Time 50m

Yield 6 servings

Number Of Ingredients 13

This puffy soufflé is filled with chopped green garlic, chives and plenty of Gruyère cheese.
5 tablespoons butter, more for pan
1 tablespoon grated Parmesan
2 fat bulbs green garlic, root and green parts trimmed, outer layer removed
1/4 cup flour
2 cups milk
2 sprigs thyme
3/4 teaspoon kosher salt plus a pinch
1/4 teaspoon ground black pepper
1/8 teaspoon grated nutmeg
4 egg yolks and 6 egg whites
2/3 cup grated Gruyère cheese
1/4 cup chopped chives

Steps:

  • Preheat oven to 400 degrees. Butter a 2-quart gratin dish and sprinkle bottom and sides with Parmesan. Using a sharp knife or food processor, mince garlic.
  • Melt butter in a saucepan and let cook for 1 minute. Add flour and cook, whisking, until mixture is pale golden, about 5 minutes. Whisk in the milk and thyme sprigs, and continue to cook, whisking constantly, until mixture is thick and smooth, about 2 minutes longer.
  • Turn off heat and whisk in salt, pepper and nutmeg. Transfer to a large bowl and whisk in egg yolks, one at a time. Whisk in minced garlic, cheese and chives.
  • In a mixer, whip egg whites with a pinch of salt until they hold soft peaks. Using a spatula, fold a third of the whites into yolk mixture to lighten it, then fold in remaining whites, taking care not to overmix. As you fold, pluck out and discard thyme sprigs.
  • Spread mixture in prepared pan and smooth top. Bake until golden brown and puffed, 20 to 25 minutes.

GRUYèRE AND CHIVE SOUFFLé

Gruyère and Chive Soufflé image

This soufflé is as classic as they come, with beaten egg whites folded into a rich, cheese laden béchamel for flavor and stability. Gruyère is the traditional cheese used for soufflé, but a good aged Cheddar would also work nicely. This makes a great lunch or brunch dish. This recipe is part of The New Essentials of French Cooking, a guide to definitive dishes every modern cook should master. Buy the book.

Provided by Melissa Clark

Categories     brunch, dinner, lunch, custards and puddings, main course, side dish

Time 50m

Yield 6 servings

Number Of Ingredients 12

3 tablespoons/42 grams unsalted butter, plus more for coating dish
5 tablespoons/25 grams finely grated Parmesan cheese
1 cup whole milk
3 tablespoons all-purpose flour
1/2 teaspoon paprika
1/2 teaspoon fine sea salt
Pinch ground nutmeg
4 large egg yolks
5 large egg whites
1/2 teaspoon cream of tartar
1 cup/115 grams coarsely grated Gruyère cheese
2 tablespoons chopped chives

Steps:

  • Remove wire racks from oven and place a baking sheet directly on oven floor. Heat oven to 400 degrees. Generously butter a 1 1/2-quart soufflé dish. Coat bottom and sides with 3 tablespoons/15 grams Parmesan, tapping out any excess.
  • In a small pot, heat milk until steaming. Meanwhile, melt butter in a large skillet over medium heat. Whisk in flour and cook until the mixture foams, about 3 minutes. Remove from heat and whisk in warm milk. Return to heat and cook until thickened, whisking constantly, about 3 minutes.
  • Remove from heat and whisk in paprika, salt and nutmeg. Whisk in egg yolks one at a time, blending fully after each addition. Transfer flour and yolk mixture to a large bowl.
  • Using an electric mixer, beat egg whites and cream of tartar at medium speed until the mixture holds stiff peaks.
  • Whisk a quarter of the whites into the lukewarm yolk mixture to lighten. Gently fold in remaining whites in 2 additions while gradually sprinkling in Gruyère cheese, remaining 2 tablespoons Parmesan and the chives. Transfer batter to prepared dish. Rub your thumb around the inside edge of the dish to create a 1/4-inch or so space between the dish and the soufflé mixture.
  • Transfer dish to baking sheet in the oven and reduce oven temperature to 375 degrees. Bake until soufflé is puffed and golden brown on top and center barely moves when dish is shaken gently, about 30 minutes. (Do not open oven door during first 20 minutes.) Bake it a little less for a runnier soufflé and a little more for a firmer soufflé. Serve immediately.

Categories     Cheese     Egg     Garlic     Side     Bake     Vegetarian     Goat Cheese     Parmesan     Spinach     Boil     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield 4 servings

Number Of Ingredients 14

The Garlic Infusion
3/4 to 1 cup minced green garlic, about 5 small heads
1 cup cream or half-and-half
1 thyme sprig
The Soufflé
4 tablespoons unsalted butter, plus extra for the dish
1/2 cup freshly grated Parmesan cheese
1 bunch spinach, stems removed, or 12 to 16 ounces loose, young spinach leaves
4 tablespoons all-purpose flour
1 1/3 cups milk
sea salt and freshly ground pepper
1 scant cup (about 4 ounces) mild goat cheese
4 egg yolks
6 egg whites

Steps:

  • 1. Preheat the oven to 375°F. Butter a 6-cup soufflé dish or gratin dish and dust it with a few tablespoons of the Parmesan cheese.
  • 2. Put the garlic, cream, and thyme in a small saucepan over low heat. Bring slowly to a boil, then turn off the heat, cover, and let steep for 15 minutes.
  • 3. Wash the spinach well, then wilt it in a skillet with the water clinging to the leaves. Tip it into a colander, press out the moisture, then finely chop.
  • 4. Melt the 4 tablespoons butter in a saucepan, stir in the flour, and cook for 1 minute while stirring. Whisk in the milk and stir until it thickens. Add 1 teaspoon salt, then stir in the goat cheese and remaining Parmesan. Turn off the heat and stir in the egg yolks, spinach, and the garlic-cream mixture. Season with pepper.
  • 5. Whisk the egg whites with a pinch of salt until they form firm peaks that are just a bit on the soft side. Fold the whites and base together. Scrape the batter into the prepared dish and bake until golden brown and set, about 25 minutes for a gratin dish, 30 minutes if using a soufflé dish.

This dish is a favorite of ours from Santa Fe. A little B&B called Adobe Abode had this recipe on their website, so we thought we'd try it for breakfast. The dish is very easy to make and serve. The humble potato reaches new heights when it's whipped into a souffle that's seasoned with garlic and chives.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Number Of Ingredients 14

2 tablespoons bread crumbs
8 medium Yukon Gold potatoes, (3 pounds), peeled, cut into eighths
2 medium cloves garlic, peeled, thinly sliced
2 bay leaves
2 teaspoons salt
1/2 teaspoon baking soda
1 cup nonfat buttermilk
1 1/4 cups skim milk
3 tablespoons snipped chives
2 teaspoons sugar
1/8 teaspoon freshly ground black pepper
4 large egg whites
1/8 teaspoon cream of tartar
Vegetable oil cooking spray

Steps:

  • Heat oven to 425 degrees. Spray a 2 1/2-quart souffle dish with vegetable-oil cooking spray, coat dish with bread crumbs, and lightly tap to rid dish of the excess. Place the dish in the freezer to chill.
  • Place potatoes, garlic, bay leaves, and 1 teaspoon salt in a small stockpot. Fill with cold water to cover potatoes, and bring to a boil over high heat. Reduce heat to medium high, and cook until potatoes are very soft, 12 to 15 minutes. Remove stockpot from heat, and drain potatoes, making sure to remove any excess water. Discard bay leaves.
  • Pass potatoes through a potato ricer or food mill into a large bowl. Stir baking soda into buttermilk, and mix into potatoes with milk, chives, sugar, remaining teaspoon salt, and pepper. Mixture should be thick and soupy, not stiff. Set aside.
  • Place egg whites and cream of tartar in an electric mixer, and beat on medium speed until soft peaks form, 2 to 3 minutes. Fold egg whites into the potato mixture. Remove the souffle dish from the freezer, and pour in the potato mixture. Transfer to the oven, and bake until souffle has rise above the dish and the top is browned, about 45 minutes. Remove souffle from the oven, and serve immediately.

CHIVES VS. GREEN ONIONS: WHAT'S THE DIFFERENCE? | ALLRECIPES
2020-10-27 Uses. Green onions are mild enough to eat raw, so they're often served fresh as a garnish or in salads. They do withstand heat a bit better than chives, so you'll sometimes find them in stir-frys or other cooked dishes. Still, they're often added toward the end of the cooking process so they stay nice and crisp.

WHAT ARE GARLIC CHIVES AND HOW ARE THEY USED? - THE SPRUCE EATS
2021-03-17 Standard garlic chives ( gau choy ): Garlic chives look similar to chives, but their leaves are broad and flat instead of hollow. Their garlicky flavor enhances cooked dishes, particularly ones where the food is slowly simmered in a sauce, such as red-cooked stews or soups, or in stuffing. Use them also to add flavor to stir-fries.
