- Light grill. In a food processor, pulse the butter with the tarragon, hot sauce, salt and pepper until blended. Transfer the tarragon butter to a sheet of plastic wrap and roll into a 2 inch thick log. Refrigerate the butter until slightly firm, about 15 minutes. Slice butter into 36 pats.
- Place oysters on the hot grill, flat side up. Cover the grill and cook until the oysters open, about 5 minutes. Using tongs, transfer the oysters to a platter, trying to keep the liqour inside. Quickly remove the top shells and loosen the oysters from the bottom shells. Top each oyster with a pat of tarragon butter and return oysters to the grill. Cover the grill and cook until the butter is mostly melted and the oysters are hot, about 1 minute. Serve right away.

GRILLED WHITEFISH WITH LEMON-TARRAGON SAUCE

Steps:
- Boil clam juice in heavy small saucepan until reduced to 2 tablespoons, about 5 minutes. Transfer to blender. Add fresh lemon juice and tarragon leaves. Blend mixture until tarragon is finely chopped. With machine running, gradually add 3/4 cup oil and blend well. Season sauce to taste with salt and pepper.
- Position rack 6 inches from boiler. Preheat broiler. Brush fish with 2 tablespoons oil; season with salt and pepper. Place skin side down on heavy large baking sheet. Broil until opaque in center without turning, about 6 minutes.
- Transfer whitefish to plates. Drizzle sauce over and serve.
GRILLED SNAPPER WITH ORANGE-TARRAGON BUTTER
Cooking Light. August 2009. The recipe only uses 2 tablespoons of the orange-tarragon butter. Use the rest over grilled meats or vegetables.

- Prepare grill to medium-high heat.
- Make the Orange-tarragon butter. Combine butter, chopped tarragon, orange rind, and orange juice in a small bowl.
- Place butter mixture on a long sheet of plastic wrap, and roll into a 3-inch log, covering completely. Freeze for 10 minutes or until firm.
- Brush oil evenly over fish. Sprinkle fish with salt, paprika, and pepper. Place fish on grill rack coated with cooking spray; grill 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
- Cut 2 tablespoons of the butter into 4 equal portions; place one portion on top of each fillet.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cut lobster tails lengthwise with poultry shears. Cut open claws to allow sauce to reach the meat.
- Combine butter, lemon juice, onion, parsley, garlic, tarragon, and hot sauce in a bowl. Slather meat with sauce and place face-down on the preheated grill.
- Cook until lobster begins to char, 5 to 6 minutes. Flip and continue to grill until meat is opaque and firm, 5 to 6 minutes more.
