2 tablespoons shallots, minced
3 cups fresh blackberries (about 1 pound)
1/2 teaspoon fresh sage, chopped
14 ounces chicken broth, reduced-sodium fat-free
2 tablespoons balsamic vinegar
1 1/2 teaspoons sugar
1 tablespoon butter
3/4 teaspoon kosher salt, divided
1 teaspoon black pepper
1 1/2 pork tenderloin, trimmed
sage sprig (optional)

Steps:

  • Prepare grill to medium heat.
  • Heat a medium saucepan over medium heat. Coat pan with cooking spray. Add shallots to pan; cook 3 minutes or until tender, stirring occasionally. Add blackberries, sage and broth; bring to a boil. Reduce heat, and simmer 20 minutes or until blackberries break down. Press blackberry mixture through a fine sieve over a bowl; discard solids. Return liquid to pan. Stir in vinegar and sugar; bring to a boil. Cook until reduced to 3/4 cup (about 9 minutes); remove from heat. Stir in butter and 1/4 teaspoon salt, stirring until butter melts. Keep warm.
  • Sprinkle remaining 1/2 teaspoon salt and pepper over pork. Place pork on grill rack coated with cooking spray; cover and grill 20 minutes or until a thermometer registers 155* (slightly pink), turnning pork occasionally. Let stand 10 minutes. Cut crosswise into 1/4-inch thick slices. Serve with blackberry sauce; garnish with sage sprigs, if desired.

¼ cup balsamic vinegar
1 tablespoon brown sugar
1 tablespoon salt
2 teaspoons paprika
½ teaspoon dry mustard
1 ½ teaspoons fresh ground black pepper
3 (1 1/4 pound) pork tenderloins, trimmed of fat
1 tablespoon olive oil
3 small cloves garlic, minced
3 large shallots, finely chopped
1 carrot, peeled and chopped
1 stalk celery, chopped
2 cups Chateau Ste. Michelle Cabernet Sauvignon
4 cups beef stock
3 cups blackberries
2 tablespoons blackberry jam
2 tablespoons balsamic vinegar
1 teaspoon espresso powder
Kosher salt and pepper to taste
2 tablespoons olive oil

Steps:

  • Mix vinegar, sugar, salt, paprika, mustard, and pepper together; marinate pork in the mixture for up to 4 hours.
  • Heat a medium saucepan over high heat and add olive oil. Stir in garlic, shallots, carrot, and celery; reduce heat to medium-high and saute until vegetables begin to brown and caramelize, about 5 minutes. Add Chateau Ste. Michelle Cabernet Sauvignon to deglaze the pan, stirring well.
  • Stir in stock, blackberries, jam, and balsamic vinegar. Bring the mixture to a boil, then reduce the heat to medium and continue cooking until the liquid is reduced by half, about 30 minutes.
  • Strain sauce and return to pan. Bring sauce to a boil over high heat; reduce heat to medium. Cook until sauce is reduced by half and thickened, about 5 minutes more. Season to taste with espresso, salt, and pepper.
  • Heat grill to medium heat. Brush the pork with 2 tablespoons olive oil and place on grill. Cook for about 15 minutes, turning each side 90 degrees to make a crosshatch pattern. An instant-read thermometer inserted into the center should read at least 150 to 155 degrees F.
  • Transfer pork to cutting board and let rest 8 to 10 minutes. Slice and serve with blackberry sauce.

2 pounds pork tenderloin, trimmed
1 tablespoon olive oil
1 tablespoon sea salt
½ teaspoon ground black pepper
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1 cup fresh blackberries
½ cup Cabernet Sauvignon (or other dry red wine)

Steps:

  • Remove the pork tenderloin from the refrigerator, and allow to come to room temperature, about 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Rub the pork with the olive oil, then sprinkle with salt, pepper, rosemary, and sage; rub the herbs into the pork.
  • Cook on the preheated grill until the tenderloin is crisp on all sides, about 15 minutes. Reduce heat to low and continue cooking, turning occasionally, until the pork is no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). While the pork is cooking, bring the blackberries and wine to a boil in a small saucepan over high heat. Reduce heat to low and continue simmering until the berries have burst and the sauce has reduced slightly, 10 to 20 minutes. Let the meat rest 10 minutes before slicing; serve with the blackberry sauce.

1 1/2 tablespoons caribbean jerk seasoning
1 teaspoon salt
2/3 cup seedless blackberry preserves
1/4 cup Dijon mustard
2 tablespoons rum or 2 tablespoons orange juice
1 tablespoon orange zest
1 tablespoon grated fresh ginger

Steps:

  • Preheat grill to 350-400 degrees. Remove silver skin from tenderloins, leaving a thin layer of fat. Brush tenderloins with oil, and rub with seasoning and salt.
  • Grill tenderloins, covered with grill lid, 10 minutes on each side or until a meat thermometer inserted into thickest portion registers 155*. Remove from grill and let stand for 10 minutes.
  • Meanwhile, whisk together blackberry preserves and next 4 ingredients in a small saucepan, and cook over low heat, whisking constantly, 5 minutes or until thoroughly heated.
  • Cut pork tenderloing diagonally into thin slices, and arrange on a serving platter; drizzle with warm sauce.

1 lemon
4 x 140g pieces pork tenderloin
2 tbsp sage leaves, roughly chopped
3 eating apples , peeled, cored and chopped
1 rounded tsp light muscovado sugar

Steps:

  • Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. Lift onto a baking tray and season with salt, pepper and the lemon zest. Sprinkle with 1 tbsp of the sage. Grill for 8-10 mins, turning once, until cooked through.
  • Meanwhile, pour the lemon juice into a small pan. Add the apple to the pan with the remaining sage, sugar, salt and pepper. Bring to the boil, stirring, then simmer until soft, about 6 mins. Serve with your favourite green veg and potato wedges (recipe, top right).

1/2 cup seedless blackberry spreadable fruit
1 tablespoon lemon juice
1 tablespoon reduced-sodium soy sauce
Dash ground cinnamon
4 boneless pork loin chops (5 ounces each)
2 teaspoons steak seasoning

1 cup fresh blackberries

Steps:

  • In a small saucepan, combine spreadable fruit, lemon juice, soy sauce and cinnamon. Cook and stir over low heat until spreadable fruit is melted.
