1 ½ teaspoons ground black pepper
½ teaspoon paprika
¼ teaspoon cayenne pepper
1 teaspoon minced garlic
1 tablespoon Dijon mustard
1 tablespoon brown sugar
½ teaspoon onion powder
¼ teaspoon salt
1 tablespoon olive oil
2 (6 ounce) salmon fillets
2 tablespoons olive oil
1 ½ tablespoons minced onion

Steps:

  • Combine the black pepper, paprika, cayenne pepper, minced garlic, Dijon mustard, brown sugar, onion powder, and salt in a small bowl. Stir in 1 tablespoon of olive oil to make a paste. Spread the paste all over the salmon fillets, and set aside to marinate at room temperature 30 minutes.
  • Heat the remaining 2 tablespoons of olive oil in a small pan over medium heat. Stir in the onion, and cook until tender and golden brown, about 10 minutes. Heat a separate non-stick skillet over medium-high heat. Cook the salmon fillets in the hot skillet until golden brown on each side, and no longer translucent in the center, about 4 minutes per side. Pour the browned onions and olive oil over the salmon fillets to serve.

1 tablespoon packed brown sugar
1 tablespoon butter, melted
1 tablespoon olive or vegetable oil
1 tablespoon honey
1 tablespoon soy sauce
1 clove garlic, finely chopped
1 large salmon fillet (about 2 lb), cut into 8 pieces

Steps:

  • In small bowl, mix all ingredients except salmon.
  • In shallow glass or plastic dish, place salmon. Pour marinade over salmon. Cover and refrigerate at least 30 minutes but no longer than 1 hour.
  • Heat coals or gas grill. Remove salmon from marinade; reserve marinade. Place salmon, skin side down, on grill. Cover and grill over medium heat 10 to 20 minutes, brushing 2 or 3 times with marinade, until salmon flakes easily with fork. Discard any remaining marinade.

2 tablespoons butter
3 cups sliced red onions
2 tablespoons red-wine vinegar
1 cup dry red wine
2 whole cloves
1 bay leaf
4 tablespoons honey
Salt and freshly ground pepper to taste
3 tablespoons olive oil
1 1/2 cups diced fresh ripe tomatoes, core removed, cut into 1/4-inch cubes
1 tablespoon finely chopped garlic
2 sprigs fresh thyme or 1/2 teaspoon dried
1/4 teaspoon red pepper flakes to taste
4 boneless salmon fillet steaks with skin, about 6 ounces each
8 basil leaves, or parsley, for garnishing

Steps:

  • Preheat broiler to high and make sure it is very clean.
  • In a saucepan heat 1 tablespoon of the butter, add the onions and cook briefly until wilted. Add the vinegar, wine, cloves, bay leaf, honey and salt and pepper. Bring to a boil and cook over medium high heat, stirring often until the liquid is mostly evaporated. Add the remaining butter, blend well and keep warm.
  • In a small saucepan heat 1 tablespoon of the olive oil, the tomatoes, garlic, thyme, pepper flakes and salt and pepper. Cook over high heat, tossing and shaking. Blend well, cook for one minute. Do not overcook. Keep warm.
  • Sprinkle the salmon with salt and pepper, brush with the remaining olive oil on both sides. Brush the broiler rack with oil. Place the salmon fillets skin side up on the rack 4 to 5 inches from the heat, cook for 2 minutes or until lightly browned. Turn on the skin side and cook for 3 minutes more for rare steaks. If desired, cook a little longer. Do not overcook.
  • To serve, warm the plates and remove the skin from the salmon if desired. Place on the centers of the plates equal portions of the onion compote and place a fish fillet over each portion. Divide the tomato sauce equally around them. Garnish with basil leaves. Serve hot with leaf spinach.

This is the easiest, most flavorful honey-baked salmon that the whole family will be able to enjoy. It comes together in 30 minutes and only requires eight ingredients. Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

Nonstick cooking spray, optional
Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

1 large purple onion, sliced thin
