Blend spinach, rocket and watercress with coconut milk, king prawns and noodles to make this speedy midweek meal. Whip it up in just 20 minutes

1 tbsp vegetable oil
2cm chunk ginger , peeled and roughly chopped
1 garlic clove , chopped
1 green chilli , chopped
½ small pack coriander , stalks and leaves separated, stalks chopped
130g (any or a mix of) spinach , rocket and watercress
400ml can coconut milk
180g raw king prawns
150g straight to wok noodles (we used rice noodles or use dried and cook for 2 mins less than the cooking time)
½ lime , juiced

Steps:

  • Heat the oil in large saucepan over a medium heat. Add the ginger, garlic, chilli and coriander stalks and fry with a pinch of salt until softened, about 3 mins. Add the greens and most of the coriander leaves, stir until wilted, then tip the contents of the pan into a blender with the coconut milk and 150-200ml water. Blitz until smooth and bright green. Or, if you have a stick blender, use it to blitz all the ingredients in the pan.
  • Tip the sauce back into the pan, season and bring to the boil. Add the prawns, noodles and the lime juice and cook for 4-6 mins until the prawns have turned pink - by this time the noodles should be perfect. Ladle into two bowls and top with the remaining coriander.

½ lb prawn
1 teaspoon salt
½ teaspoon pepper
2 cloves garlic
1 green chili
⅔ cup peas
3 tablespoons thai green curry paste
9 oz noodle, cooked
lime, to serve

Steps:

  • Fry the prawns with salt and pepper until they've just turned pink. Take out and set aside.
  • In the same pan, fry the garlic and green chili for a few minutes before stirring in the peas and Thai green curry paste.
  • Add the prawns and noodles and mix together for another couple of minutes.
  • Serve with a little lime juice squeezed over.
  • Enjoy!

2 serrano chiles, 1 coarsely chopped, 1 thinly sliced
1 (3-inch) piece ginger, peeled, thinly sliced
2 lemongrass stalks, bottom third only, tough outer layers removed, thinly sliced
2 garlic cloves, smashed
1 tablespoon fish sauce
1 tablespoon light brown sugar
1 (5.4-ounce) can coconut cream
3 cups cilantro leaves with tender stems
3 cups basil leaves, plus more for serving
2 tablespoons virgin coconut oil or vegetable oil
36 littleneck clams (about 4 pounds), scrubbed
8 ounces rice stick noodles
1/2 lime
Kosher salt

Steps:

  • Purée chopped chile, ginger, lemongrass, garlic, fish sauce, brown sugar, and 3 cups water in a blender until smooth. Transfer curry to a small bowl. Reserve blender (no need to clean).
  • Purée coconut cream, cilantro, 3 cups basil, and 1/4 cup ice water in blender until very smooth; set herb purée aside.
  • Heat oil in a large saucepan or small pot over medium-high. Add clams, cover, and cook until clams open, 5-7 minutes. Uncover and transfer opened clams to a medium bowl, reserving cooking liquid in saucepan. If any clams are still closed, cover and cook a few minutes longer, then add to bowl with others; discard any clams that refuse to open.
  • Add curry base to saucepan and bring to a boil. Reduce heat and simmer 10 minutes to let flavors meld.
  • Meanwhile, cook noodles according to package directions. Drain and rinse under cold water. Divide among bowls.
  • Using a slotted spoon, transfer clams to noodle bowls. Pour any accumulated clam-cooking liquid into curry mixture and stir in herb purée; bring to a boil. Immediately remove from heat and squeeze in juice from lime. Taste and season with salt if needed. Ladle curry over clams and noodles. Top with sliced chile and basil leaves.

1 cup chopped shallot
2 stalks fresh lemongrass (remove outer layer, thinly slice lower 6 inches of each stalk)
2 large garlic cloves
1 tablespoon chopped peeled fresh ginger
1 tablespoon finely chopped fresh cilantro stem
1 -2 tablespoon thai green curry paste
1 1/2 teaspoons sugar
3/4 teaspoon salt
1/2 teaspoon turmeric powder
1/4 cup water
1/4 cup vegetable oil
2 tablespoons vegetable oil
1 (13 ounce) can coconut milk
1 3/4 cups chicken broth
1 (14 ounce) package wide rice noodles
1 1/2 lbs large shrimp

Steps:

  • Puree shallots, lemongrass, garlic, ginger and cilantro stems in blender with curry paste, sugar, salt, turmeric powder, and water until as smooth as possible (about 1 minute).
  • Heat oil in a wide heavy pot over moderate heat until hot but not smoking, then add cook curry paste mixture, stirring frequently, until it just begins to stick to bottom of pot (8 to 10 minutes).
  • Add coconut milk and broth and simmer, uncovered, stirring occasionally, until reduced to about 3 2/3 cups (8 to 10 minutes).
  • While sauce simmers, cook noodles in a pot of boiling salted water, uncovered, stirring occasionally, until tender (4 to 6 minutes).
  • Drain in a colander and rinse under cold water. Drain noodles well and divide among 4 large bowls.
  • Add shrimp to sauce and simmer, stirring, until just cooked through. Remove from heat and ladle over noodles. Serve and enjoy!

1/2 pound fresh spinach, washed and soaking in a bowl of water
1 pound extra-large shrimp (about 15), deveined, and halved lengthwise
1 large egg white
2 tablespoons cornstarch
1 teaspoon coarse salt
1/2 cup vegetable oil, plus 2 tablespoons
1/2 red bell pepper, seeded and ribs removed, cut into 1-inch pieces
1 carrot, peeled and cut crosswise into 1/4-inch-thick slices
1 4-ounce can sliced water chestnuts, drained
1 6-ounce can straw mushrooms, drained
2 tablespoons potato starch
1 tablespoon finely chopped fresh garlic
1 tablespoon thinly sliced scallions, white and light-green parts only
1 teaspoon fresh ginger, peeled and finely chopped
1/4 green chile pepper, such as jalapeno, roughly chopped
2 tablespoons low-sodium chicken stock, canned
1 tablespoon unseasoned rice wine
1/4 pound cashews
1 teaspoon toasted sesame oil
1 pound fresh Chinese wheat noodles (a little thicker than spaghetti)

Steps:

  • In a blender, puree spinach with water still clinging to leaves, adding more water from bowl, if necessary. Transfer puree to a large glass measuring cup; cover with plastic wrap, and refrigerate overnight.
  • Puree will separate overnight; pour off reserved liquid, and discard.
  • Combine in a medium bowl shrimp, spinach puree, egg white, cornstarch, and 1/2 teaspoon salt; mix until well incorporated.
  • Bring a large pot of water to a boil. Fit a large bowl with a strainer; set aside. Heat a wok over medium-high heat. Add 1/2 cup oil, and swirl to coat wok. When oil is very hot, add shrimp; stir-fry for 1 minute. Add peppers, carrots, water chestnuts, and mushrooms; stir-fry for 30 seconds. Drain in prepared strainer; set aside.
  • In a small bowl, stir to combine potato starch and 2 tablespoons water; set aside. Heat wok again over medium-high heat; add remaining 2 tablespoons oil, and swirl to coat. Add garlic, scallions, ginger, and chile. Stir-fry until fragrant. Stir in potato starch mixture, chicken stock, rice wine, and 1/2 teaspoon salt. Add drained shrimp mixture and cashews; cook until thickened, about 1 minute. Remove from heat. Drizzle with sesame oil.
  • Meanwhile, add salt and noodles to boiling water. Cook until tender, about 1 minute. Drain, and transfer to a platter. Top with shrimp mixture; serve immediately.
