"CHEESEBURGER" QUESADILLAS



Deciding between burgers or Mexican? Why not have both, with this inventive play on a fast food favorite?

8 ounces Pure Farmland® Simply Seasoned Plant-Based Protein Starters
2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons Worcestershire sauce
Cooking spray
Salt and pepper
2 (10 inch) flour tortillas
2 cups shredded Cheddar cheese, divided
2 tablespoons Sliced dill pickles
⅓ cup mayonnaise
⅓ cup ketchup
2 tablespoons pickle juice
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
Shredded lettuce
Sliced cherry tomatoes

Steps:

  • For the Quesadillas: Heat oil in a medium saute pan over medium-high heat. Add protein starters and cook until browned and cooked through, about 5 minutes. Remove and set aside.
  • To the same pan, add onion and cook until translucent, about 5 minutes more. Add reserved protein starters back to the pan, add Worcestershire sauce, mix to combine, and set aside.
  • Wipe out the pan, coat with nonstick spray, and heat over medium heat. Add 1 tortilla to pan. Top half the tortilla with 1/2 cup cheese and 1/2 of the cooked protein.
  • Top with pickle slices (if desired) and another 1/2 cup cheese. Fold in half and cook until cheese is melted and the quesadilla is golden brown on one side, about 2 minutes. Repeat with second tortilla and remaining ingredients.
  • For the Special Sauce: Mix all ingredients in a small bowl and season to taste.
  • Cut quesadillas into pieces and serve with lettuce, tomatoes, and sauce.

1 cup ketchup
1/3 cup prepared mustard
4 bacon strips, cooked and crumbled
2 tablespoons Worcestershire sauce
2/3 cup mayonnaise
2 tablespoons 2% milk
2 tablespoons dill pickle relish
1/4 teaspoon pepper
8 flour tortillas (8 inches)
1 cup shredded cheddar cheese
Optional toppings: Shredded lettuce and chopped tomatoes

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

1 pound ground beef, cooked and drained
2 tablespoons finely diced red onion
1 1/2 tablespoons ketchup
1 tablespoon yellow mustard
1 1/2 tablespoons dill pickle relish
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (10-inch) flour tortillas
4 slices American cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat a grill over medium heat. Combine the ground beef, onion, ketchup, mustard, relish, salt and pepper in a medium-size bowl. Place the tortillas on a clean work surface. Spread half of meat mixture on half of each tortilla, leaving about a 1/2-inch border. Top the beef with 2 slices of American cheese and 1/2 cup cheddar. Fold the empty side of each tortilla over the filled side. Grill for 1 to 2 minutes on each side, or until the cheese has melted and light grill marks appear. Cut into wedges before serving. Tip: I like to use 3 (5 ounce) Bobby Chez Smashed Burgers instead of ground beef because they're such a great quality. Cook and crumble, as directed.

4 flour tortillas (6 inch)

1 Tbsp. HEINZ Yellow Mustard
4 lettuce leaves
1 small tomato, cut into 4 slices

Steps:

  • Heat grill to medium heat.
  • Mix meat and Worcestershire sauce just until blended; shape into 4 half moon-shaped 4-inch patties. Grill 5 to 6 min. on each side or until done (160ºF). Remove from grill.
  • Place 2 cheese pieces on half of each tortilla; top with burger. Fold tortillas in half; grill 2 min. on each side or until cheese is melted.
  • Fill quesadillas with remaining ingredients before serving.

Burritoville, a local joint down by Southeast University here, specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

1 teaspoon butter
½ small yellow onion, chopped
2 pounds ground beef
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper

2 cups shredded Colby cheese
4 teaspoons ketchup, or to taste
4 teaspoons yellow mustard, or to taste

Steps:

  • Heat butter in a saucepan over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add ground beef, Worcestershire sauce, salt, black pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. Remove from heat, drain liquid from beef, and let sit for 2 minutes.
  • Heat a griddle or flat pan over medium heat and spray with cooking spray.
  • Place 1 tortilla on the hot griddle, top with some of the Colby cheese, 1/4 of the beef mixture, 1 teaspoon ketchup, 1 teaspoon mustard, and 1 teaspoon relish. Top with more Colby cheese and 1 tortilla. Flatten the quesadilla with your hand.

1 pound ground beef
2 teaspoons canola oil
1 cup mayonnaise
1/3 cup salsa
4 flour tortillas (12 inches)
4 slices pepper jack or cheddar cheese
4 tostada shells

Steps:

  • Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers; cook until well browned and a thermometer reads at least 160°, about 1 minute. Repeat with remaining beef. Remove from skillet; wipe skillet clean., Combine mayonnaise and salsa; reserve half for serving. Spread remaining mixture over tortillas. 1 1/4 cups shredded sharp cheddar cheese (about 4-1/2 oz.)
1 cup shredded monterey jack cheese (about 4 oz.)
6 flour tortillas (6-8 inches)
4 scallions, cut diagonally into thin slices

Steps:

  • Combine cheeses. Lightly butter sheet of aluminum foil 3-4 inches larger than tortillas. Place tortilla on middle of foil; sprinkle one-thired of the cheese over tortilla, then one-third of the scallions. Top with second tortilla and press lightly together. Fold foil loosely over edge of tortillas, leaving most of the top exposed. Repeat with remaining tortillas, cheese, and scallions.
  • When grill is waqrming and before it is hot enough to grill meat, place 1 or 2 foil packages, foil side down, on grill. (They can also be grilled under the broiler. Broil, foil side down, 6 inches from heat until cheese melts, about 4 minutes.) Grill until cheese melts, about 4 minutes. dlip packages and grill until top is lightly toasted, 1-2 minutes.
  • Immediately cut each quesadilla into 6 wedges and serve hot. Grill remaining quesadilas.

40 inches flour tortillas
1 (19 ounce) can kidney beans, rinsed and drained
1 cup salsa
4 green onions, chopped
1/4 cup green olives, chopped
2 tablespoons fresh coriander or 2 tablespoons parsley, chopped
1 1/3 cups reduced-fat extra sharp cheddar cheese or 1 1/3 cups extra-sharp cheddar cheese, shredded

Steps:

  • In a bowl, mash beans along with 1/2 cup of the salsa with a potato masher.
  • Spread mixture evenly over the 4 tortillas leaving a 1/2 inch border.
  • In this order sprinkle mixture with onions, olives, coriander and, finally, cheese.
  • Fold tortillas over and press to seal.

1/2 pound ground beef
4 strips of bacon, cooked & crumbled
1/2 cup onion, diced
1 teaspoon garlic paste or 2 teaspoons minced garlic
1 {10 ounce} can of Ro*tel tomatoes & chilies any heat {we prefer mild}
8" or 10" tortillas
Butter
4 cups of cheese, shredded, any flavor
Ketchup {optional}
Mustard {optional}
Pickles {optional}

Steps:

  • In a large skillet, add ground beef, cooked bacon, onion, garlic and Ro*tel. Cook on medium heat until meat is cooked through, onions are translucent and most of the moisture is cooked off. {We don't want soggy quesadillas!} While meat is cooking, butter one side of each tortilla. Place tortilla in a large skillet or griddle butter side down. Layer with cheese then ground beef mixture then more cheese. Don't be shy with the cheese! Place second buttered tortilla on top of cheese butter side UP. Cook quesadillas for approximately 4 minutes on each side over medium heat. You don't want to cook too fast or the cheese wont melt. And you don't want to cook too slow or the cheese will never melt! Medium heat should do it. Once tortilla turns a golden color on the bottom, flip it and cook additional 3 - 4 minutes on other side. If you aren't sure how to flip it because it's so big, place a plate face down onto your quesadilla. Then using a spatula scoop up the quesadilla onto the plate then flip plate over so it's in the correct position and slide quesadilla off. This will ensure no spillage of yummy insides! Once done, use a knife or pizza cutter to cut into 6 pieces. Serve with ketchup, mustard & pickles!
