This apple coleslaw with its easy homemade buttermilk dressing is the perfect 'oh so light and crisp' fall side dish.

1 pkg. coleslaw mix
2 Honey Crisp apples, sliced thinly
2 Granny Smith apples, sliced thinly
3 green onions, thinly sliced
manchego (or parmesan) cheese for garnish
1 tsp salt
3/4 tsp sugar
1 Tbsp apple cider vinegar
1/2 C buttermilk
1/4 C mayonnaise
2 tsp whole grain mustard
pinch of cayenne
black pepper

Steps:

  • Toss the cabbage with 1 teaspoon salt and 1/2 teaspoon sugar in a colander and set over a bowl. Let stand for 30 minutes. After sitting for 30 minutes, discard any liquid that collects in the bowl. Combine the garlic and cider vinegar in a large bowl. Let stand for 5 minutes. Whisk in the buttermilk, mayonnaise, mustard, remaining 1/4 teaspoon sugar and cayenne. Gently squeeze any excess moisture from the cabbage. Add the cabbage and apples to the dressing bowl. Gently toss the cabbage and apples in the dressing. Add black pepper to taste. Sprinkle top with the green onion and cheese and serve.

1/2 cup (120g) sour cream
1 tablespoon red wine vinegar

1/2 cup granulated sugar
2 tablespoons apple cider vinegar (preferably raw)
the juice of half a lemon
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 small head cabbage (cored and thinly sliced or coarsely shredded, about 8 cups)
3 large carrots (peeled and cut into very thin matchsticks or coarsely shredded, about 2 cups)

Steps:

  • In a large mixing bowl, whisk together the mayonnaise, buttermilk, granulated sugar, apple cider vinegar, lemon juice, kosher salt, and black pepper until smooth. Toss in the shredded cabbage and carrot and cover. Refrigerate for at least 30 minutes before serving. When stored in an airtight container, the coleslaw is good for up to 5 days in the refrigerator. 4 teaspoons baking powder

1 cup whole buttermilk
1 large egg
1 ¼ cups tart apples - peeled, cored, and cut into 1/2-inch cubes
½ cup confectioners' sugar
2 tablespoons maple syrup
½ teaspoon ground cinnamon
¼ teaspoon grated nutmeg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper.
  • Whisk together flour, brown sugar, baking powder, cinnamon, and salt in a large bowl.
  • Quickly shred butter into the flour mixture. Using a fork, gently work butter into the flour until it is the consistency of coarse crumbs.
  • Whisk buttermilk and egg together in a small bowl and pour over the flour mixture. Use a spatula to combine until just moist. Gently fold in chopped apples, using your hands if necessary, until it just comes together. Do not over mix the dough.
