This is very quick to make, light, and very Greek. You could add some grilled chicken breast strips over top if you like. Enjoy!

1/2 cup chicken broth
1/4 cup kalamata olive, pitted and chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon fresh oregano, chopped
1 teaspoon parsley, chopped
4 ounces penne pasta
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, chopped
2 ounces feta cheese, crumbled
1 tablespoon fresh basil, chopped

Steps:

  • The sauce for this recipe is to be cooked quickly over a high flame so it is recommended that you have all ingredients preped and ready when you begin.
  • Start by placing the olive sauce ingredients into a bowl and set aside. Place pasta into a large pot of boiling salted water. (Penne generally takes 10-12 minutes to cook al dente).
  • When pasta is about 3-4 minutes from done, melt the olive oil and butter in a skillet over medium-high heat and brown the garlic. Add the olive sauce and let it simmer until pasta is ready.
  • Drain pasta well, return it to the pot and stir in 2/3 of the sauce. Place the pasta onto a serving plate and pour the rest of the sauce over top. Sprinkle with feta cheese and fresh basil.

1 package (16 ounces) elbow macaroni
1 pound ground beef
1 large onion, chopped
1 garlic clove, minced
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese
SAUCE:
1/4 cup butter
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
3 cups 2% milk
2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, water and seasonings. Cover and simmer for 10 minutes, stirring occasionally. , Drain macaroni and place in a large bowl. Stir in egg and cheese; set aside. , For sauce, in a large saucepan, melt butter; stir in flour and cinnamon until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until slightly thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to pan, stirring constantly. Stir in cheese. , In a greased 3-qt. baking dish, spread half of the macaroni mixture. Top with beef mixture and remaining macaroni mixture. Pour sauce over the top. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Let stand for 5 minutes before serving.

4 cups cubed cooked chicken breast
1 can (29 ounces) tomato sauce
1 can (14-1/2 ounces) no-salt-added diced tomatoes, drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1/4 cup thinly sliced red onion
1/4 cup chopped green pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
Optional: Chopped fresh oregano or fresh basil

Steps:

  • Cook pasta according to package directions; drain. In a large bowl, combine the pasta, chicken, tomato sauce, tomatoes, spinach, olives, onion, green pepper, basil and oregano. , Transfer to a 13x9-in. baking dish coated with cooking spray. Sprinkle with cheeses. Bake, uncovered, at 400° until heated through and cheese is melted. If desired, sprinkle with oregano or basil. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 400°. 1/4 cup olive oil
4 teaspoons minced garlic
1 pound uncooked medium shrimp, peeled, deveined
1 1/2 cups drained canned artichoke hearts, chopped
1 1/2 cups crumbled feta cheese
1/2 cup chopped seeded tomatoes
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
2 tablespoons finely chopped fresh oregano or 1 1/2 teaspoons dried
12 ounces angel hair pasta or linguine

Steps:

  • Heat oil in a large skillet over medium high heat. Add garlic and sauté 30 seconds. Add shrimp and sauté until almost cooked through, about 2 minutes. Add artichokes, feta, tomatoes, lemon juice, parsley and oregano and sauté until shrimp are cooked through, about 2 minutes. Season with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Transfer pasta to large bowl.
  • Add shrimp mixture to pasta and toss to coat. Season to taste with salt and pepper and serve.

I love shrimp and am always on the lookout for new ways to prepare it. If you need a recipe for the white sauce, I suggest using recipe #21301 as it's the exact recipe that I use in making white sauce. I suggest serving this with a Greek salad and bread.

12 small mushrooms
olive oil
32 medium shrimp, peeled and deveined
1 medium tomatoes, diced
3/4 teaspoon basil
1/4 teaspoon tarragon
1/4 teaspoon thyme
1/2 teaspoon lemon pepper seasoning
3/4 teaspoon all purpose Greek seasoning
4 green onions, slice (green tops only)
8 ounces white sauce (White Sauce (Cheesy or Not) Medium Sauce)
2 cups pasta, cooked (spaghetti, linguini or angel hair)
feta cheese, for garnish

Steps:

  • Saute mushrooms in a small amount of olive oil for 30 seconds.
  • Add the shrimp, tomatoes and seasonings.
  • Heat through until shrimp are done and turn pink.
  • Add the white sauce and green onion tops.
  • Pour over a bed of pasta and crumble feta cheese on top.

1 (16 ounce) package linguine
3 tablespoons olive oil
1 green pepper, cut into 1 square pieces
1 red pepper, cut into 1 square pieces
1 red onion, sliced into rings
1 can artichoke, drained and cut into quarters
1 cup cherry tomatoes, sliced in half
1/4 cup chicken broth (optional)
1 cup crumbled feta cheese
1 cup pitted kalamata olives or 1 cup black olives
1 tablespoon oregano
1/2 lemon
pasta, of choice

Steps:

  • Bring pot of lightly salted water to boil and add pasta.
  • Cook until al dente.
  • Meanwhile, in large frying pan, saute peppers and onion in olive oil for 3 minutes.
  • Add artichokes and cherry tomatoes.
  • Saute an additional 2 minutes.
  • Add chicken broth to pan and heat through.
  • Toss in feta cheese, olives and oregano.
  • Stir over low heat until cheese begins to melt.
  • Serve over hot pasta.
  • Squeeze lemon juice over top.

  • Combine feta, olives, onions and peppers in bowl.

  • Cover and stick in refrigerator at least 1 hour or up to 24 hours.
  • Cut baguette into 48 (1/4 inch-thick) slices.
  • Place in single layer in baking pans or on rack of broiler pan.

Though it can be made year round with canned tomatoes, it is sensational with fresh sweet ripe ones, so best prepared in summer. Serve it as a main course with rice or potatoes, or in small portions as an appetizer, taverna-style.

Extra-virgin olive oil
3 large shallots, diced, about 1 cup
4 garlic cloves, minced
Salt and pepper
2 pounds large ripe tomatoes
1/2 teaspoon crushed red pepper flakes
1 1/2 pounds large shrimp, peeled and deveined
4 ounces Greek feta cheese
1/2 teaspoon dried oregano
2 tablespoons roughly chopped mint

Steps:

  • Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.
  • Fill a saucepan with water and bring to a boil. Add whole tomatoes and cook for about 2 minutes, until skins loosen. Immediately plunge tomatoes in a bowl of cold water to cool, then drain. With a paring knife, core tomatoes and slip off skins. Cut tomatoes into thick wedges.
  • Heat oven to 400 degrees. Return skillet to stove over medium-high heat. Add tomato wedges and season with salt, pepper and red pepper flakes. Cook, stirring, until mixture is juicy and tomatoes have softened, about 10 minutes. Transfer mixture to a shallow earthenware baking dish.
  • Put shrimp in a mixing bowl. Add 1 tablespoon olive oil, season shrimp with salt and pepper and stir to coat. Arrange shrimp over tomato mixture in one layer. Crumble cheese over surface and sprinkle with oregano.
  • Bake for 10 to 12 minutes, until tomatoes are bubbling and cheese has browned slightly. Remove from oven and let dish rest for 5 minutes. Sprinkle with mint and serve.
