I found this recipe while ISO another recipe for "Beef and Barley Soup". I just could not throw out the beautiful ribs from our "Christmas Prime Rib". These sound delicious, but I will have to make them with the ribs from our next Prime Rib. (DH won the coin toss between these or soup) I'm posting it now, knowing there are a lot of beautiful prime rib bones around this time of year. This seems like such a simple way to make use of them, besides throwing them into the garbage or to the dog. "Sorry Rover" You could always mix up the seasonings and use garlic, thyme, rosemary, Dijon, or horseradish; panko instead of breadcrumbs... infinite possibilities

1/3 cup unsalted butter
1 teaspoon dry mustard
1 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce
salt & freshly ground black pepper, to taste
3 -5 leftover beef ribs, bones
1 cup fresh breadcrumb

Steps:

  • Preheat the broiler to high.
  • Melt the butter in a small saucepan; remove from heat and stir in the mustard, cayenne and Worcestershire; season to taste with salt and pepper.
  • Brush the ribs with the melted butter mixture; roll in the bread crumbs, coating well.
  • Place on a broiler pan and broil, turning occasionally and basting with remaining butter, until golden brown, 12 to 15 minutes.

1 (7 lb) standing rib roast (3-rib)
1 1/2 tablespoons kosher salt
2 teaspoons fresh ground black pepper
1 1/2 cups mayonnaise
2 tablespoons Dijon mustard
2 1/2 tablespoons whole grain mustard
2 tablespoons prepared horseradish
1/3 cup sour cream
1/4 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Two hours before roasting, remove the meat from the refrigerator and allow it to come to room temperature.
  • Preheat the oven to 500 degrees F (see note).
  • Place the oven rack on the second lowest position.
  • Place the roast in a pan large enough to hold it comfortably, bone-side down, and spread the top thickly with the salt and pepper.
  • Roast the meat for 45 minutes.
  • Without removing the meat from the oven, reduce the oven temperature to 325 degrees F and roast for another 30 minutes.
  • Finally, increase the temperature to 450 degrees F and roast for another 15 to 30 minutes, until the internal temperature of the meat is 125 degrees F.
  • (Be sure the thermometer is exactly in the center of the roast.) The total cooking time will be between 1 1/2 and 1 3/4 hours.
  • Meanwhile, make the sauce.
  • Remove the roast from the oven and transfer it to a cutting board.
  • Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes.
  • Carve and serve with the sauce.
  • Note: Be sure your oven is very clean before setting it at 500 degrees F.
  • For Mustard horseradish sauce: Whisk together the mayonnaise, mustards, horseradish, sour cream, and salt/pepper in a small bowl.

I have made this recipe many times using baby back pork ribs, the sauce from this is amazing, I have even added in a bottle of barbecue sauce in with the other ingredients! All ingredients can be doubled and adjusted to suit taste ---I most always serve these ribs with homemade fries or potato pancakes, see my recipe#129156 --- If you prefer a more spicy sauce just increase the cayenne or add in some crushed chili peppers to taste --- make certain to roast the bones in the oven for about 45 minutes before cooking them in the sauce it improves the flavor.

seasoning salt (do not use too much salt to season the ribs!)

1 teaspoon garlic powder (optional or to taste)
1 -2 tablespoon minced fresh garlic
2 1/2 cups ketchup
1/2-3/4 cup cider vinegar (can use white vinegar also or half and half)
1/4 cup sugar
1/3 cup brown sugar (or to taste)
3 teaspoons chili powder
1/4 teaspoon cayenne pepper (or to taste)
2 teaspoons mustard powder
2 large onions, coarsley chopped
salt and pepper

Steps:

  • Prepare and grease a casserole or baking pan (large enough to hold ribs and sauce).
  • Season prime rib bones (baby back pork ribs if using) with seasoning salt, pepper and garlic powder.
  • Place the ribs in the casserole dish, and bake uncovered in a 350 degree oven for about 45-50 minutes; drain any fat.
  • In a bowl mix together the garlic, ketchup vineger, both sugars, chili powder, cayenne pepper and mustard powder; mix well to combine.
  • Add in chopped onions; mix well.
  • Pour the sauce over ribs, and mix with your hands to coat the ribs.
  • Bake uncovered for about 1 - 1-1/2 hours or until the beef (or pork) ribs are tender (baste occasionally, and season sauce salt and pepper if desired).
  • Delicious!

There is nothing better than a prime rib roast, especially if you can find one that is USDA Prime. The problem is the amount of time it takes and the financial risk if carved undercooked. I solved the problem by creating this recipe. You get all the benefits of the roast with none of the risk. Cooking Notes: The most important rule to remember is ROOM temperature meat and time to rest after you cook it. Remember to pre-order your meat if you want Prime beef. Wine Notes: Can you say Cabernet Sauvignon? This is the place to pull out one of the old ones if you have it. Many wine shops have some past vintages in back ready for the asking!

3 USDA Prime rib-eye steaks, each about 2 1/2 pounds and 1 3/4 to 2-inches thick
Salt and freshly ground black pepper
2 heads garlic, cloves peeled
6 tablespoons extra-virgin olive oil, divided
2 sprigs rosemary
2 lemons

Steps:

  • Preheat the grill.
  • Remove the steaks from the refrigerator and allow them to come to room temperature.
  • Season steaks generously on both sides with salt and pepper. Press the salt and pepper into the steaks. Set aside.
  • Make the garlic paste: Trim the stem ends off garlic cloves.
  • Place a small skillet over medium heat and add 4 tablespoons of the oil. Add the garlic cloves and bring the oil to a simmer, then reduce the heat to low. Strip the leaves off 2 sprigs rosemary and chop to make 2 tablespoons. Add the rosemary to the garlic and cook until the cloves are golden brown, about 10 minutes, tossing occasionally with tongs.
  • Remove the skillet from the heat and allow the garlic to cool in the oil.
  • In a mortar or on a cutting board, mash the garlic into a paste. Mix the mashed garlic with the reserved oil and rosemary. You should have about 1/2 cup of paste.
  • Place the meat on a hot grill and cook until well browned on both sides, about 5 minutes on the first side and 3 minutes on the second side.
  • Cut 2 lemons in half and cut ends off. Brush with olive oil and season with salt and pepper. Place the lemons on the grill with the steaks and serve with the steak.
  • Smear 2 generous tablespoons of the paste over the first seared side of each steak. Place the steaks, paste side facing up, on the grill rack.
  • Finish cooking on the cool side of the grill, with the lid on or in the oven until done to your preference, 10 to 12 minutes for rare (remove when an instant-read thermometer registers 120 degrees F).
  • Remove the steaks from the grill and allow the steaks to rest on the rack for about 10 minutes. Cover and keep warm while resting.
  • Transfer the steaks to a cutting board. Cut between the bone and meat of each steak. Cut each steak crosswise into 1-inch slices.

1 bone-in beef rib roast (6 to 8 pounds)
3 tablespoons Worcestershire sauce

2 teaspoons garlic powder

  • Preheat oven to 450°. Line a shallow roasting pan with heavy-duty foil. Place 3 cups salt on foil, spreading evenly to form a 1/2-in. layer. , Brush roast with Worcestershire sauce; sprinkle with pepper and garlic powder. Place roast on layer of salt, fat side up. In a small bowl, mix water and remaining salt (mixture should be just moist enough to pack). Beginning at the base of the roast, press salt mixture onto the sides and top of roast., Roast 15 minutes. Reduce oven setting to 325°. Roast 2 to 2-1/4 hours or until a thermometer reaches 130° for medium-rare; 145° for medium. (Temperature of roast will continue to rise about 15° upon standing.) Let stand 20 minutes., Remove and discard salt crust; brush away any remaining salt. Carve roast into slices.

1/3 cup Dijon mustard
2 tablespoons red wine vinegar
1/4 cup olive oil
1 garlic clove, minced
1/2 teaspoon thyme

  • Arrange bones in a large, shallow pan.
  • Prepare Mustard Marinade and pour over ribs; turn to coat.
  • Cover and let stand for about 2 hours.

Saw this on the Contessa's show on the Food Network last night. She serves it with a standing rib roast. I think it has many possibilities, perhaps as a base for a dip with chipped beef? The whole-grain mustard adds great texture. I made this for Christmas to go with Recipe #95534 ("da Best" Chicago-style Italian Beef) and it was a heavenly combination. This made a lot so I took one and a half cups of the sauce, added about one cup of shredded sharp cheddar cheese and 3 chopped hard-boiled eggs. It was a lovely dip for crackers.

The sauce for this must be made a day ahead and refrigerated overnight to blend flavors, then the ribs have to marinade in the sauce 8-24 hours, so plan a day ahead! This sauce has a definite "kick" to it, but you can adjust the cayenne, hot sauce and horseradish to taste.

5 lbs prime rib beef bones
seasoning salt
pepper
4 tablespoons oil
3 tablespoons butter
1 large onion, finely chopped
3 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons lemon juice
2 teaspoons dried thyme
1/4 teaspoon cayenne pepper (can use more)
1/3 cup Dijon mustard
1/3 cup yellow mustard (use a grainy mustard for this)
1 tablespoon Worcestershire sauce
1/4 cup horseradish (can use more to taste)
2 teaspoons seasoning salt
black pepper
1 teaspoon louisiana hot sauce (or to taste)

Steps:

  • Make this sauce a day or even days ahead and cool.
  • For the sauce, heat the oil and butter over medium-high heat in a heavy saucepan.
  • Saute the onions for about 5 minutes until softened.
  • Add in the minced garlic, brown sugar, lemon juice, thyme and cayenne pepper; cook stirring for about 3 minutes.
  • In a bowl, whisk together Dijon mustard, yellow mustard, Worcestershire sauce, horseradish, salt, pepper and hot sauce; add into the onion/garlic mixture; mix to combine with a wooden spoon and bring to a simmer.
  • Cook/simmer the sauce for about 30 minutes over very low heat to blend flavors, adjusting salt, cayenne pepper and hot sauce.
  • Cool the sauce to room temperature then refrigerate overnight to blend the flavors.
  • The following day, in a large dish arrange the beef ribs in a single layer.
  • Pour the cooled sauce over the ribs and turn to coat on both sides, using clean hands to rub the sauce well over all the meat.
  • Cover and refrigerate for a minimum of 8-24 hours.
  • When ready to grill reserve the marinade.
  • Season the ribs with seasoning salt and pepper.
  • Grill over medium heat turning occasionally and brushing with the marinade.
  • Delicious!
