Steps:
- To prepare this spanakorizo recipe (Greek spinach and rice), heat the olive oil in a large skillet over medium high heat. Add the onions, spring onions and leek and sauté for 3-4 minutes, until translucent.
- Add the spinach and cook stirring for a few minutes, until wilted. Stir in the tomatoes, the tomato paste, two cups of hot water, the vegetable stock, the rice and season. Reduce heat to low and simmer, covered, for about 20-25 minutes, until the rice is tender.
- While the Spanakorizo is simmering away, stir it every so often and check if the pan appears to be getting dry. If it is, add some more hot water and stir.
- To know when its ready, take a grain of rice out of the skillet and pinch it with your fingernails. If its white on the inside it needs a little bit longer. When it's close to ready, season with salt and pepper to taste. Finally, finish the spanakorizo with fresh chopped dill and cook for a a couple more minutes.
- Serve this traditional Greek spinach and rice (spanakorizo) with a squeeze of a lemon and top with crumbled feta. Enjoy!

SPINACH RICE WITH FETA
Steps:
- Thaw the spinach by either letting it sit out at room temperature for an hour, or by microwaving for 1-2 minutes. Squeeze the excess moisture out of the spinach (it doesn't have to be extremely dry for this recipe, just make sure it's not pooling water).
- Add the minced garlic and butter to a medium sauce pot. Sauté the garlic in the butter over medium heat for 1-2 minutes.
- Add the spinach, rice, salt, lemon juice, and 2.5 cups water to the sauce pot. Stir briefly to combine.
- Place a lid on the pot, turn the heat up to medium-high, and allow the water to come up to a boil. Once it reaches a full boil, turn the heat down to low, and let the rice simmer for 15 minutes. After 15 minutes, turn the heat off and let the pot rest, without removing the lid, for an additional five minutes.
- Fluff the rice with a fork, gently folding the spinach back into the rice (it tends to float to the top during cooking). Finall, sprinkle the feta over top and fold to combine again. Serve hot!

- Over medium heat in a saucepan, combine the rice, broth, and water, and bring to a boil.
- Cover, reduce the heat to medium low, and let simmer for 15 to 18 minutes or until the rice has absorbed the liquid; transfer to a serving bowl and keep warm.
- In a skillet over medium heat, melt the olive oil and butter together, then add the onion, mushrooms, and garlic for 5 to 7 minutes, then stir in the lemon juice and oregano.
- Add the spinach and pepper, then sprinkle with the sherry and toss until the spinach is slightly wilted; remove from heat.
- Add the crumbled feta and toss until the cheese begins to melt.
- Add to the cooked rice, toss well, and serve immediately.

- In a deep pan heat up 1 tablespoon of olive oil;
- Add onion and simmer for about 10 minutes on low heat;
- Add thyme and leaks and simmer for another 5 minutes;
- Add half a cup of water and broth base, then simmer for another 5 minutes;
- Add spinach and cook until wilted;
- Add rice and let it cook for about 2 minutes;
- Add half a cup of water and stir;
- Keep adding half a cup of water at the time once the rice absorbs it;
- It can take about 20 -25 minutes until rice is fully cooked;
- Adjust seasoning with salt and pepper.
- At the end add dill and mix well;
- Take off the burner and cover it up; Add lemon juice and olive oil;
- Let it sit for about 5-10 minutes to have all the liquid absorbed;
- When serving, sprinkle more lemon juice, olive oil and top it with Feta Cheese. Enjoy!

- Heat oil in a saucepan over medium-high heat. Add rice and stir until every grain is coated in oil and you hear it start to sizzle. Stir in 2 teaspoons salt, pepper, cayenne, and green onions and cook for about 1 minute.
- Add dill, mint, spinach, and 2 3/4 cups water. Mix until thoroughly combined and bring to a simmer.
- Cover, reduce heat to medium-low, and cook until rice is tender, about 25 minutes. If rice is not quite ready at 25 minutes, add a splash of water, cover, and continue to cook until it is ready.
- Uncover and stir well. Cover again and let sit for 5 minutes. Taste and adjust salt if necessary.
- Divide rice mixture evenly into six bowls. Squeeze ½ lemon over each serving, then top with feta cheese, pickled onions, chili flakes, and a drizzle of olive oil.

EASY GREEK SPINACH AND RICE DISH (SPANAKORIZO)

- Heat ¼ cup of the olive oil in a large pot. Add the onions, leeks (if using) and scallions and sauté them over medium heat for about 8-10 minutes or until they are soft.
- Stir in the rice and cook for 1 to 2 minutes until it is well-coated with olive oil. Next, add the spinach in batches and stir often to cook down.
- To the pot, add 4 cups of hot water (or vegetable stock) and season with salt and pepper. Cook over low heat, partially covered, until the rice is tender but fully cooked, about 20 minutes.
- About five minutes before it is done, stir in the fresh dill and parsley. Check the consistency and add some more hot water if necessary. The finished dish should not be dry, but rather slightly brothy.
- Stir in the lemon juice and remove from the heat. Taste and adjust the seasoning if necessary. Drizzle with the remaining ¼ cup of olive oil and let it sit, covered with a clean kitchen towel, for about two to three minutes. At that point the rice will have absorbed most of the liquid in the pot.
- Serve it warm or at room temperature with some hearty bread, Greek Feta cheese, or, Greek yogurt on the side.
GREEK RICE WITH SPINACH, FETA AND BLACK OLIVES
A delicious, simple, Paula Wolfert recipe. Serve with lots of crusty bread. You can make things easy on yourself by getting the bags of ready-cleaned spinach.

- Wash the spinach and tender stems until the water runs clean; drain.
- If leaves are large and crinkly, sprinkle lightly with salt and mix well.
- Let stand in a colander 15 minutes; rinse and squeeze out excess moisture.
- Shred the spinach to make about 3 cups.
- Heat 3 tablespoons of the olive oil in a 10-inch straight-sided skillet.
- Add the scallions, onions, a pinch of salt, and 1/4 cup water and cook, covered, over medium-low heat for 10 minutes.
- When the water evaporates, slowly let the onions turn golden, stirring occasionally.
- Add 1 cup water, the reduced tomato purée, and rice.
- Cover and cook for 10 minutes.
- Spread the spinach and dill over the rice, cover, and cook 10 minutes longer.
- Remove from heat, mix, then place a double thickness of paper toweling over the rice, cover again, and let stand until cool.
- Adjust the seasoning with black pepper and salt and drizzle with the remaining tablespoon olive oil.

SARAH'S FETA RICE PILAF
Rice and orzo pasta merge with the flavors of onion and garlic to create this versatile side dish. Bulgarian feta gives the dish a decadent creaminess while spinach adds beautiful color. You can get Bulgarian feta cheese at most international grocery stores. Bulgarian feta is creamier than the Greek version which tends to be very dry.
