GRILLED FLANK STEAK CROSTINI WITH MUSTARD GREENS

Steps:
- Bring the flank steak to room temperature.
- Prepare an outdoor grill or preheat a stovetop grill pan.
- Season both sides of the steak with salt and freshly ground pepper. Drizzle 1 tablespoon of the olive oil on 1 side of the meat and lightly rub it in.
- Sprinkle half of the oregano on top and place the steak on the grill, herb side up.
- Grill on 1 side for about 5 minutes or until the juices of the meat come to the surface of the steak. Turn the steak once and continue cooking for about 1 to 2 minutes, or until done to your taste. Let rest for a few minutes.
- Meanwhile: In a large saute pan, heat 2 tablespoons olive oil until hot. Add the garlic and saute about 1 minute, or until light brown. Add the greens and toss occasionally.
- After about 3 minutes, the greens will have cooked down. Season with a large pinch of salt and a sprinkle of freshly ground pepper. Cook another 3 minutes. Splash greens with 2 tablespoons red wine vinegar and hot sauce, to taste, if using. Transfer the greens to a plate.
- For the crostini: Brush both sides of the bread slices with olive oil and season with salt and pepper. Place the slices on the grill or grill pan and cook until crispy, about 1 minute on each side.
- Cut the flank steak across the grain in 1/4-inch slices. Place a slice of steak on top of each crostini, top each with the greens and finish with a drizzle of olive oil and hot sauce, as desired. Can be served warm or at room temperature.
GRILLED GARLIC CROSTINI

- Mix the olive oil, garlic, salt, and pepper together in a small bowl and brush lightly on both sides of the bread slices. Grill for 15 to 20 seconds on each side, until nicely marked, then remove with tongs and set aside. For broiling, position the rack so the slices are 2 inches from the flame and turn when the crostini starts to blacken at the edges.
GRILLED CROSTINIS

- Slice baguette into 1-1.5 inch thick slices
- Pour olive oil into a small dish or bowl to dip the bread
- Dunk both sides of the bread in the oil to coat
- Put fresh cracked black pepper over one side of the slices of bread
- Sprinkle a heavy coat of basil over each slice of bread
- Put about a half teaspoon of minced garlic on each slice. It sounds like a ton, but a lot of topping will be lost when the crostini is flipped over
- Take the back of the spoon and mash the toppings into the bread to minimize toppings loss when flipped over
- Prepare the grill for two zone grilling: coals on one side and nothing on the other
- Place the crostinis topping side up over the coals, but no more than 6 at a time otherwise you will burn one or two
- Check the bottoms of the crostinis frequently and flip each once it is toasted on the bottom. This should take no more than 45-75 seconds
- Once the side with the toppings browns, flip over and move to the side with no coals
- Place the a slice of havarti on top of each crostini and close the lid
- Once the cheese melts down the side of the crostini (4-5 minutes), remove from the heat and serve
GARLIC CROSTINI
I purchased a box of 'garlic chips' the other day. I arrived home only to discover my four dollar box of bread slices were all broken. It was then that I decided I'd simply make my own...less expensive with better flavour. Crostini are multi-use flavoured and baked thin bread slices. I've used them to float cheese in onion soup, broken into giant croutons for salads, and my favourite...as a base for flavourful spreads and appetizers. Don't discount their use plain, as a crunchy snack either. Recipe #415921 is an easy and tasty spread that goes well with these. I recommend using day old baguettes to make slicing easier.

Steps:
- Mix olive oil and minced garlic in a heat-proof measuring cup. Microwave at half power for 30 seconds. Set aside.
- Note: depending on the size of your baguette, you may have to double the garlic oil ingredients.
- Preheat oven to 375*. Line a large baking sheet with parchment paper.
- Slice the baguette, on the diagonal, into 1/4" to 1/2" thick slices.
- Using a pastry brush lightly wipe both sides of the bread slices with garlic oil. Arrange on the baking sheet.
- Sprinkle (one side only), lightly with kosher salt and black pepper (if using).
- Bake for 10 minutes. Turn slices over and continue to bake for another 5 - 10 minutes or until golden in colour and crispy. The baking time will depend on the thickness of the slices and the amount of garlic oil used.
- Remove from the baking sheet and let cool in a single layer on a cooling rack.
- You can use these immediately, or allow to cool completely for storage in an airtight container.
PEPPER-CRUSTED STEAK WITH HORSERADISH CREAM ON GRILLED GARLIC CROSTINI

- Combine the garlic, hot red pepper flakes, peppercorns, rosemary, and olive oil in a Zip-loc bag. Add the beef, coating it with the marinade. Squeeze all the air out of the bag so the beef is enveloped by the marinade, and refrigerate for at least 6 hours, or overnight.
- Preheat the grill or broiler for 15 to 20 minutes. Sprinkle the steak with the salt and grill or broil to rare or medium rare, depending on your preference.
- The cooking time will depend on the thickness and temperature of the beef, so push at the steak with your finger, and if it still feels totally raw in the middle, give it a little longer.
- This is one of the things that cooks just need to intuit and learn to read the silent signs. Better under than overcooked, so check often, and if your finger defeats you, cut the steak with a knife and have a look. Let the steak rest for at least an hour, to get the juices back into the meat, then cut into short, very thin slices. (The best knife for slicing is a bread knife with wavy rather than pointed teeth, which cuts through beef amazingly well.) Serve on Grilled Garlic Crostini.
- Arrange a few shaved slices of beef on each piece of bread, top with a pungent dot of Horseradish Cream, scatter with minced Italian parsley, and dust on a little kosher salt.

- In a small saucepan, bring vinegar to a boil; cook 10-15 minutes or until liquid is reduced to 3 tablespoons. Remove from heat., Brush oil over both sides of baguette slices. - Set the oven to broil at 425 degrees F (220 degrees C).
- In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
- Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
- Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

- Arrange a third of the tomato slices in a single layer on a double thickness of heavy-duty foil (about 12 in. square). Place half of the cheese over tomatoes; sprinkle with 1 teaspoon oregano and drizzle with 1 teaspoon oil. Sprinkle with a dash of pepper. Repeat layers., Top with remaining tomato slices.
