These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

1 fresh pineapple - peeled, cored and cut into 1 inch rings
¼ teaspoon honey
3 tablespoons melted butter
1 dash hot pepper sauce
salt to taste

Steps:

  • Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

This grilled pineapple juice elevates your cocktails with fresh flavors from the grill. A richer juice than your regular pineapple juice, this is a great substitute in any tropical cocktail!

1 whole pineapple, ripe
vegetable oil, for brushing on pineapple slices

Steps:

  • Cut pineapple, peeled and brushed slices with oil.
  • Place cut pineapple on grill, grill until grill marks show and pineapple is warm. About 3 minutes to a side.
  • Take off grill, let cool slightly and place pineapple in food processor or blender.
  • Pulse until blended up and is pulpy.
  • Strain through a fine mesh strainer, stirring to get juice out, but you may have to let it sit and drain for 20 minutes or so.
  • Throw pulp away.
  • Set juice aside for cocktail. Can be stored in the fridge for about a week, or frozen in a jar or plastic container for up to a month.

Fresh pineapple sprinkled with Tajin® is one of my favorite snacks, and I also love grilled pineapple, so I decided to combine the two ideas and the result was delicious! If you like things extra spicy, feel free to use Tajin® Habanero.

1 tablespoon olive oil
1 fresh pineapple
1 tablespoon chili-lime seasoning (such as Tajin®)

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Cut the top and bottom of the pineapple off with a sharp knife, then cut lengthwise into 8 wedges. Cut off the peel and remove the core.
  • Brush olive oil onto the preheated grill. Place pineapple wedges on the grate and cook until grill marks appear, 2 to 3 minutes per side. Sprinkle chili-lime seasoning over pineapple wedges and serve.

1 fresh pineapple
3 tablespoons brown sugar
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon honey or agave nectar
1-1/2 teaspoons chili powder
Dash salt

Steps:

  • Peel pineapple, removing any eyes from fruit. Cut lengthwise into 6 wedges; remove core. In a small bowl, mix remaining ingredients until blended. Brush pineapple with half of the glaze; reserve remaining mixture for basting., Grill pineapple, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side or until lightly browned, basting occasionally with reserved glaze.
