Pesto-Rubbed Baked Salmon with Smashed Cucumber and Green Apple Salad image

Unsalted butter, softened, as needed
Kosher salt and freshly ground black pepper
Six 6-ounce skinless salmon fillets, preferably wild
3 tablespoons prepared pesto
2 tablespoons Dijon mustard
1 teaspoon fresh lemon juice
1 English cucumber, peeled
Kosher salt and freshly ground black pepper
1/4 cup finely diced pitted Medjool dates (about 6)
2 green apples, cored and cut into 1/4-inch dice
1/2 cup toasted pine nuts
3 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh mint
Juice of 1 lemon

Steps:

  • For the salmon: Preheat the oven to 300 degrees F.
  • Brush a baking dish with a thin coat of softened butter and sprinkle a little salt and pepper over the surface. Set the salmon fillets upright (flat-side down) on the baking dish, brush a little soft butter over each fillet and sprinkle them with salt and pepper.
  • In a small bowl, whisk the pesto, mustard and lemon juice together and season it with salt and pepper. Spoon the mixture evenly over the salmon, covering the top surface only. Bake until the desired doneness, about 14 minutes for medium rare for 1 1/2-inch-thick fillets (cook longer for thicker pieces).
  • For the salad: Meanwhile, put the cucumber into a clean towel on a cutting board and smash it with the heel of your hand. Unwrap the cucumber and slice it crosswise into 1/2-inch pieces; transfer them to a mixing bowl and sprinkle a little salt over them. Add the dates and apples and stir to mix. Add the pine nuts, olive oil, mint and lemon juice; season with salt and pepper, and toss until evenly combined.
  • Serve the salmon fillets on warm plates with the salad on the side.

Absolutely luscious, and so-o-o-o healthy. It has been languishing in my file. What a gem! I believe it came from the "Georgia EMC Magazine". Fall is a great time to use up all the basil before the frost.

2 cups basil leaves
2 large granny smith apples
3/4 cup grated parmesan cheese
1/2-3/4 cup walnuts
1 garlic clove
1/2 jalapeno
salt
2 tablespoons walnut oil (it REALLY adds) (optional)
1/4 cup extra virgin olive oil

Steps:

  • Peel, core and chunk apples.
  • Combine everything BUT the oils in the food processor and blend till nearly smooth.
  • GRADUALLY add the oils, one after the other, with the food processor running to blend till smooth.
  • Unless closely covered, the top will darken during storage but that's only a cosmetic problem.
  • Enjoy as a dip, sandwich spread, or by the spoonful for a snack.

80g basil

150ml olive oil
2 garlic cloves

Steps:

  • Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, parmesan, olive oil and garlic cloves. Whizz until smooth, then season to taste.

Bright Green Pesto and Its Many Uses image

I've been making pesto forever and have never been able to keep it bright green. It has such promise, such flavor, and I know that the pasta or whatever else I use it in will taste wonderful. But I've always been frustrated by how quickly the basil oxidizes and the color goes from bright green to drab. So I decided to try blanching the leaves very briefly to see if that would solve the problem and voilà! It did. You need to blanch the basil for only five seconds, and you don't want to blanch it for more than 10. Doing this leaches out a wee bit of the basil's vivid flavor, but not enough to change that of the pesto significantly. The texture and color are wonderful, and the pesto will keep for several days in the refrigerator (but it's best to wait until you're ready to use the pesto before adding the garlic and cheese).

2 cups tightly packed, fresh basil leaves
Salt to taste
2 tablespoons lightly toasted pine nuts or untoasted chopped walnuts
1/3 cup extra-virgin olive oil
2 garlic cloves, halved, green shoots removed
1/3 to 1/2 cup freshly grated Parmesan

Steps:

  • Bring a medium-size saucepan full of water to a boil while you rinse basil leaves. Fill a bowl with ice water and place it next to the saucepan with a skimmer close by (a Chinese skimmer is good for this). When water comes to a boil, salt generously and add basil leaves. Push them down into the water with the back of a skimmer to submerge, count to five, then remove immediately with skimmer and transfer to ice water. Drain and squeeze out excess water.
  • Place pine nuts or walnuts in a food processor and process until finely ground. Add blanched basil and kosher salt to taste (I use 1/4 to 1/2 teaspoon) and process until finely chopped. With machine running, slowly add olive oil and continue to process for a full minute, or until the mix is reduced to a fine purée. Transfer to a bowl. You should have about 1/2 cup of purée .
  • When you are ready to use the pesto, purée garlic in a mortar and pestle, or put through a garlic press, and stir into the pesto (or if using a mortar and pestle, add the puréed basil to the mashed garlic in mortar and work garlic and pesto together with pestle). Add Parmesan and stir in. The pesto will condense when you add the cheese, so even though you've added a half-cup of cheese to the purée, you will end up with about 2/3 cup of pesto. Follow the instructions in recipes for thinning out with water.

350g pasta (we used linguine)
½ small head of broccoli, cut into florets
large handful of basil
1 large handful of spinach wilted in boiling water, cooled and excess water squeezed out
4 tbsp pine nuts
1 garlic clove, grated
½ lemon, zested and juiced
6 tbsp extra virgin olive oil
large handful of frozen peas, set aside in boiled water until heated through
3 tbsp grated parmesan or vegetarian hard cheese
3 tbsp soft cheese

Steps:

  • Cook the pasta following pack instructions. Meanwhile, cook the broccoli for 4 mins in boiling salted water. Drain, then put in a food processor along with the basil, spinach and pine nuts. Pulse until combined.
  • Stir in the garlic, lemon zest and juice, olive oil, peas, parmesan and soft cheese, and season to taste.
  • Drain the pasta, reserving a little of the cooking water. Return the pasta to the pan and add the pesto along with a splash of water to loosen. Toss together, check the seasoning and serve.

  • Preheat oven to 350°. Toast pine nuts on a rimmed baking sheet (or quarter sheet pan), tossing once halfway through, until golden brown, 5–7 minutes. Transfer to a food processor and let cool. Add cheese and garlic and pulse until finely ground, about 1 minute. Add basil and place the top back on. With the motor running, add oil in a slow and steady stream until pesto is mostly smooth, with just a few flecks of green, about 1 minute. Season with salt. Do Ahead: Pesto can be made 1 day ahead. Top with ½" oil to prevent browning. Store in a covered container (an extra drizzle of oil on top will help prevent oxidation) and chill.
  • If you want to use this with pasta, cook 12 oz. dried pasta (we prefer long pasta for pesto) in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving ½ cup pasta cooking liquid.
  • Place pesto and 2 Tbsp. unsalted butter, cut into pieces, in a large bowl. Add pasta and ¼ cup pasta cooking liquid. Using tongs, toss vigorously, adding more pasta cooking liquid if needed, until pasta is glossy and well coated with sauce. Season with salt.
