BARBEQUE ROASTED POTATOES WITH SOUR CREAM BACON SAUCE
Steps:
- Potatoes: Preheat grill to medium heat.
- In a large bowl add olive oil, barbeque seasoning, garlic and lemon juice. Mix well to combine. Add potatoes and toss to coat.
- Place potatoes in an aluminum foil pouch and seal. Place on the grill or in a preheated 400 degree F oven for 20 to 25 minutes until potatoes are tender.
- Sauce: Combine all ingredients in a small bowl. Put the potatoes into a medium bowl and pour in the sauce. Toss well to coat the potatoes or serve the sauce on the side.
SOUR CREAM MASHED POTATOES WITH BACON AND CHIVES
Mash these spuds with sour cream for extra richness, then stir in bacon and fresh chives for extra flavor.

- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the sour cream and butter using a fork or potato masher. Stir in the bacon, chives, 2 teaspoons salt and freshly ground pepper to taste.

- Preheat an outdoor grill for medium-high heat.
- Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with olive oil, then sprinkle with brown sugar and black pepper. Wrap the potatoes loosely in the aluminum foil.
- Grill potatoes until the bacon has crisped, and the potato is soft in the center, about 45 minutes depending on grill temperature.

- Preheat oven to 425°F (220°C).
- Using a sharp knife, make crosswise cuts in each potato, about ⅛ inch (3 mm) apart, stopping about ¼ inch (6 mm) from the bottom.
- Microwave your potatoes for 5 minutes per potato.
- Mix together melted butter, minced garlic, and minced parsley.
- Brush on the potato. Sprinkle with salt and pepper to taste.
- Insert 6-8 slices of bacon into the middle section of slots in the sliced potato.
- Transfer the potatoes to the oven and bake until the outsides are browned and crisp, about 30 minutes, basting with more butter if needed.
- In a sauce pan, combine the milk, cream cheese, salt, and pepper. Heat and stir until well-combined and smooth.
- Add in the chopped chives to the cream cheese sauce.
- Stir and pour over the crispy potatoes. Add extra chives for garnish.
- Enjoy!

One of my favorites chefs on radio Melinda Lee says: this dish is a meal in itself. Great with only a simple salad alongside -- and it's also makes just a wonderful appetizer (especially if there will be a wait before dinner: these are filling). On the other hand, the potatoes are described in the new book by Chris Schlesinger and John Willoughby as being a perfect accompaniment to a big, juicy steak. Take your pick -- try them every which way -- and enjoy!

Steps:
- Build a medium hot fire.
- When you can hold your hand about 5 inches above the grill where the fire is hottest for about 4-5 seconds, the fire is ready.
- If using a gas grill, use the same technique to determine when you have preheated the grill to the correct temperature.
- Cut a thin slice off each long side of each potato, so you can lay it flat.
- Now cut each potato in half, lengthwise, to make two "planks" each about 1 1/2" thick.
- [No need to peel the potatoes, unless you want to; they'll cook fine unpeeled.]
- In a large pot or pan, bring salted water to a boil, add potatoes, and simmer them for about 8-9 minutes, or until the pieces are just done, but still quite firm.
- If a toothpick is inserted into one, it should go in easily, but meet with a fair amount of resistance.
- Gently transfer the potatoes to a colander to drain.
- While the potatoes are cooking, cook the bacon in a small skillet over medium heat until crisp (about 6-8 minutes).
- Transfer the cooked bacon to paper towels or newspaper or a brown paper bag to drain.
- Rub the cut potato "planks" (pieces) generously with the olive oil.
- Sprinkle them generously on all sides with the salt and pepper.
- Place the pieces on the hot grill and cook until they have become really crispy and brown - about 4 to 5 minutes per side.
- Serve topped with sour cream, and sprinkled with the bacon and cut chives.
- (Add butter if desired.) Variations: Add toppings such as grated or shredded cheese, chopped chiles, avocado chunks, tomatoes - or anything else that seems interesting to you.
- You might offer a choice of toppings and let guests build their own!

- Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes. Transfer bacon to paper towels to drain, then carefully transfer drippings from skillet to a small heatproof bowl and stir in white parts of scallions, salt, and pepper.
- Put oven rack in middle position and preheat oven to 450°F. Tear off 6 (1-foot-long) sheets of heavy-duty foil.
- Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through). How do you usually cook your ham steak. I'm always cutting it up in bite size pieces and putting it into scalloped potatoes. How does a pan fried ham steak with caramelize pineapple smothered in a citrus-mustard sauce sound? Personally, I will cook my ham steak this way more often because it was delicious. Paired with a creamy potato bake, a side salad and a glass of wine. FYI: The Sour Cream and Chive Potato Bake shows 4 servings. My family wanted seconds and there wasn't enough. You might want to double the recipe.

- Pan Fried Ham Steak with Pineapple Chunks.
- In a large skillet melt two tablespoons butter and pan fry your ham steak pieces until lightly brown. Then transfer to a plate. Add the remaining 2 tablespoons of butter to a large saucepan, when butter melts add the pineapple and sauté until caramelized, about 4-5 minutes. Remove and set aside. In the same large saucepan add the pineapple liquid and orange juice and cook until it reduces to half, about 5-6 minutes. Whisk in the mustards, then add back in the ham and pineapple. - Boil your potatoes al dente about 15 minutes, just fork tender. Drain and place in a lightly greased baking dish. Fry your bacon lardons (if using) until crispy, remove with a slotted spoon onto a paper towel.In a medium size bowl combine the sour cream, heavy cream, cheese, chives and salt, pepper to taste. Pour liquid on top of potatoes. Bake 20-30 minutes, or until the top is golden brown. Yum Yum!
