1/4 cup slivered almonds, toasted

Steps:

  • Place the beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender., Meanwhile, in a large skillet, cook garlic in oil for 1 minute. Drain beans. Add the beans, almonds and pepper to skillet; toss to coat.

1-1/2 lb. haricots verts (thin French green beans) or green beans, trimmed
1 oz. (2 Tbs.) unsalted butter
2 Tbs. pure olive oil
1/2 cup slivered almonds
1 tsp. minced or pressed garlic (1 medium clove)
1 Tbs. fresh lemon juice (from 1 small lemon)
Kosher salt and freshly ground black pepper

Steps:

  • Bring a 6- to 7-quart pot of water to a boil. Add the beans and cook until bright green and barely crisp-tender, about 2 minutes. Drain in a colander and rinse under cold running water until completely cool. Spread the beans on a clean kitchen towel and dry thoroughly. In a 12-inch skillet, heat the butter and oil over medium-low heat until the butter melts and the foam subsides. Add the almonds and cook, stirring occasionally, until golden-brown all over, about 3 minutes. Using a slotted spoon, transfer the almonds to a plate. Reduce the heat to low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 30 seconds. Add the beans, increase the heat to medium, and cook, tossing occasionally, until crisp-tender and lightly browned in some places, 5 to 8 minutes. Stir in the lemon juice and season to taste with salt and pepper. Transfer to a serving platter, sprinkle with the almonds, and serve. 1 -1 1/2 lb fresh green beans
1/3 cup butter
1 -2 tablespoon fresh minced garlic
1/8 teaspoon crushed red pepper flakes
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
1/4-1/3 cup toasted sliced almonds

Steps:

  • Steam or boil the green beans until tender but still crisp; plunge into ice water or very cold water then drain well.
  • Place the beans onto a clean tea towel then pat dry using paper towels.
  • Place the beans into a heat proof bowl.
  • Melt the butter in a saucepan over medium heat; add in fresh garlic and chili flakes and stir 2 minutes (do not allow the butter to brown).
  • Mix in the brown sugar, soy sauce and white vinegar; bring to a boil mixing constantly.
  • Remove from heat then pour over the beans toss to coat.
  • Mix in the almonds.

3 heads garlic, minced
1 tablespoon olive oil
salt and freshly ground pepper to taste
1 pound fresh green beans, trimmed
1 teaspoon butter
⅓ cup sliced almonds
1 tablespoon olive oil
1 pinch cayenne pepper, or more to taste
2 ounces crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
  • Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
  • Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
  • Increase oven temperature to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
  • Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
  • Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7

2 small shallots , very finely sliced
3 garlic cloves , thinly sliced
squeeze lemon
2 tbsp toasted flaked almonds

Steps:

  • Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.
  • Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.
