GRILLED MIXED MUSHROOM PIZZA

- Preheat a grill on medium-high heat. In a large saute pan, cook the mushrooms in 3 tablespoons olive oil over high heat. Cook until the mushrooms are nice and golden. Lower the heat to medium and add the garlic and rosemary; season with salt and pepper. Be careful not to burn. Cook another few minutes, or until the garlic is fragrant.
- Meanwhile, prep each of the ingredients by placing them in a separate bowl, ready for quick access at the grill. Mix the parmesan and mozzarella in one small bowl and the marinara and wine in a second small bowl.
- On a lightly-floured surface, unfold the dough and cut it into quarters. Brush the top side of the dough with some of the remaining olive oil and flip onto the nonstick foil. Brush the second side with olive oil. With all the ingredients within hand's reach at the grill, slide the oiled crusts onto the grill and cook just until they begin to puff, 3 minutes. With 2 spatulas or tongs, carefully flip the crusts. Immediately spread the crusts with the marinara sauce, sprinkle with half the cheese, top with the cooked mushrooms, and the other half of the cheese. Close the lid of the grill and cook just until the cheese is melted, about 2 to 3 minutes. Be careful not to burn the crust. Cook's Note: If you don't have a grill cover, use a large metal bowl or aluminum foil.
- Serve immediately.

PIZZA GRILLED CHEESE

- In a small bowl, mix together the butter, Parmesan, Italian seasoning and crushed red pepper. Brush one side of each slice of bread with this mixture.
- Heat a nonstick skillet over medium heat. Lay one piece of the bread, butter-side down, in the skillet. Spread 1 tablespoon marinara sauce on the bread and layer on the mozzarella, provolone, pepperoni, pepper slices, olives and basil leaves. Top with the second slice of bread, butter-side up. Toast in the skillet, flipping as needed, until the bread is golden and the cheese has melted, 4 to 5 minutes.
- Remove from the skillet and slice in half. Serve with the remaining 1/4 cup marinara on the side.
PIZZA BIANCA WITH TOMATOES AND MOZZARELLA
A lighter crust for a traditional pizza from Cook's Illustrated. This is a VERY wet dough! It will not roll, so don't try. Recipe is designed for an 18x13 baking sheet; a smaller pan can be used but will need a longer baking time. If you don't have a pizza stone, set the rack in the lowest position, preheat oven to 500, and bake an additional 3-5 minutes.

- Place towel under stand mixer to prevent wobbling. Mix flour, water and table salt in bowl of stand mixer fitted with dough hook, on low speed, until no dry flour remains, 3-4 min, scraping sides and bottom of bowl occasionally. Stop mixer and allow to stand 20 minutes.
- Sprinkle yeast and sugar over dough. Knead on low speed until fully combined, 1-2 minutes. Scrape sides and bottom of bowl, then turn speed up to high and knead until dough is glossy, smooth and pulls away from sides of bowl, 6-10 minutes. (Dough will only pull away while mixer is running; once mixer is stopped, it will fall back to sides.).
- Smear large bowl with 1 tbsp olive oil with fingers, scraping excess onto a rubber spatula. Use oiled spatula to transfer dough to oiled bowl. Pour 1 tbsp oil over dough. Flip dough once to cover thoroughly with oil. Cover tightly with plastic wrap. Allow to rise at room temperature until nearly tripled in size, 2 to 2 1/2 hours.
- One hour before dough is ready, place oven rack in the middle of the over and position pizza stone on rack. Heat oven to 450.
- Meanwhile, set fine-mesh strainer over medium bowl. Empty tomatoes into strainer. Allow to drain 30 minutes, stirring 3-4 times to release juices. Measure ¾ cup tomato solids into a clean bowl (save remaining solids and juice for another application). Add 1 tbsp olive oil and 1/8 tsp table salt to tomatoes.
- When dough is risen, coat rimmed baking sheet or jelly roll pan with 2 tbsp oil. Using rubber spatula, turn dough out onto sheet, along with any oil in bowl. Use fingertips to spread dough to edges of pan, being careful not to tear it. (Dough will not reach corners snugly. If dough resists stretching, allow it to rest 5-10 minutes before trying again.) Let dough rest in pan 5-10 minutes, until bubbly. Prick surface 30-40 times with dinner fork.
- Bake 15-17 minutes, until spotty brown. Spread tomato mixture evenly, then sprinkle with cheese. Return to oven and bake 5-10 minutes longer until cheese begins to brown in spots. Slice and serve immediately.

GRILLED PIZZA BIANCA WITH MUSHROOMS, EGGPLANT AND TWO CHEESES
This is a wonderful grilled pizza that does not have any tomatoes/tomato sauce!! The dough for this recipe is #182309, make 1 big pizza or lots of small ones. When we made this in class, we blew-up our eggplant so we had to use roasted red peppers in its place.(If you are roasting in a brick oven, PIERCE the eggplant before roasting to prevent the explosion and HUGE mess.) It was VERY good, so if you don't have any eggplant but do have some peppers USE THEM....just roast them first. Drizzle the finished pizza with some Basil Oil for a REAL treat.

- Preheat grill to medium-high.
- Remove the stems from the shiitake mushrooms.
- Slice the mushrooms and saute in a medium skillet with a Tbs or so of oive oil, over medium high heat.
- Lightly salt and pepper the mushrooms.
- Roast the eggplant whole directly over a gas flame or on the grill, turning to blacken the skin.
- Set the eggplant aside to cool enough to handle and peel of the skin.
- Dice the flesh of the eggplant and lightly salt and toss with lemon zest and juice.
- Form the pizzas and lightly flour, place on the backs of a lightly floured sheet pan.
- Lightly brush the tops of the pizzas with olive oil, being careful not to get any oil on the pan. Doing so will "glue" the pizza to the sheet pan, making it challenging to get off and onto the grill.
- Place the pizzas on the preheated grill, oiled side down then brush the top side with a little olive oil.
- Close the lid and cook for 5 min or until the pizza rises and has browned.
- Flip the pizza over, brush with olive oil and top with mushrooms, eggplant and cheese crumbles (as much as you like).
- Close the lid and continue to cook until the cheese melts.
- Remove from grill, place on a cutting board and drizzle with a little more olive oil or you favorite flavored oil.
- Cut and serve.
