.
  • In a small saucepan, combine couscous, 1/3 cup boiling water, and cumin. Season with salt and pepper. Cover and let stand until couscous is soft and fluffy when stirred with a fork, about 5 minutes.
  • Transfer couscous to a medium bowl and add tomato, parsley, 1 tablespoon oil, and lemon juice. Toss together and add salt and pepper; the couscous should be slightly overseasoned.
  • Lay out 10 grape leaves at a time on a clean work surface. Place a goat-cheese disk 1 inch from each stem end. Mound a heaping teaspoon of couscous over goat cheese. Fold stem end over filling, then fold sides of leaf over. Dab edges with olive oil to help seal. Fold top of leaf over folded sides and dab with oil again. Place on a plate, folded side down, layered between waxed paper. (Leaves can be prepared up to this point in advance and stored, refrigerated, overnight.)
  • Heat grill or nonstick pan. Brush stuffed leaves with olive oil and place on grill or pan smooth side down. Grill or saute until browned, about 2 minutes. Turn carefully and continue cooking until cheese is soft and filling is heated through, about 2 minutes more. Serve immediately.

MY OWN FAMOUS STUFFED GRAPE LEAVES

My Own Famous Stuffed Grape Leaves image

These are grape leaves, stuffed with a tantalizing mixture of rice, fresh dill, mint and lemon. 'Yum' is the only one word to describe these. These can either be a main dish or an appetizer, depending on your appetite. Serve with good crusty bread and a Greek salad, if desired.

Provided by Patti Moschonas

Categories     Appetizers and Snacks     Fruit

Time 1h40m

Yield 12

Number Of Ingredients 9

2 cups uncooked long-grain white rice
1 large onion, chopped
½ cup chopped fresh dill
½ cup chopped fresh mint leaves
2 quarts chicken broth
¾ cup fresh lemon juice, divided
60 grape leaves, drained and rinsed
hot water as needed
1 cup olive oil

Steps:

  • In a large saucepan over medium-high heat, saute the rice, onion, dill, and mint for about 5 minutes, or until onion is soft. Pour in 1 quart of broth, reduce heat to low and simmer for another 10 to 15 minutes, or until rice is almost cooked. Stir in 1/2 of lemon juice and remove from heat.
  • Take one leaf, shiny side down, and place 1 teaspoon of the rice mixture at the bottom (stem) end of the leaf. Fold both sides of the leaf towards the center, roll up from the broad bottom to the top, and place into a 4-quart pot. Repeat with all leaves, leaving no gaps as leaves are placed in pot (to prevent from opening while cooking). Sprinkle with remaining lemon juice and with olive oil.
  • Pour chicken broth over all to cover grape leaves. Cover pot and simmer for about 1 hour (do not boil, because this will make the stuffing burst out of the leaves). Remove from heat, remove cover and let cool for 1/2 hour. Transfer to serving dish and serve.
