Grilled Pineapple Appetizer with Teriyaki Ginger Chicken Meatballs image

3/4 lb fresh Pineapple, sliced 3" x 3/4"
1/3 sec extra virgin olive oil cooking Spray
1/4 cup hoisin sauce
2 Tbsp Water
2 fresh peppermint leaves

Steps:

  • Spray pineapple slices with cooking spray and grill or pan brown, lightly brush both sides with hoisin sauce. Cut rings into bite size pieces about 1 " wide (just big enough for the meatballs to sit on top of).
  • Prepare a medium skillet with pan spray and brown al fresco all natural Teriyaki Meat Balls over medium high heat on both sides. Add water, cover and fully heat meatballs.
  • Skewer meatballs on top of pineapple and lightly brush with the hoisin sauce to give a glaze.
  • Set-up on a platter, and put remaining hoisin sauce in a small dipping bowl. Garnish with fresh mint. Serve immediately.

4 boneless skinless chicken breasts (pounded to ½ inch thickness)
1 teaspoon garlic powder
1 teaspoon chili powder
salt and pepper to taste
¼ red onion (thinly sliced)
8 sliced pineapple rings ((or 1 cup chopped pineapple))
½ cup teriyaki sauce ((my favorite store-bought brand is Kikkoman, or use the recipe below!))
4 pita wraps
optional: sesame seeds, lettuce, mayo, tomatoes
½ cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
¼ cup brown sugar
1 tablespoon honey
¾ teaspoon ground ginger
1 teaspoon minced garlic

Steps:

  • Preheat grill to medium heat. Season chicken breasts with garlic powder, chili powder, and salt and pepper to taste. Grill for 5-8 minutes on each side until chicken is cooked through.
  • Assemble wraps by placing a grilled chicken breast, onions, pineapple, and any other desired toppings on each pita. Top with teriyaki sauce and sprinkle with sesame seeds and cilantro if desired. Serve immediately.
  • For the homemade teriyaki sauce whisk all ingredients together in a small sauce pan. Stir constantly while bringing to a boil. Boil for 1-2 minutes. Reduce heat and transfer to a heat-safe bowl to serve.

1/2 pineapple, peeled, cored and cut into 4-by-1-inch pieces
4 scallions, cut into 4-inch pieces
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Zest and juice of 1 lemon
Zest and juice of 1 lime
Zest and juice of 1 orange
1 tablespoon apricot jam
2 cloves garlic, minced
1 pound boneless, skinless chicken breasts

Steps:

  • Preheat a grill pan over medium-high heat. Place the pineapple and scallions into a large mixing bowl. Drizzle with 2 tablespoons olive oil. Sprinkle with salt and pepper and toss to coat. Place in the grill pan and cook, turning occasionally, until softened and evenly browned, 7 to 10 minutes. Set aside.
  • In a small mixing bowl, whisk the zests and juices of the lemon, lime and orange together with the remaining 2 tablespoons olive oil. Add the apricot jam, garlic, 1 teaspoon salt and 1/2 teaspoon black pepper. Mix to combine and set aside.
  • Meanwhile, slice each chicken breast horizontally to create 2 thin pieces. Pound each piece to 1/2-inch thick and place in a shallow baking dish. Pour the citrus mixture over the chicken and refrigerate for 15 minutes. Remove the chicken from the marinade and lay it flat on a work surface. Sprinkle both sides with salt and pepper. Place 2 to 3 pineapple pieces and 2 scallion pieces in the center of 1 chicken fillet. Wrap the chicken around the pineapple and scallions and secure with toothpicks. Repeat with the remaining chicken, pineapple and scallions to create 4 wraps in total.
  • Heat the grill pan over medium-high heat. Grill the chicken wraps, turning 90 degrees every 2 minutes, until evenly browned, 8 to 10 minutes total. Remove from the grill and let cool for 5 minutes. Remove the toothpicks and serve immediately.

6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup Hawaiian style marinade
6 pineapple rings
6 slices provolone cheese
6 onion rolls, split
6 tablespoons thousand island salad dressing
6 leaves romaine lettuce
6 slices tomato

Steps:

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

¼ cup vegetable oil
¼ cup reduced sodium soy sauce
¼ cup brown sugar
½ teaspoon garlic powder
¼ teaspoon ground black pepper
6 boneless, skinless chicken breast halves
Pineapple Slices (Optional)
Chopped Green Onion (Optional)

Steps:

  • In a medium bowl, mix the pineapple juice, vegetable oil, soy sauce, brown sugar, garlic powder, and pepper. Place chicken in the bowl, and coat with the mixture. Cover, and marinate in the fridge for at least 2 hours (I like mine to marinate for about 8 hours).
  • Heat grill to medium-high. Place chicken on grill until just cooked through (about 5-7 minutes per side).
  • Place pineapple slices on grill and cook until grill marks appear (just a minute or two per side).
  • Remove chicken and pineapple from grill and place one slice of pineapple on each chicken breast. Sprinkle green onions on top.

  • In a large Ziploc plastic bag, combine 3/4 cup Teriyaki Marinade with chicken; seal bag. Marinate in refrigerator for 30 minutes.
  • In a medium bowl, combine 1/3 cup Marinade with pineapple slices, gently turning slices to coat; set aside.
  • Remove chicken from bag, discarding used marinade.

4 skinless, boneless chicken breast halves
4 pineapple rings
3 tablespoons soy sauce
2 tablespoons fresh lime juice
2 tablespoons pineapple juice
3 tablespoons honey

½ teaspoon sesame oil
1 clove garlic, minced

Steps:

1/2 cup teriyaki sauce

  • Drain pineapple, reserving juice; refrigerate pineapple. In a small bowl, combine teriyaki sauce and reserved juice. Pour 3/4 cup marinade into a large resealable plastic bag; add chicken. 1 lb of boneless skinless chicken breast tenders
1 cup low sodium soy sauce
1 tablespoon of grated gingerroot
3 garlic cloves, mashed and minced
2 limes, juice and zest of, divided
1/2 cup honey
1 tablespoon sesame oil
1 cup diced pineapple, in plastic boxes
1 jalapeno, seeded and halved
1/4 small onion
6 leaves fresh basil
salt, to taste

Steps:

  • Make a marinade of soy sauce, ginger, garlic, half of the lime juice and zest, honey, and sesame oil in a large bowl. Add chicken, and stir to combine. Place in the fridge for 30 minutes, and place remaining ingredients in blender. Chop until pineapple is a smaller costintency, and other ingredients get chopped finer as well. Do not puree. Preheat grill to medium-high heat, and cook chicken for 5 minutes on each side. Serve on a large plate with the pineapple salsa in a bowl right besides it. Serve hot.
