GREEN FAIRY OYSTERS
What to serve with absinthe? The liquor once known as the Green Fairy is as tricky to pair with food as it is beautiful to look at. Here is a recipe based on Daniel Boulud's almost improbably verdant "super green" spinach served at Bar Boulud. I placed the oysters, raw, in shells that were heated in the oven, and cloaked them with the hot spinach, making the oysters deliciously, delicately warm.

Steps:
- Heat oven to 400 degrees. Remove oysters from shells and set aside. Place shells on a baking sheet and place in oven. Have a bowl of ice and water ready.
- Bring a large pot of salted water to a boil. Add 1/3 of the spinach, then cook a minute or two, until spinach has wilted; remove and place in ice water. Stir. Meanwhile, heat 1 1/2 tablespoons butter in a skillet. Cook until nut-brown.
- When spinach has chilled, a few minutes, drain and place in a blender with browned butter. Blend until puréed, adding up to 1/3 cup water as needed for blender to process spinach, scraping sides of container a few times.
- Heat remaining butter in skillet. Add shallots and sauté until soft. Add remaining spinach and sauté over medium-high heat until spinach is wilted and most of liquid in pan has evaporated. Fold in spinach purée, season with salt and pepper and remove from heat.
- Arrange hot shells on a warm platter and put an oyster in each. Briefly reheat spinach and spread a scant tablespoonful on top of each oyster, just covering it. Serve at once.

DADDY MACK'S OYSTERS
This is concoction was developed by my buddy and I during a block party. We had people standing in line. Be sure to use leather gloves when shucking hot oysters. Sounds like a pain, but well worth the work.

Steps:
- In a medium bowl, stir together the butter, cilantro, garlic, shallot, 2 tablespoons of lime juice, and sriracha sauce. Spoon onto waxed paper and roll into a log. Place into the freezer until set.
- Preheat a grill for high heat.
- Place whole oysters on the hot grill for 3 to 5 minutes, or until almost done. Remove the top shell from the oysters, without spilling any liqueur, and return them to the grill. Slice the butter log into 1/4 inch slices, and place a slice on top of each oyster. Grill until the butter melts, then serve on a bed of rock salt for presentation.

Steps:
- Drain oysters. Beat eggs in a medium bowl to blend. Add oysters and turn to coat completely. Pour half of saltine crumbs into a 13x9x2" baking dish. Working in batches, lift oysters with a slotted spoon, allowing excess egg to drain back into bowl, and transfer to baking dish. Scatter remaining crumbs over oysters and toss to coat. Cover dish and chill for 2-3 hours.
- Line a plate with paper towels. Pour oil into a medium heavy skillet to a depth of 1/2". Prop deep-fry thermometer in skillet so bulb is submerged. Heat oil over medium heat to 375°F. Working in batches, fry oysters, turning once, until coating is crisp and deep golden brown, about 1 minute per batch. Transfer to paper towels; season with salt.
FIRE-ROASTED GARLICKY OYSTERS
There's nothing like cooking over a charcoal fire, and it's essential for getting that fire-roasted flavor. When spooning the butter sauce over the oysters during grilling, some of it will hit the hot coals and cause it to flame up. Don't worry--you want that to happen. It'll give the oysters that charred taste you're aiming for.

Steps:
- Preheat a grill to high heat.
- Combine the butter, garlic, the juice from the lemons and a few pinches of salt and pepper in a medium saucepan over medium heat. Cook until the butter melts. Stir together the parsley, Parmesan and Romano in a medium bowl.
- Arrange the oyster shells on the grill grate. Spoon the butter mixture over the oysters. Add the bread to the grill cut-side down and cook until grill marks appear, 30 seconds to 1 minute. Remove the bread from the grill. Cover the grill with the lid and cook until the oysters begin to reduce in size, 3 to 4 minutes.
- Spoon the parsley mixture over each oyster, cover the grill and cook until the cheese is melted and the oysters are cooked to desired doneness, 30 seconds to 1 minute longer. Remove the oysters to a serving platter. Serve immediately with the bread.
TRADITIONAL GREEN FAIRY
Steps:
- Pour the absinthe into a rocks glass. Lay an absinthe spoon across the rim of the glass and set the sugar cube atop the spoon.
- Slowly pour the water over the sugar cube, allowing the sugar to dissolve into the glass.
- Stir lightly with the absinthe spoon. Serve without ice, neat.

- Boil 4 cups water in pot and add oysters for 10-15 seconds .
- Remove with slotten spoon to paper towels to drain.
- Blend cornstarch with 4 Tbs water and add oyster and soy sauce.
- Heat oil in wok, add wine, oysters, green onion& ginger.
- Stir fry 15 seconds.
- Add cornstarch mixture and stir fry 1 minute.
- Enjoy.

- Beat egg with Worcestershire sauce.
- In another bowl combine bread crumbs with spices.
- Cut shucked oysters into bite size pieces. Dip in egg then breading and place into pan. Turn after 5-10 minutes, then brown other side. Drain on tea towel or unbleached, recycled paper towel.
- Serve as is, with tartar sauce, or on a bun with lettuce, and thinly sliced onion.
