Toss a cereal mix that's loaded with flavor: mango, cranberry, cashew, sesame, honey and green tea. Yum!

6 cups Fiber One™ Honey Clusters® cereal
1 cup cashew halves
1 cup sesame sticks
1/4 cup packed brown sugar
1/2 cup strong brewed green tea (2 bags per 1/2 cup hot water)
2 tablespoons honey
2 tablespoons canola or vegetable oil
1/2 cup chopped dried mangoes
1/2 cup sweetened dried cranberries

Steps:

  • Heat oven to 250°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix cereal, cashews and sesame sticks.
  • In 1-quart saucepan, mix brown sugar, tea, honey and oil. Cook over medium heat 3 to 4 minutes, stirring constantly, until brown sugar is melted. Pour mixture over cereal; toss to coat well. Spread mixture in pan.
  • Bake 30 minutes. Stir well. Bake 10 minutes longer. Stir in mangoes and cranberries. Cool completely in pan, about 1 hour. Store in tightly covered container.

A green smoothie is the perfect breakfast for someone on the go, but you can enjoy all the same fruits, vegetables and nutrients at your leisure in a salad inspired by the drink. There's more vitamin C, too, since it can be depleted by the heat and agitation of your blender. Pair the salad with a mug of green tea, and you'll have an antioxidant-rich breakfast!

1 small head kale, stemmed and torn into bite-size pieces, or 8 cups baby kale
2 limes
Kosher salt
2 tablespoons virgin or extra-virgin coconut oil
1/2 cup plain yogurt
1 tablespoon apple cider vinegar
1 tablespoon ground flaxseeds, optional
1 teaspoon honey
1 heart of romaine, cut into bite-size pieces
2 Granny Smith apples, cut into bite-size pieces
1 cup green grapes, halved lengthwise
1/2 cup of your favorite granola
1/2 cup loosely packed fresh parsley leaves

Steps:

  • Put the kale in a large bowl, add the juice of 1 lime and a large pinch of salt, and rub the juice and salt into the kale with your hands. Let sit in the refrigerator overnight to tenderize.
  • Melt the coconut oil in a microwave-safe small bowl in the microwave in 30-second increments, stirring in between. Whisk the oil with the yogurt, 1/2 the zest and all the juice of the remaining lime, 2 tablespoons water, vinegar, flaxseeds if using, honey and 1/2 teaspoon salt in a small bowl.
  • Add the romaine, apples, grapes, granola and parsley to the bowl of kale. Toss with the dressing to combine. Taste and adjust the seasoning with salt if needed. Divide among 4 serving bowls, and serve.

Occasionally, I have trouble finding sesame sticks around here and will substitute a cup of Fiber One Original for an even higher fiber, lower calorie treat. Works well either way. 1 serving = 1/2 cup. Cooling time included in cooking time.

  • Heat oven to 300°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix cereal, cashews and pecans.
  • In 1-quart saucepan, heat brown sugar, tea and honey over medium heat 3 to 4 minutes, stirring constantly, until brown sugar is melted. Pour over cereal mixture; toss until well coated. Spread in pan.
  • Bake 45 minutes, stirring well every 15 minutes. Bake 10 to 15 minutes longer or until crisp and glazed. Stir in mangoes and cranberries. Cool completely, about 15 minutes. (Mixture will crisp as it cools.) Store tightly covered at room temperature.
