A Peta Mathias recipe. If you cannot mince your own pork (or if your butcher can't do it for you) you can substitute lean pork mince - but it might not be the same! You can also substitute dried herbs for the fresh, just use half the amount. Any combination of herbs will do, but sage & rosemary can be a bit overpowering. Any combination of the spices are fine as well.

700 g pork shoulder
150 g pork fat
300 g chicken livers
3 shallots, chopped very finely
3 garlic cloves, crushed
1/3 cup dry white wine
1 1/2 tablespoons cognac or 1 1/2 tablespoons brandy
1 1/2 tablespoons port wine
1 tablespoon sea salt
1/2 tablespoon black pepper, freshly ground
2 tablespoons fresh thyme
2 tablespoons fresh chervil
2 tablespoons fresh marjoram
2 tablespoons fresh tarragon
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon ground cardamom

Steps:

  • Coarsely grind the pork meat, fat and chicken livers together.
  • Preheat oven to 190 degrees Celsius & grease a 1 litre terrine dish (olive oil is fine).
  • Place the meat into a bowl with the remaining ingredients and mix well with your hands.
  • Pour into the terrine dish & put the terrine dish into a larger roasing dish, adding hot water to reach 2/3rds of the way up the side of the terrine.
  • Bake for 1 & 1/2 hours, then remove the terrine dish from the oven & water bath. Place a plate with a weight on top of the terrine.
  • When cool, remove the weight and refrigerate for 2 days before eating.
  • Serve as an appetiser or just eat in thick slices with bread & pickles.

2 red bell peppers
1 large eggplant, cut lengthwise into 3/8-inch-thick slices
Olive oil
2 large zucchini, cut lengthwise into 1/4-inch-thick slices
1 11-ounce package soft mild goat cheese (such as Montrachet), room temperature
3 tablespoons olive oil
2 tablespoons chopped fresh thyme
1 large bunch fresh arugula, chopped
1/2 cup chopped pitted brine-cured olives (such as Niçoise or Kalamata)
Fresh arugula leaves
French bread

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Place in bag and let stand 10 minutes. Peel and seed peppers. Cut into 1/2-inch pieces.
  • Preheat broiler. Brush both sides of eggplant with oil. Season with salt and pepper. Broil until cooked through and golden, about 3 minutes per side. Drain on paper towels. Brush both sides of zucchini with oil. Season with salt and pepper. Broil until cooked through, about 3 minutes per side. Drain on paper towels.
  • Puree cheese in processor until smooth. With machine running, add 3 tablespoons oil through feed tube. Add bell peppers; process using on/off turns until peppers are coarsely chopped and cheese mixture begins to color. Add thyme. Season with salt and pepper.
  • Line 9x5-inch glass loaf pan with plastic, leaving 4-inch overhang. Place single layer of zucchini in bottom of pan, covering completely and trimming to fit. Spread 1/3 of cheese mixture over. Top with 1/3 of chopped arugula and 1/3 of olives. Cover with single layer of eggplant, trimming to fit. Spread 1/3 of cheese over, top with 1/3 of chopped arugula and 1/3 of olives. Repeat with remaining zucchini, cheese, chopped arugula and olives. Finish with layer of eggplant. Fold plastic over to cover; press down gently on eggplant. Cover; chill until firm, at least 6 hours. (Can be made 2 days ahead. Keep chilled. Let stand at room temperature 30 minutes before serving.)
  • Line platter with arugula leaves. Open plastic wrap on top of terrine. Unmold terrine onto platter, lift off pan and peel off plastic. Serve with bread.

2 tablespoons butter
1 small onion, finely chopped
2 to 3 cloves garlic, finely chopped
1/4 cup/60 ml Cognac
1 pound/500 g ground pork
2 tablespoons chopped fresh herbs, such as thyme, parsley and chives
1 teaspoon quatre-epices
3 eggs
8 ounces/250 g pork or beef liver, coarsely chopped
8 ounces/250 g ground veal shoulder
1 1/4 cups/80 g breadcrumbs
Salt and freshly ground pepper
8 ounces/250 g slab fat, pork fatback, or pork belly or bacon

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C.
  • Melt the butter in a saute pan and gently saute the onions until soft. Add the garlic and cook for 1 minute. Pour in the Cognac, remove from the heat and cool slightly.
  • Combine the ground pork, liver and ground veal in a large bowl. Add the onion mixture, breadcrumbs, herbs, quatre-epices and eggs. Mix well. Sprinkle with plenty of salt and pepper. Fry a patty of it to check for seasonings and adjust if necessary.
  • Thinly slice the pork fat and line a 10-by-2 1/2-inch terrine mold with the slices, slightly overlapping them and allowing it to hang over the edges. Pack the meat mixture into the terrine and press down evenly. Fold the overhanging strips of fat over the top and add a few more slices if necessary to cover the top. Cover the top with a piece of parchment paper, then cover the terrine with foil.
  • Put the terrine in a roasting pan and pour around enough boiling water to come halfway up the sides of the terrine. Place in the oven and cook for 1 to 1 1/2 hours. Remove from the water bath and cool completely. Place a brick on it and refrigerate overnight. Slice and serve.

1 large egg, hard-boiled and finely chopped
1/4 cup each Niçoise, picholine, and Kalamata olives (5 ounces total), rinsed, pitted, and coarsely chopped
2 flat anchovy fillets, rinsed and coarsely chopped
2 tablespoons drained bottled capers, rinsed
1 garlic clove, finely chopped
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon Cognac
1/4 cup extra-virgin olive oil
2 tablespoons finely chopped fresh basil
6 (1/2-inch-thick) sourdough bread slices (from a 9-inch loaf; preferably whole-wheat)
1 garlic clove, halved
6 tablespoons soft mild goat cheese (3 ounces)
Garnish: 48 small basil leaves

Steps:

  • Blend all tapenade ingredients in a food processor until finely chopped but not puréed, 2 to 3 seconds.
  • Lightly toast bread and rub 1 side of each slice with garlic. Spread each with 1 tablespoon cheese and about 2 1/2 tablespoons tapenade. Cut each tartine into 8 wedges.

A classic recipe I came across in NOLA's recipe archive. Perfect for holiday entertaining. Needs to rest refrigerated at least 8 hours after baking so plan to make the day before serving. It will be hard to resist since it will make your home smell so good.

2 lbs lean pork, coarsely chopped
2 lbs veal, finely chopped
1 lb pork liver, ground
1 lb pork fat, fresh (fat bacon fine too)
6 garlic cloves, minced
3 eggs
1/4 teaspoon white pepper
1/8 teaspoon cayenne
1/8 teaspoon allspice
1/3 cup cognac
1 tablespoon dried basil
1 tablespoon salt
1 teaspoon fresh ground black pepper
bacon, to line the terrine (salt pork fine too)

Steps:

  • Preheat the oven to 325 degrees. In a large bowl, combine the pork, veal, liver, pork fat or bacon, garlic, eggs, white pepper, cayenne, allspice, Cognac, basil, salt and black pepper. Mix well. (If you wish to test for seasoning, fry a small piece in a little butter or oil until it's cooked through. Taste and adjust seasonings if necessary.).
  • Line a 2 1/2-quart terrine or baking dish with the bacon or salt pork, reserving two or three strips. Spoon the pate mixture into the baking dish, then place the reserved bacon strips over the top. Cover the pan tightly with a sheet of aluminum foil and bake for one hour. Remove the foil and continue baking for 1 1/2 hours, or until the pate slightly shrinks away from the sides of the baking dish. Remove from the oven and carefully drain off excess fat. Cool.
  • Cover tightly with aluminum foil and place a weight (I usually use a brick wrapped with heavy-duty foil) on top. Refrigerate for at least eight hours.
  • To serve, cut the pate into 1/2-inch slices or small bite-size chunks and accompany with toast points.
