ROASTED GREEK-STYLE CHICKEN AND VEGETABLES

Roasted Greek-style chicken and vegetables image

Chicken breasts, artichoke hearts, grape tomatoes, and zucchini are seasoned with fresh lemon, dried oregano, chopped garlic, and olive oil and then roasted in the oven all at once on one pan. It really doesn't get much more convenient than that, and you can have a hearty dinner on the table ready to go in just 35 minutes. We love the combination of flavors, textures, and colors that this easy recipe provides. Turkey cutlets can also be used instead of chicken breasts if you want to mix things up a bit-just add them to the pan about 5 minutes into the cooking time because they can cook more quickly than the vegetable mixture.

Categories     Lunch,Dinner

Time 35m

Yield 4 servings

Number Of Ingredients 12

2 spray(s) Cooking spray
5 tsp Olive oil extra virgin, divided
3 medium clove(s) Garlic clove(s) chopped
1.5 tsp Dried oregano
1 Tbsp Fresh lemon juice
2 tsp Lemon zest divided
0.5 tsp Table salt or to taste
0.25 tsp Black pepper freshly ground, or to taste
1 large Uncooked zucchini sliced 1/4-inch thick
2 cup(s) Grape tomatoes halved
14 oz Canned artichoke hearts without oil drained well and halved
1 pound(s) Uncooked boneless skinless chicken breast(s)

Steps:

  • Preheat oven to 450ºF. Coat a large nonstick baking pan with cooking spray.
  • In a large bowl, combine 4 tsp oil, garlic, oregano, lemon juice, 1 tsp zest, salt, and pepper; add vegetables and toss to coat. Lift vegetables out of bowl with a slotted spoon, leaving some oil mixture in bowl. Place vegetables in an even layer on one side of prepared pan, leaving room for chicken. Add chicken to bowl and turn to coat; place on empty side of pan.
  • Roast until vegetables are tender and chicken is cooked through, stirring vegetables once, 15-20 minutes. Drizzle vegetables with remaining 1 tsp each oil and zest; toss to coat. Drizzle chicken with any pan juices.
  • Serving size: 3 oz chicken and 1 c vegetables

BRAISED CHICKEN WITH ARTICHOKES AND OLIVES

Braised Chicken With Artichokes and Olives image

Imbued with the classic Mediterranean flavors of artichokes, garlic, mint and olives, this braised chicken is complex and highly satisfying, with a white wine sauce brightened with lemon. Fresh artichokes have the most pronounced character and meatiest texture, but if you can't get them or don't want to go to the trouble of cleaning them, you can substitute frozen artichoke hearts (you'll need a 9- or 10-once package). Serve this with crusty bread for sauce-mopping.

Provided by Melissa Clark

Categories     one pot, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 15

1 1/2 lemons
3 medium artichokes, about 1 1/2 pounds
3 1/2 pounds bone-in chicken pieces
2 teaspoons kosher salt
2 teaspoons black pepper
2 tablespoons extra-virgin olive oil, more as needed
4 garlic cloves, smashed and peeled
1 1/2 cups cherry tomatoes, halved
Pinch red pepper flakes
3/4 cup dry white wine
1/3 cup pitted olives, halved (use black, green or a mix)
2 large rosemary branches
1 tablespoon unsalted butter
Grated Parmigiano-Reggiano, as needed
Chives or mint leaves, for garnish (optional)

Steps:

  • Squeeze the juice of 1 lemon into a large bowl of water. Discard the outer leaves of each artichoke. As you do so, and as you continue cleaning the artichokes, dip them into the lemon water to stop the cut sides from browning. Use a paring knife to peel the base and stems. Slice off the top third of each artichoke. Slice the artichokes in half lengthwise. Using a teaspoon or grapefruit spoon, scoop out the hairy chokes inside, pulling out any prickly purple leaves as well. Slice each half into three pieces. Put trimmed artichoke pieces in lemon water until needed.
  • Heat oven to 375 degrees. Pat the chicken dry with paper towel and season with salt and pepper. In a large (12-inch) ovenproof skillet with a lid, heat oil over medium-high heat. Add chicken pieces and sear in batches until well browned, 5 to 7 minutes per side. Transfer chicken to a plate.
  • Add artichokes and garlic to pan, adding more oil if needed, and cook, turning occasionally, until golden brown, about 5 minutes. Stir in tomatoes and red pepper flakes; cook 1 minute more.
  • Pour in wine and stir in olives, rosemary branches and grated zest of 1/2 lemon. (Do not discard after zesting.) Return chicken to pan. Bring liquid to a simmer.
  • Cover pan and transfer to oven. Cook until chicken is tender, 30 to 35 minutes. (Check white meat after 25 minutes and remove from oven if done.) Transfer chicken to a plate and place skillet over medium-high heat. Simmer until pan juices thicken and become saucelike, about 3 to 5 minutes. Whisk in butter.
  • Return chicken to pan and sprinkle with cheese. Adjust oven heat to broil and place pan in the oven until cheese is melted and golden, 2 to 3 minutes. (Watch carefully to see that it does not burn.) Squeeze juice of remaining lemon half over pan and serve garnished with chives or mint if you like.

GREEK ISLAND CHICKEN WITH MARINATED ARTICHOKES

Greek Island Chicken With Marinated Artichokes image

A tasty chicken dish - with a flavoursome blend of herbs, spices, vegetables and honey - which is nonetheless still reasonably low both in calories and in fat. Adapted from Paige Morehouse's recipe which appears in Prevention Healthy Cooking's 'Eat Up, Slim Down: Tried-and-true recipes and tips from real weight-loss winners' by Jane Kirby and David Joachim. Because the recipe contains several vegetables, it really is a stand-alone dish. When I've made it, I've added a bit more garlic (personal preference). The original recipe had 2 cloves of garlic; and I've included more like 8 ounces of mushrooms (again, personal preference). The original recipe had 3 ounces of mushrooms. I've always used kalamata olives when making this dish.

Number Of Ingredients 16

1 tablespoon olive oil

1 onion, chopped
4 garlic cloves, finely chopped
8 ounces mushrooms
1 cup white wine
8 ounces bottled marinated artichoke hearts
1 ounce sun-dried tomato, dry-packed coarsely chopped
1 1/2 ounces Greek olives, pitted, halved

  • Reduce the heat to low, cover and cook for 15 minutes.
  • Uncover and cook for 5 minutes, or until the sauce thickens slightly and a thermometer inserted in the thickest part of the breasts registers 70ºC/169ºF and the juices run clear.

GREEK CHICKEN WITH ARTICHOKE HEARTS

Greek Chicken with Artichoke Hearts image

Another recipe I made when I was learning to cook and trying to impress the boyfriend who is now my DH! I really like this dish a lot, and add lots more lemon, pepper, garlic, and oregano, but that's my taste! I've also added parboiled, quartered potatoes at the start, and really like the artichoke hearts and potatoes together. Adapted from Betty Croker's New International Cookbook.

Provided by Lizzie-Babette

Categories     Chicken

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 1/2-3 lbs chicken, cut into pieces or 2 1/2-3 lbs your favorite mix of bone-in skin-on chicken pieces
1/2 cup fruity olive oil
1/4-1/2 cup lemon juice (I love it really lemony, but you may prefer less lemon to start...can always add more!)
2 1/2 teaspoons dried oregano
1 teaspoon salt
1/2-1 teaspoon pepper (I use fresh ground black)
1 -4 clove chopped garlic, to taste (I use way more)
1 can artichoke heart, quartered (NOT marinated)
lemon slice

Steps:

  • Preheat oven to 375 degrees fahrenheit.
  • Rinse chicken pieces and pat dry.
  • Put chicken in 13 x 9 x 2 inch baking dish.
  • Whisk together remaining ingredients (except artichoke hearts and lemon slices) and pour evenly over chicken.
  • Cook uncovered, spooning juices over chicken occasionally, for about 30 minutes.
  • Turn chicken over and cook for 10 minutes more.
  • Remove the pan from the oven, scatter artichoke heart among the chicken, and spoon cooking juices over them.
  • Continue to cook for about 20 minutes more, basting once or twice more, until chicken is done (juices run clear when the thickest part of the largest piece is pierced).
  • Remove pan from oven, garnish with lemon slices and a final quick grind of pepper, if you like, let rest about 5 minutes and serve.
