Steps:

  • Preheat a grill pan or skillet over a medium-high flame. Brush both sides of each pita with olive oil. Heat 1 pita at a time in the grill pan or skillet, for about 2 minutes on each side, until it is nicely marked. Cut each pita into 6 wedges. Sprinkle with salt, to taste, and serve.

10 pita breads, cut in half horizontally
3 heads of baby romaine, leaves separated, or two 5-ounce bags mixed baby greens
Assorted mustards

Steps:

  • Prepare barbecue (medium-high heat). Grill Italian sausages until cooked through, turning occasionally, about 10 minutes. Grill fully cooked sausages until heated through, about 7 minutes. Transfer sausages to platter. Cover to keep warm.
  • Arrange pita halves in 2 stacks and wrap in aluminum foil. Place foil packets on grill to warm pita, about 10 minutes.
  • Fill pita halves with lettuce. Place grilled sausage halves atop lettuce in each pita half; serve with mustard.
  • *A smoked pork-and-beef sausage, available at specialty foods stores.

4 whole wheat pita breads (6 inches)
1 cup plain yogurt
2 green onions, chopped
2 tablespoons minced fresh parsley
1 teaspoon lemon juice
1 garlic clove, minced
3/4 pound Italian turkey sausage links or other sausage links of your choice, casings removed
1 medium cucumber, seeded and chopped
1 medium tomato, chopped
Additional minced fresh parsley

Steps:

  • Preheat oven to 325°. Wrap pita breads in foil; warm in oven while preparing toppings., In a small bowl, mix yogurt, green onions, parsley, lemon juice and garlic. In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles., To assemble, spoon sausage over pitas. Top with cucumber, tomato and yogurt mixture; sprinkle with additional parsley.

Skewers of hot Italian sausage, marinated shrimp, and crunchy fresh veggies are quickly grilled up and served with grilled pita bread.

1 (19 ounce) package Johnsonville® Hot Italian Sausage Links
1 pound large raw shrimp (shell and tail on), defrosted and drained
1 fresh lemon, cut in half
¼ cup canola oil
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh thyme
½ teaspoon crushed red pepper flakes
1 clove garlic, minced
1 large red onion, cut into 8 wedges
12 each whole mini sweet peppers*
¼ cup olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon fresh-ground pepper
6 each (10 to 12 inch) metal skewers, or more as needed**

Steps:

  • Skewer sausages whole, following the natural curve of the sausage, pierce the sausage about 1 1/2 inches from the end and have the skewer come out about 1/12 inches from the other end on the same side, so that the sausage forms a letter C and the skewer cuts through the bottom and the top of the curve. The next sausage forms a backwards C.
  • Place 2-3 sausages on each skewer depending on the size of the grill and the size of skewer.
  • Place the shrimp in a medium size bowl, add the lemon juice from 1/2 a lemon, canola oil, chopped herbs, red pepper flakes and minced garlic. Stir to combine, refrigerate and let marinate for at least 30 minutes. Skewer the shrimp in the same manner as the sausage.
  • In another bowl place onion wedges and whole baby sweet peppers or bell peppers cut into 1 pieces. Toss with olive oil, balsamic vinegar and oregano. Skewer vegetables; alternating colors and peppers and onions.
  • On a grill over medium heat, place sausage skewers, cover and cook for 5-7 minutes. Turn and cook another 5 minutes or until sausages are cooked through. Cook vegetable skewers for about 4-5 minutes then turn and cook for 2-3 more minutes or until desired doneness. Grill shrimp skewers for about 3 minutes per side, brush with any remaining marinade half way through cooking.
  • Transfer cooked sausages, shrimp and vegetables to a platter, squeeze remaining lemon half over shrimp and vegetables. Sprinkle with salt and pepper and serve while hot with grilled Pita bread that has been brushed with garlic infused olive oil.
