This is a recipe that was demonstrated and sampled at the Pensacola Seafood Festival this year. The creator is Irv Miller from Jackson's. Prep time does not include the time to get your grill ready.

30 ounces salmon, skin and pin bones removed (6 5-oz portions)
olive oil
salt
pepper
6 tablespoons creole mustard
6 tablespoons honey
6 tablespoons corn syrup
3 tablespoons fresh ginger, grated
2 tablespoons lemon juice
1 tablespoon fresh dill, chopped

Steps:

  • Salmon:.
  • Heat your grill to medium-high heat. Lightly coat your salmon with a little olive oil and lightly season with salt and pepper. Start cooking your salmon with the inner side down. Grill over medium-high heat for 2 minutes, then rotate 45 degrees and sear for 2 more minutes. (To create a crosshatch pattern). Flip fillets and finish grilling. After 2 minutes turn fillets 45 degrees, then grill 2 minutes more until they are medium-rare.
  • One minute before removing from the grill, spoon 1-2 tbsp of the Creole mustard-ginger glaze over the crosshatched fillets.

  • Combine all ingredients in a small mixing bowl until well blended. Makes 1/2 cup.

The salmon may also be made under the broiler. I have made this salmon many times, it is wonderful! Great served with rice and salad. The fish has to marinade in the fridge for about 1-1/2 hours before cooking, so plan ahead. The recipe can easily be doubled for two salmon fillets.

1 (2 lb) salmon fillets
2 tablespoons cider vinegar
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons oil (not olive oil)
1 teaspoon spicy brown mustard
1/4 teaspoon ginger powder
5 -6 green onions, sliced
1/4 cup sesame seeds, toasted (optional)

Steps:

  • In a bowl, combine vinegar, soy sauce, honey, oil, mustard and ginger.
  • Place the salmon in a shallow glass baking dish.
  • Pour the marinade over the fish.
  • Cover and refrigerate for a minimum of 1-1/2 hours, turning once.
  • Discard marinade.
  • Grill or broil over medium heat for about 15-20 minutes, or until the salmon flakes with a fork.
  • Transfer to a serving plate and sprinkle with green onions and sesame seeds (if using).

3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
Salt and pepper
4 pieces salmon fillet (6 ounces each), with skin
Chopped fresh dill (optional)

Steps:

  • Preheat the oven to 425 degrees. In a small bowl, mix together olive oil, mustard, lemon juice, and 1/4 teaspoon each salt and pepper.
  • Put salmon, skin side down, in a baking dish, and spoon mustard glaze over each piece of fish. Bake until salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with chopped dill, if desired, and serve.

Sweet Mustard-Glazed Salmon for the Grill image

Wild-caught salmon is a huge perk of living here in the Pacific Northwest, and this is one of my favorite ways of preparing it. The sweetness of the brown sugar mixed with two kinds of Dijon mustard compliment the salmon beautifully. I have used both light and/or dark brown sugars and only one kind of Dijon mustard with great success. I've also baked this in the oven for 20 minutes at 375*, but grilling adds a lot of flavor to the salmon.

1/4 cup butter, melted
2 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons whole grain Dijon mustard
4 (4 -6 ounce) salmon fillets

Steps:

  • Mix melted butter, brown sugar, and mustards together.
  • Let mixture sit in a cool place for a few minutes to firm up.
  • Rinse salmon and dry with paper towels so glaze will adhere.
  • Spread glaze on both sides of salmon filets.

1/4 cup tamari or 1/4 cup soy sauce
1/4 cup cream sherry
1/4 cup Dijon mustard
2 tablespoons fresh ginger, peeled, grated

4 (6 ounce) salmon fillets (about an 1-inch thick)
to taste green onion, cut into fans

Steps:

  • Combine first 6 ingredients in a large zip-top plastic bag.
  • Add salmon to bag; seal and marinate in the refrigerator 30 minutes.
  • Remove salmon from bag, reserving marinade. Prepare grill or broiler by spraying with nonstick cooking spray.
  • Cook 6 minutes each side or until fish flakes easily when tested with a fork; basting frequently with reserved marinade. Place remaining marinade in a saucepan; bring to a boil.
  • Serve with salmon; garnish with green onion fans.

This is a "Staff Favorite" at Food & Wine Magazine. This recipe also works well in the oven. The lightly caramelized sweet mustard glaze and rich, smoky flavors here will find echoes in an oak-aged Chardonnay.

1 tablespoon yellow mustard seeds
1/4 cup mayonnaise
1/4 cup whole grain mustard
1 tablespoon dill, finely chopped
1 1/2 teaspoons fresh lime juice
1 1/2 teaspoons dark brown sugar

vegetable oil, for the grill
2 lbs salmon fillets, skin on (One, 2-pound Salmon Fillet, skin on)
1 tablespoon olive oil

Steps:

  • Toast mustard seeds over moderate heat until they darken and begin to pop, about 2 minutes. Transfer to a plate and set aside.
  • In a mixing bowl, whisk mayonnaise with mustard, dill, lime juice and brown sugar. Season with pepper. Set Aside.
  • Light a gas grill and lightly brush grate with oil.
  • Run your fingers over the salmon fillet, feeling for bones. Use tweezers to remove any bones you find.
  • Brush skin side of salmon with olive oil and season with salt and pepper.
  • Place fillet on grill, skin side down, and spread the mustard glaze over the fish. Sprinkle with mustard seeds.
  • Close grill and cook over moderate heat until glaze is golden and salmon is nearly opaque, about 25 minutes. Check on salmon and make sure skin does not begin to char. If skin does char move to cooler part of grill and reduce heat.
  • Transfer the salmon to a platter and serve hot or at room temperature.

1/4 cup white miso (fermented soybean paste)
1/4 cup mirin
2 tablespoons unseasoned rice vinegar
2 to 3 tablespoons soy sauce
2 tablespoons minced green onions
1 1/2 tablespoons minced fresh ginger
2 teaspoons toasted sesame oil
4 salmon fillets, 8 ounces each
Salt and freshly ground pepper
Yuzu juice, for drizzling, optional

Steps:

  • Whisk together the miso, mirin, vinegar, soy sauce, green onions, ginger, and sesame oil in a small bowl. Place the salmon in a baking dish, pour the marinade over, and turn to coat. Cover and marinate for 30 minutes in the refrigerator.
  • Heat grill to high. Remove the fish from the marinade and season with salt and pepper. Grill the salmon, skin side down, with the cover closed, until golden brown and a crust has formed, about 3 to 4 minutes. Turn the salmon over and continue grilling for 3 to 4 minutes for medium doneness. Drizzle with a little yuzu juice, if desired, and serve.

From Bon Appetit's February, 1994 issue...I have made this recipe SO many times and always with good results. One of my all-time favorites. I am not normally a fan of salmon due to the "fishy" taste...but this recipe changed my mind. The sauce is awesome--a friend asked if he could take the leftover sauce home and just eat it with a spoon by itself! Nice dish for entertaining but really simple if you just want to spoil your loved ones. :-) This was on a menu in Bon Appetit with a Potato, Tomato and Onion Gratin that I am also posting, which is equally as good. Enjoy!

1 cup whipping cream
3/4 cup creole mustard or 3/4 cup other coarse grain mustard
4 teaspoons Worcestershire sauce
1 tablespoon Dijon mustard
3/4 teaspoon ground pepper

1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper
3 lbs center-cut salmon fillets (preferably 2 1.5 lb fillets)
1/4 cup unsalted butter, melted (1/2 stick)
3 tablespoons golden brown sugar
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine
1 cup sour cream

Steps:

  • For sauce: Combine all sauce ingredients in a heavy medium saucepan. Simmer until very thick, stirring frequently, about 5 minutes. (Can be prepared one day ahead; cover and refrigerate).
  • For fish: Line large baking pan with foil. Arrange fish, skin side down, in a single layer on foil. Mix the butter, brown sugar, soy sauce, fresh lemon juice and dry white wine in a bowl. Pour over fish. Cover fish and refrigerate at least one hour and up to six hours.
  • Preheat oven to 400 degrees. Uncover fish and bake until just cooked through, basting occasionally with pan drippings, about 18 minutes.
  • Meanwhile, rewarm sauce over low heat, stirring constantly. Add 1 cup sour cream and whisk just until heated through; do not boil. Season sauce to taste with salt. Arrange salmon on platter. Serve, passing the sauce separately.
