GREEN GODDESS ROASTED CHICKEN

Green Goddess Roasted Chicken image

Green Goddess dressing - a creamy, piquant blend of herbs, garlic and anchovies - is good to eat on salad. And it's wonderful as a dipping sauce for vegetables. But its best use may be as a marinade for roast chicken. The mild chicken absorbs all the zippy flavors of the dressing, to emerge from the oven fragrant and golden, flecked with green. To intensify the herbal flavor, some of the green goddess mixture is set aside to use as a sauce. You could even pour a little on a salad or some vegetables on the side, and enjoy the best of all the Green Goddess variations in one savory bite.

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

1 1/2 cups buttermilk or plain yogurt
1 cup packed basil leaves
1/4 cup packed chives
2 garlic cloves, peeled
2 anchovy fillets (optional)
1 scallion, white and green parts
Finely grated zest and juice of 1 lime
2 teaspoons coarse kosher salt
1 teaspoon black pepper
1 (4- to 5-pound) chicken, halved through the breast and back bones, patted dry with paper towels
1 to 2 tablespoons extra-virgin olive oil, for drizzling

Steps:

  • In a blender, purée buttermilk, basil, chives, garlic, anchovies (if using), scallion, lime zest and juice, salt and pepper until smooth.
  • Put chicken halves in a bowl or large heavy-duty resealable plastic bag and cover with three-quarters of the Green Goddess marinade. (Save the rest to serve as a sauce.) Refrigerate for at least 6 hours or up to overnight.
  • Heat oven to 500 degrees. Remove chicken from the marinade, shaking off as much liquid as possible, and lay the halves on a rimmed baking sheet. (Discard the used marinade.) Pat chicken tops dry with paper towels and drizzle with oil. Roast until cooked through, about 30 to 45 minutes. Let rest for 10 minutes before serving, with some of the reserved sauce if you like.

GREEN GODDESS CHICKEN LEGS

Green Goddess Chicken Legs image

Although it seems a bit retro, Green Goddess dressing is experiencing a well-deserved revival as chefs and home cooks discover its charms. It makes a wonderful marinade for chicken legs. Who doesn't love a recipe with four ingredients?

Provided by tshull777

Categories     Chicken

Time 8h55m

Yield 4 serving(s)

Number Of Ingredients 4

2 lbs skin-on chicken legs
2 cups green goddess salad dressing
1/4 cup chopped fresh parsley
1 tablespoon paprika

Steps:

  • Place the chicken legs in a large resealable plastic bag. Combine the Green Goddess dressing as well as the parsley and paprika. Pour over the chicken legs. Refrigerate for 2 to 8 hours.
  • When ready to cook, set up your grill for indirect medium high 350 degree heat, and preheat, for 10 to 15 minutes. Or you can smoke them, I like to use maple wood for poultry or mesquite is good too.
  • Drain the chicken legs. Arrange the legs directly on the grill grate and grill indirectly, turning once, for 40 to 50 minutes, or until the legs are golden brown and cooked through. Then grill over direct heat for 5 minutes to add a little "char" flavor, moving them around cause you don't want them to burn. Serve at once. (Can also be served cold, but the skin will lose its crispiness.).

Buttermilk Roast Chicken image

Just put this to marinate in the Fridge for dinner tomorrow night. Sounded good. So think I will serve with some oven roasted potatoes and steamed veggies. Found recipe on Foodgawker.

Provided by Donna Farley

Categories     Roasts

Time 35m

Number Of Ingredients 10

2 c buttermilk
5 clove garlic peeled and smashed
1 Tbsp sea salt
1 Tbsp sugar
1-1/2 tsp paprika, plus extra for sprinkling ( i used smoked)
1+ Tbsp lots of freshly crushed peppercorns (i like pepper so added more
2-1/2-3 lb chicken parts i used thighs and legs
drizzle of olive oil
3 tsp duck fat (optional) think i will use bacon drippings
chopped coriander (optional) think i will use broad leaf parsley

Steps:

  • 1. In a bowl with the buttermilk, whisk it with the garlic, salt, sugar, paprika and lots of freshly ground black pepper. Place all the chicken parts in a gallon-sized freezer bag (or lidded container) and pour the buttermilk brine over them. Swish it around so that all parts are covered. Refrigerate for at least 2 but preferably 24 and up to 48 hours (they tried an extra 24 hours without incident).
  • 2. When ready to cook preheat oven to 425 degrees.
  • 3. Heat up a cast iron skillet on medium high heat.
  • 4. Add in the goose/duck fat if using, drizzle over some olive oil. (I used bacon drippings).
  • 5. Remove chicken from buttermilk brine, shake off excess and arrange skin side up on the skillet. Turn off heat. (If using a baking dish, just arrange the chicken in it skin side up.)
  • 6. Drizzle lightly with olive oil, then sprinkle with additional paprika and sea salt to taste.
  • 7. Roast for 20 minutes if using cast iron skillet or 25-30 minutes if using baking dish, until brown and done.
  • 8. Garnish with herbs of choice if using, serve immediately with pan drippings over some potatoes or greens.

  • Gather the ingredients, and make the marinade by adding the onion, cilantro, basil, mint, fish sauce, garlic, lime zest, black pepper, Aleppo pepper, and apple juice to a high powered blender.
  • Purée until smooth. Taste for seasoning and add salt to taste. This is a marinade, so feel free to be a bit more heavy-handed with the salt than you normally would if using this as a sauce.
  • Place the chicken in a gallon-sized food-safe zipper bag, and pour the marinade over it. Rub the chicken through the bag to make sure the marinade is well distributed. Seal the bag and marinate the chicken overnight in the fridge for at least one hour and up to one day. About an hour before you’re ready to grill, take the chicken out of the fridge.
  • No grill? No problem—you can roast the chicken in the oven by roasting on a wire rack for 35-45 minutes at 400°F. If you’re using thighs instead of drumsticks, start with the chicken skin-side down, and flip it skin-side up at the 20 minute mark.
