Steps:
- In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. Transfer to a piece of heavy-duty foil (about 18 in. square) coated with cooking spray. Fold foil around beans, sealing tightly., Grill, covered, over medium heat or broil 4 in. from heat until cheese is melted, 7-9 minutes. Open foil carefully to allow steam to escape.

Simple and easy grilled green beans. A great way to use up those garden green beans while grilling on a nice summer evening. Incredibly tasty and simple!

Steps:
- Combine green beans, olive oil, garlic, and salt in a bowl; toss to coat. Allow green beans to marinate for 30 minutes.
- Preheat grill for medium heat and lightly oil the grate. Arrange green beans on a grill pan.
- Place grill pan on preheated grill; cook and stir green beans until lightly charred, about 10 minutes.

BROCCOLI AND GREEN BEANS

- In a large pot, bring 6 quarts of salted water to a boil. Have ready a large bowl of ice water. Place broccoli into pot and cook for 2 minutes. You just want to parboil the broccoli at this point since you will saute it later on. Using a spider strainer, remove broccoli from pot and shock it in a bowl of ice water. When broccoli is completely cool, place it in a colander and allow to drain. Refresh the bowl of ice water. Bring the water back to a boil. Add green beans and cook for 4 minutes. Like the broccoli, you just want to parboil the green beans. Remove green beans from pot with spider strainer and add to ice water. When green beans are completely cool, add them to the colander and allow to drain.
- In a large saute pan, heat olive oil. When almost smoking, add the garlic and saute for about 45 seconds. When the garlic starts to brown, remove immediately and discard. Overcooking the garlic will impart a very bitter taste to the dish. Add the red pepper flakes, broccoli and green beans to the pan and cook for 5 minutes. Season with salt and pepper. Serve immediately.
GRILLED SUMMER BEANS WITH GARLIC AND HERBS
Green beans don't number among the vegetables we normally grill - eggplants, onions, peppers, zucchini - but there's something about the high, dry heat of the fire and the gentle scent of smoke that heightens their snap and natural sweetness. But how do you grill a vegetable so slender it seems doomed to fall between the bars of the grate? The secret is to use a meshed grill basket, which lets enough fire through to char the beans and enough smoke through to perfume them. The New York chef Missy Robbins grills Romano beans (a.k.a. flat or pole beans), whose shape maximizes the surface area exposed to the fire. If unavailable, substitute conventional green beans or haricots verts. The Italian inspiration for this dish is evident in the garlic, basil, mint and extra-virgin olive oil, but grilling the beans over a wood fire, instead of boiling, is uniquely and distinctly American. If necessary, you can use charcoal rather than wood; a gas grill is fine if that's what you have.

- Build a hot wood fire in your grill. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks under the grate over one or two of the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
- Combine 1/4 cup oil and the garlic in a small saucepan and cook over low heat until the garlic is fragrant but not browned, 8 minutes. Remove pan from heat and let cool. Stir in red-pepper flakes, lemon zest and parsley.
- Place beans in a large bowl with the remaining 1/4 cup olive oil. Season with salt and pepper and toss to mix.
- Arrange beans directly on the grill or in a wire grill basket. Grill beans until charred and crisp-tender, 3 to 4 minutes, turning with tongs. (You may need to work in two batches, depending on the size of your grill.)
- Return hot beans to the mixing bowl and stir in garlic-parsley oil. Squeeze in lemon juice. Stir in basil and mint leaves and serve.

GREEN BEANS GRILLED IN FOIL
While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface to create a double sheet. Repeat with remaining foil to make a total of 4 double sheets.
- Place 1/4 of each of the beans on the center of each double sheet of aluminum foil; season liberally with seasoned salt. Add 3 teaspoons of butter to each bean serving and close the foil tightly to form a packet.
- Place foil packets on the preheated grill and cook until beans are tender, 15 to 20 minutes. Remove from grill and carefully open the packets to let the hot steam evaporate.

This recipe could not be easier. It's ready in minutes and is good hot, room temp or cold. If you like your green beans a little more tender you need to put them in the pan first to give them a little more cooking time. I make this when I have the ingredients fresh in the garden and the flavors are so bright and simple.You can add baby carrots too if you have them.

BALSAMIC MARINATED ASPARAGUS
This easy marinated asparagus recipe comes together in just a few minutes. Balsamic vinegar and garlic add a hefty dose of flavor, sugar mellows it out a bit and red pepper flakes add a nice little kick.

- Snap off the tough ends of asparagus and wash asparagus thoroughly.
- Cook asparagus in boiling water for about two minutes, until it's bright green and just beginning to get tender. Drain.
- Place asparagus in a large bowl of ice water to stop the cooking. Drain.
- Lay asparagus in a 13" by 9" baking dish.
- In a small bowl, whisk together the olive oil, balsamic vinegar, sugar, garlic, and red pepper flakes.
- Pour over asparagus.
- Cover dish with plastic wrap and place in the refrigerator.
- Chill for about 8 hours.
- Using tongs, remove asparagus from marinade and serve.

- 1. Mix all ingredients except the parmesan cheese in a large ziplock bag. Let flavors marinate for 10 minutes or so. 2. Put on a grill over medium heat, turning frequently until crisp tender. GRILLED VEGETABLES WITH GREEN CURRY MARINADE
A mix of fresh veggies in a tangy marinade. It helps to have a grill basket for this, or really small openings on your grill grates. Orange bell peppers and green beans (instead of asparagus) can also be used. This serves 4 as a side or salad topping, or 2 as a main dish. My green curry paste is fairly mild, so if yours is hot, adjust amount according to tastes.

- Mix first 7 ingredients (lime juice through curry paste) in a small bowl until blended.
- 2. Put all of the veggies into a large zip-top plastic bag and pour marinade over them. Seal and toss gently to coat veggies. Marinate 30-60 minutes.
- 3. Prepare grill. (I use a gas grill).
- 4. When grill is ready, dump veggies into grill basket and cook over med-high heat for 15-30 minutes (or until cooked to your crispness preference) , gently turning veggies halfway through cooking time.
- 5. Remove from heat and serve, or cool to room temperature and use on a salad.
