GRILLED FLANK STEAK WITH FIVE-SPICE RUB & SESAME-SOY SAUCE

Steps:
- Just before lighting the fire, rub the steak with the Five-Spice Rub, if using, about 1 Tbs. per side.
- When the fire is hot (you'll be able to hold your hand just above the grate for 1 second), drizzle both sides of the flank steak with the vegetable oil and sprinkle lightly with salt. Grill the steak for 8 minutes, flipping it a couple of times during cooking. Be sure to keep the thicker part over the hotter area of the fire and the thinner, tapered end over the cooler area. It should be rare to medium rare at this point. Transfer the steak to a clean wooden carving board to rest for 2 to 3 minutes. so the meat relaxes and the juices redistribute. To carve, cut very thin slices across the grain and on a 45-degree angle. Drizzle lightly with the Sesame-Soy Sauce, if you like.

GRILLED SESAME STEAK
This is a grill recipe my wife and I have been making for over 30 years. The sesame flavor is fantastic, and the London broil comes out tender as can be. Turn it twice per side to get the diamond-shaped grill marks and people will rave!

- Heat sesame oil in a skillet over medium-high heat. Cook and stir sesame seeds in hot oil until golden brown, about 1 minute. Transfer seeds and oil immediately to a large glass or ceramic baking dish.
- Stir onions, soy sauce, lemon juice, sugar, garlic, and peppercorns into sesame mixture until marinade is evenly combined. Place steak into marinade, turning to coat all sides. Cover baking dish with plastic wrap and refrigerate, turning steak often, for at least 4 hours or up to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook the steak on the preheated grill until meat starts to firm and turns reddish-pink and juicy in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium rare. Transfer steak to a plate, cover with aluminum foil, and let rest for about 10 minutes. Slice across the grain.

SOY SAUCE-MARINATED GRILLED FLANK STEAK AND SCALLIONS

- Prepare a grill for medium-high heat; lightly oil grate. Pat steak dry and place on a rimmed baking sheet. Lightly score both sides of steak with the tip of a paring knife, making shallow parallel cuts (no deeper than an 1/8") about 1" apart and running across the grain of the meat (this will prevent the steak from curling as it cooks). Season generously all over with salt and pepper; let sit at room temperature at least 30 minutes and up to 1 hour.
- Meanwhile, toss scallions on another baking sheet with 2 Tbsp. olive oil to coat; season with salt and pepper.
- Whisk mirin, soy sauce, brown sugar, vinegar, Sriracha, and sesame oil in a medium bowl until sugar is dissolved; set marinade aside.
- Pat steak dry again (the salt will have drawn out more moisture) and rub with remaining 1 Tbsp. olive oil. Grill scallions, turning often, until tender and charred in spots, about 1 minute. Return to baking sheet. Grill steak, turning every 2 minutes or so, until medium-rare, 6-8 minutes. Transfer to a cutting board and let rest 10-15 minutes.
- Thinly slice steak crosswise and arrange on a rimmed platter; drizzle all of the juices that have collected on the cutting board over. Arrange grilled scallions on top of the steak, then pour reserved marinade over. Let sit at least 15 minutes and up to 1 hour before serving. To serve, sprinkle with sesame seeds as desired.
SESAME FLANK STEAKS WITH GRILLED GREEN ONIONS
Grilled flank steak with a wonderful Asian marinade! A friend from Minneapolis emailed me this recipe, knowing I would like it, and she was right! Prep time does not include 6 hour or overnight marinating time.

Steps:
- Place steaks in shallow nonreactive dish, which will hold them comfortably in a single layer.
- In small bowl, whisk together vinegar, soy sauce and 6 tablespoons of the sesame oil.
- Pour marinade over the meat.
- Cover and refrigerate 6 hours or overnight, turning several times.
- When ready to cook, lightly oil grill rack and arrange 5 inches from heat source.
- Cut off root ends and all but 4 inches from green stems of green onions.
- Place onions in shallow dish and brush all over with remaining 2 tablespoons of the sesame oil.
- Set aside.
- When grill is hot, remove steaks from marinade.
- Lightly pat dry with paper towels.
- Place steaks on grill and cook 5 to 6 minutes per side for medium-rare.
- When done, place on platter and cover lossely with aluminum foil to keep warm.
- Grill green onions, turning them until slightly charred, 3 to 5 minutes.
- To serve, slice meat diagonally across the grain into 1/4-inch-thick slices.
- Arrange meat and grilled onions on serving platter and season with salt to taste.
- Sprinkle with sesame seeds.
- Note: To toast sesame seeds, place them in medium skillet over medium heat.
- Toast, stirring, until seeds are golden brown, 3 to 5 minutes.
- Remove and cool.

GRILLED FLANK STEAK
Steps:
- Make the marinade: Combine the canola oil, vinegar, mustard, garlic, oregano, parsley, rosemary and Worcestershire sauce in a food processor; season with salt and pepper. Pulse until the garlic and herbs are incorporated in the oil.
- Place the steak in a resealable plastic bag. Pour the marinade over the steak and marinate in the refrigerator at least 30 minutes or overnight.
- Make the sauce: Remove the steak from the bag and pour the marinade into a small pan. Bring the marinade to a boil, then reduce the heat to a simmer and cook until thickened, 2 to 3 minutes.
- Preheat a grill to high and oil the grates. Grill the steak 3 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 7 minutes, then slice against the grain. Serve with the herb sauce.
GRILLED FLANK STEAK WITH SAVORY SECRET SAUCE
Steps:
- Place a medium saute pan over medium-low heat. Add the butter and olive oil. Once the butter has melted, add the anchovies and saute until they start to break down, about 1 minute. Add the oregano, crushed red pepper and garlic and saute for 2 to 3 minutes to allow the anchovies to completely break down and the garlic to cook. Take the pan off the heat and allow to cool for 2 to 3 minutes. Stir in the lemon juice and parsley. Taste and season with salt and pepper if desired.
- Heat a grill or grill pan to medium-high heat. Season both sides of the flank steak with a generous amount of salt and pepper. Brush the grill grates or grill pan with the canola oil. Grill the steak for 3 to 4 minutes per side for medium rare. Let rest for 5 minutes before slicing. Slice and top with the sauce.
