- In a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator 8 hours or overnight.
- Preheat grill for high heat.
- Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear. Smaller pieces will not take as long.

This has real fresh, tangy flavor. If you don't have Greek seasoning on hand, just add a mix of dried organo, onion powder, and garlic powder.

- Preheat oven to 400 degrees.
- Cut 2 lemons into 12 slices; sprinkle with 1 t. seasoning. With fingers, loosen skin from chicken breasts. Arrange 3 lemon slices under skin of each breast; smooth skin over lemons. Place in large roasting pan.
- Cut remaining lemons into edges. Place lemon wedges and onion around chicken. Sprinkle with salt, pepper and remaining seasoning; add olives.
- Roast until juices run clear when chicken is pierced with fork, about 45 minutes. Transfer to serving platter. Drizzle with pan juices. Let stand 10 minutes.
- Just before serving, sprinkle with mint. Garnish with mint sprigs.

- Cut the chicken breast into 1-2" chunks. Place them in an airtight container and add the greek seasoning, lemon juice, and 1 tbsp of olive oil. Mix to evenly coat chicken and let rest in the refrigerator for 15 minutes.
- Heat the remaining oil in a large skillet over high heat. Add the chicken spreading in a single layer. Let it cook without stirring for 3-5 minutes or until it gets a nice brown sear on the side touching the pan. Flip the chicken over and cook an additional 2-4 minutes or until the chicken is cooked through (165˚F internal temp.)
- Serve hot and enjoy!

- Cut each chicken breast into 4-5 long pieces down the length.
- In a medium bowl, combine 1 tablespoon of olive oil, vinegar lemon juice, garlic, salt, oregano, onion powder, pepper, dill and thyme. Mix well, then cover and chill for 30 minutes or up to 6 hours.
- Heat a little more oil in a large frying pan or skillet over medium heat.
